500 g chicken breasts or 500 g chicken thighs, cubed
1 teaspoon cumin seeds or 1 teaspoon ground cumin
1 garlic cloves, crushed or 1/2 teaspoon minced garlic
2 teaspoons olive oil
1/2 teaspoon chili flakes or 1/4 teaspoon chili powder
1 teaspoon balsamic vinegar
4 teaspoons tomato puree or 4 teaspoons tomato sauce
2 red onions, sliced into thick wedges

Steps:

  • Add the chicken to a non-metallic dish- set aside.
  • Mix together all remaining ingredients, except for the onions. Pour the marinate over the chicken, toss well to coat. Marinate for 2 hours in the fridge.
  • Thread the chicken onto skewers, alternating with the red onions.
  • Grill or BBQ for 10-15 minutes, turning frequently.
  • If using wooden skewers, soak them in water for about 20 minutes prior to using. This should stop them from buring during the cooking stage.

Grilled Lamb Kebabs with Cumin and Cinnamon image

1/4 cup olive oil
1 teaspoon ground cumin
1 teaspoon ground black pepper
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 3 1/2-pound sirloin half leg of lamb, bone removed, fat trimmed, meat cut into 1 1/4- to 1 1/2-inch pieces
6 12-inch metal skewers

Steps:

  • Whisk oil, cumin, pepper, salt and cinnamon in 13x9x2-inch glass baking dish. Add lamb to dish and toss to coat well with oil mixture. Let marinate at room temperature 1 hour or refrigerate 1 1/2 to 4 hours, tossing occasionally.
  • Prepare barbecue (medium heat) or preheat broiler. Thread lamb pieces onto skewers, dividing equally (about 5 pieces per skewer). Grill or broil lamb to desired doneness, turning occasionally, about 6 minutes for medium-rare.

Seekh Kebab With Mint Chutney image

Served at most traditional Indian restaurants, seekh kebabs are made with ground lamb that's been seasoned with garam masala, cumin seeds, fresh ginger and fresh cilantro, then grilled and served with raw red onion and bright mint chutney to offset the richness and heat. This recipe comes from Chintan Pandya, the executive chef at Adda Indian Canteen, a New York restaurant that specializes in homestyle Indian food. You'll need to purchase deggi mirch, an Indian chile powder that tastes somewhat like a smoky paprika, but is mild enough to be used in a quantity large enough to color the meat red. The spiced meat mixture benefits from chilling to help retain its shape on the grill, but you could also roll it into meatballs and pan-sear them on the stovetop or roast them in the oven, if the season dictates.

2 1/4 pounds ground lamb
1 packed cup shredded Amul cheese or white Cheddar (about 3 ounces)
1/3 packed cup very finely chopped fresh cilantro
2 tablespoons plus 2 teaspoons deggi chile powder, plus additional for garnish
1 tablespoon minced fresh ginger
3 garlic cloves, minced
1 tablespoon minced green Thai chile or serrano chile (with seeds)
2 teaspoons garam masala
1 teaspoon black cumin seeds (shah zeera) or regular cumin seeds
3/4 teaspoon ground cardamom
Kosher salt
Neutral oil, for greasing
3 packed cups roughly chopped cilantro, leaves and tender stems
2 packed cups roughly chopped fresh mint leaves
1/4 cup finely chopped red onion
1 tablespoon minced fresh ginger
1 teaspoon minced green Thai or serrano chile (seeds included)
2 tablespoons anardana (dried pomegranate seeds), crushed, or very finely chopped fresh mango
2 teaspoons lemon juice
1 teaspoon granulated sugar, plus more as needed
Red onion, very thinly sliced, for serving (optional)

Steps:

  • Prepare the lamb skewers: In a large bowl, combine the lamb with the cheese, cilantro, chile powder, ginger, garlic, green chile, garam masala, cumin seeds, cardamom and 2 teaspoons salt. Shape the meat like a sausage into six 5-inch logs that are just under 2 inches thick. Skewer each and pack them tightly. Refrigerate for 2 hours and up to overnight to firm up.
  • Prepare the mint chutney: Add the cilantro, mint, red onion, ginger, green chile and 1/4 cup water to a blender. Puree until smooth, scraping down the sides of the blender as needed. (Add more water by the spoonful, if needed, until mixture is saucy.) Transfer to a small bowl. Stir in the anardana, lemon juice and sugar; season to taste with salt and more sugar, if desired. Refrigerate until ready to use. (The mint chutney is best the day it's prepared, but it can be refrigerated one day in advance.)
  • Brush the grill with neutral oil and heat over medium. Grill the kebabs, rotating as needed, until browned all over and cooked through, 12 to 15 minutes. Serve with mint chutney, and very thinly sliced red onion, if desired. Sprinkle kebabs and onions (if using) with deggi chile powder and serve immediately.

GRILLED LAMB KEBABS WITH CORIANDER AND CUMIN

1 1/2 tablespoons olive oil
2 teaspoons red wine vinegar
1 large garlic clove, minced
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 1/3 to 1 1/2 pounds lamb shoulder arm (round-bone) chops, trimmed boned, cut into 1-inch pieces
4 bamboo skewers, soaked in water 10 minutes

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Whisk first 7 ingredients in medium bowl to blend. Add lamb; toss to coat evenly. Let stand 5 minutes. Thread lamb on skewers, leaving 1/2-inch space between each piece.
  • Grill or broil lamb until crusty brown outside but still pink inside, turning occasionally, about 8 minutes. Arrange skewers on plates and serve.

For the garlic yogurt:
1 garlic clove, grated
1/2 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 cup plain Greek yogurt
Kosher salt, freshly ground pepper
For the lamb and assembly:
2 tablespoons cumin seeds
1 tablespoon Sichuan peppercorns or 1 teaspoon black peppercorns
2 teaspoons caraway seeds
2 teaspoons crushed red pepper flakes
1 teaspoon sugar
Vegetable oil (for grill)
1 1/4 pounds boneless lamb shoulder, cut into 1-inch pieces
Kosher salt, freshly cracked pepper
Finely grated lemon zest (for serving)

A spice mill or a mortar and pestle; 8 (8-12-inch-long) metal skewers

Steps:

  • Make the garlic yogurt:
  • Stir garlic, lemon zest, and lemon juice into yogurt in a small bowl to combine; season with salt and pepper.
  • Make the lamb kebabs:
  • Coarsely grind cumin seeds, peppercorns, caraway seeds, red pepper flakes, and sugar in spice mill or with mortar and pestle until only a few whole spices remain.
  • Prepare a grill for medium-high, indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Oil grates. Thread lamb onto 6-8 skewers, leaving a small gap between each piece of meat. Season with salt, then sprinkle generously with spice blend, pressing it onto the meat with your hands to help it adhere if needed.
  • Grill lamb over direct heat, turning every minute or so, until browned and beginning to char in spots, about 4 minutes. Move to cooler side of grill and continue to grill until lamb is cooked to desired doneness, about 4 minutes longer for medium-rare.
  • Top garlic yogurt with cracked black pepper and a little lemon zest. Serve alongside lamb.
  • Do Ahead
  • Yogurt can be made 3 days ahead. Cover and chill. Spice blend can be made 1 month ahead. Store airtight at room temperature.
