2 cans (13.66 ounces each) coconut milk
1/3 to 1/2 cup red curry paste
1 package (8.8 ounces) thin rice noodles
2 cans (14-1/2 ounces each) chicken broth
1/4 cup packed brown sugar
2 tablespoons fish sauce or soy sauce
3/4 teaspoon garlic salt
3 cups shredded rotisserie chicken
1-1/2 cups shredded cabbage
1-1/2 cups shredded carrots
3/4 cup bean sprouts
Fresh basil and cilantro leaves

Steps:

  • In a Dutch oven, bring coconut milk to a boil. Cook, uncovered, 10-12 minutes or until liquid is reduced to 3 cups. Stir in curry paste until completely dissolved., Meanwhile, prepare noodles according to package directions., Add broth, brown sugar, fish sauce and garlic salt to curry mixture; return to a boil. Reduce heat; simmer, uncovered, 10 minutes, stirring occasionally. Stir in chicken; heat through., Drain noodles; divide among 6 large soup bowls. Ladle soup over noodles; top servings with vegetables, basil and cilantro.

4 cups water
2 large bone-in chicken breasts, skin removed
1 tablespoon coconut oil
3 carrots, peeled and diced
1 onion, diced
1 red bell pepper, diced
1 cup cooked rice
3 tablespoons brown sugar
1 tablespoon curry paste
1 (14 ounce) can coconut milk
2 cubes chicken bouillon

Steps:

  • Combine water and chicken in a large pot over medium-high heat. Bring to a boil and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. Remove chicken from the pot, cut off meat from bones, and dice. Strain cooking broth through a sieve and set aside.
  • Heat coconut oil in a separate pot over medium heat. Add carrots, onion, and bell pepper; cook until softened, 5 to 7 minutes. Stir in cooked rice, brown sugar, curry paste, and diced chicken. Cook and stir until curry paste is completely incorporated, about 3 minutes.
  • Pour in reserved chicken broth, coconut milk, and bouillon cubes. Increase heat to medium-high and bring to a boil. Reduce heat and simmer until flavors are well combined, 15 to 20 minutes.

This is a very flavorful soup that is quickly made and freezes well. It looks like a lot of ingredients but it really comes together quickly and I find it to be delicious!

2 boneless skinless chicken breasts
1 tablespoon curry powder (I like Jamaican or sweet yellow)
1 inch ginger, finely chopped
2 -3 garlic cloves, finely chopped
1 tablespoon sugar (I use raw)
1 lime, juice of, small
2 -3 kaffir lime leaves
1 stem basil
1 potato, chopped into bite sized pieces
1 (14 ounce) can light coconut milk
1 (14 ounce) can chicken stock (equal to the coconut milk)
2 -3 tablespoons fish sauce
1 red pepper, chopped
sliced bamboo shoots or water chestnut, miniature corn, halved

Steps:

  • Slice chicken on diagonal thinly and quickly brown in a large pan or pot. (use a tbsp oil if needed).
  • add curry powder, ginger, garlic, lime leaves and cook for a minute or two.
  • add sugar and follow with lime juice.
  • add chicken stock and coconut milk and fish sauce.
  • add chopped potato.
  • cook through until potato is tender- about 5 minutes if potato chopped smallish.
  • add red pepper, bamboo shoots, basil and corn if using.
  • cook a few minutes.serve.
  • I also add salt and pepper, depending on the salt in the stock -- red pepper flakes also add to it if you like heat.
  • can add leftover rice if you have some around.
  • enjoy!

