Gluten-Free Cucumber Slices Provençal image

Four ingredients and three steps--all you need to make these refreshing appetizers!

1 large English or burpless cucumber, chilled
1/3 cup sun-dried tomato spread
3 tablespoons crumbled chèvre (goat) cheese
Fresh basil leaves, if desired

Steps:

  • Make lines or indentations lengthwise down cucumber at 1/4-inch intervals, using vegetable peeler or tines of fork. Cut cucumber into 32 slices, 1/2 inch each. Place on paper towels to drain.
  • Spread each slice with about 1 teaspoon tomato spread. Sprinkle each with about 1/2 teaspoon cheese.
  • Serve immediately, or refrigerate up to 1 hour. Top each slice with basil leaf just before serving.

1 large English (seedless) cucumber, about 12 inches long
1/2 cup deli ham salad or garlic-and-herb cream cheese spread
Thin orange or lemon slices, cut into small wedges, if desired

Steps:

  • Using vegetable peeler, cut lengthwise strips of peel down 4 sides of the cucumber, making a square shape (some peel will remain). Cut cucumber into 1-inch slices. Make indentation in center of each slice by scooping with small melon baller or spoon.
  • Fill each indentation with about 1 teaspoon deli salad. Top each with orange or lemon wedge.

Fresh Cucumber Slices With Smoked Salmon and Wasabi Cream image

Classic elegant little Scandinavian appetizers, with a fusion accent! These can be made up in advance, then assembled before serving.

1 English cucumber
3 -4 ounces thinly sliced smoked salmon
1 -2 teaspoon lemon juice
1/2 cup cream cheese, at room temperature
1 1/2 teaspoons finely chopped fresh dill
1 1/2 teaspoons finely chopped fresh chives
fresh ground black pepper, to taste
1 tablespoon wasabi powder or 1 tablespoon wasabi paste, to taste
fresh dill, to garnish

Steps:

  • Partially peel cucumber horizontally (so that some dark green still shows), then slice into 20 @ 1/4-inch thick rounds. Lay on paper towels.
  • Arrange slices of smoked salmon on top of the cucumber slices, cutting salmon to fit.
  • Drizzle salmon with lemon juice and lightly sprinkle with pepper.
  • In a small bowl whip together the cream cheese, fresh dill, fresh chives, pepper, and wasabi powder.
  • Top salmon with wasabi cream, and garnish with fresh dill.

1 small garlic clove, crushed
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon dried dill weed
2 medium cucumbers or 2 medium zucchini, thinly sliced
2 tablespoons snipped fresh parsley (optional)

Steps:

  • Mix sour cream, garlic, sugar, salt and dill weed. Stir in cucumbers. Sprinkle with snipped parsley if desired. Serve immediately.

These are the best appetizers that I know of created by a friend of mine. They always are the first thing to go, and my kids love them! Try it, I know you won't be disappointed.

Number Of Ingredients 7

1 baguette, preferably soft, Large bread will not work for this. Cut into thin pieces, not on the diagonal
1 bunch fresh cilantro
2 (8 ounce) packages cream cheese
2 cucumbers, sliced thin and patted dry with paper towel (Mandolin works great with this)
celery salt, to taste
dried dill, to taste
garlic powder, to taste

Steps:

  • Mix cream cheese with Dill,Celery Salt, and Garlic powder to taste. You should be able to taste the spices but not be too overpowering. Spread a little bit of the mixture on each slice of bread. Put a couple of cilantro leaves on top of the spread on each slice. Then top with one slice of cucumber. You can make this without the bread and just top each cucumber slice with a dab of cheese and then the cilantro on top. I usually make both so people who don't eat bread can have this too.
  • 50-60 servings (being one) Depends on how long your baguette is and how many slices you get from your cucumbers.
