"ONE OF the staples of Ukrainian cooking is sour cream. This combination of sour cream and cucumbers makes a very tasty salad. During the summer we use cucumbers from our garden for that wonderfully fresh, crunchy taste. But store-bought cucumbers work almost as well, so we enjoy this dish year-around-it goes especially well with meat dishes."

3 medium cucumbers, peeled and thinly sliced
1/2 teaspoon salt
1/2 cup finely chopped green onions
1 tablespoon white vinegar

Steps:

  • Sprinkle the cucumbers with salt. Let stand 15 minutes. Drain liquid. Add onions, vinegar and pepper. Just before serving, stir in sour cream.

1/3 cup sour cream
1 tablespoon vinegar
1 1/2 tablespoons fresh, chopped dill , or 2 1/4 teaspoons dried
Dash freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Arrange cucumber slices in a serving bowl, sprinkling layers with salt.
  • Place a saucer or other weight on cucumbers to weigh down. Cover and let stand for several hours.
  • Pour off and discard excess cucumber juices.
  • In a small bowl, whisk together sour cream, vinegar, and chopped dill. Taste and add freshly ground black pepper.
  • Add dressing to cucumbers and gently toss to coat them.

4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