2 garlic cloves, minced
2 tablespoons vegetable oil
4 tablespoons curry powder
3 cups chicken broth
two 14-ounce cans unsweetened coconut milk*
1 cup water
2 stalks of lemongrass*, the outer leaves discarded, ends trimmed, and 5 inches of the lower stalks minced
ten 1/8-inch-thick slices of peeled fresh gingerroot
1 teaspoon black peppercorns
1 whole chicken breast with skin and bones (about 1 pound)
1/2 pound dried rice-stick noodles* (rice vermicelli)
6 tablespoons fresh lime juice
6 tablespoons Asian fish sauce such as nuoc mam*
1/3 cup chopped fresh coriander
Asian chili oil* to taste if desired
*available at Asian markets and some specialty produce markets

Steps:

  • In a heavy saucepan cook the garlic in the vegetable oil over moderately low heat, stirring, until it is fragrant, add the curry powder, and cook the mixture, stirring, for 30 seconds. Stir in the broth, the coconut milk, the water, the lemongrass, the gingerroot, and the peppercorns and bring the mixture to a boil. Add the chicken and poach it at a bare simmer for 20 minutes, or until it is cooked through. Transfer the chicken with a slotted spoon to a bowl and let it cool, keeping the poaching mixture warm.
  • While the chicken is cooling, in a large bowl soak the noodles in warm water to cover for 5 minutes, drain them, and in a large saucepan of salted boiling water cook them for 5 minutes. Drain the noodles in a colander, rinse them under cold water, and drain them well.
  • Discard the skin and bones from the chicken, shred the meat, and stir it into the poaching mixture with the lime juice and the fish sauce. Cook the soup over moderate heat, stirring, until it is hot, divide the noodles among 6 to 8 bowls, and ladle the soup over them. Sprinkle the soup with the coriander and drizzle it with the chili oil.

1 small onion, minced

Steps:

  • Heat oil in a medium pot over medium heat. Add onion, ginger and lemon grass and cook, stirring, until softened, about 10 minutes. Do not brown; reduce heat if necessary. Add garlic and chili paste and stir until fragrant. Raise heat, add chicken and stir-fry one minute. Add curry powder and paprika and stir to coat. Then add coconut milk, half-and-half, chicken stock, turmeric, fish sauce, sugar and lime or curry leaves. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 7 minutes.
  • Meanwhile, cook rice noodles in boiling water according to package directions (about 4 minutes). Rinse and drain.
  • Taste broth and adjust seasonings with salt and sugar. Divide noodles into large soup bowls. Bring broth to a boil, then ladle over noodles. Top with bean sprouts, cilantro, scallions and fried shallots, if using. Pass limes and sambal at the table.

This is my version of the Thai soup Tom Kha Gai. I didn't use the kaffir lime leaves, galangal root or lemongrass that you'll typically find in the regular recipe b/c those ingredients can be hard to find. I wanted a version I could easily make with what I had on-hand & came up with this! So don't expect this soup to be exactly like real Thai coconut chicken soup... the flavor is slightly different, but I think still delicious in it's own right! Let me know what you think :-)

1 skinless chicken breast, cut into chunks
1 tablespoon curry paste (I had green curry paste on hand when I made this, but you could use any)
1 tablespoon lime juice
1 tablespoon ginger, grated (fresh is best, can also use dried)
1 tablespoon fish sauce
1 (13 1/2 ounce) can light coconut milk
2 cups chicken broth
1 (8 ounce) can water chestnuts (optional)
2 green onions, chopped (I only use green part in this)
1/2 cup sliced mushrooms

Steps:

  • Spray pan with cooking spray and add chicken.
  • Once chicken begins to cook & turn white, add curry paste and stir to thinly coat chicken.
  • Cook chicken 4-5 minutes or until almost cooked through.
  • As chicken cooks, in separate sauce pan, begin to heat chicken broth. Bring to simmer.
  • Add lime juice, ginger, fish sauce.
  • Stir and simmer 2 minutes.
  • Add water chestnuts, mushrooms and coconut milk.
  • Simmer another 2 minutes. Taste, and adjust seasonings if needed. May need more lime juice, depending on your taste. Some people also add 1/2-1 TBS sugar or splenda. It's up to you.
  • Add cooked chicken and green onions, stir and simmer for 1 minute.
  • Serve!
