1/2 ounce simple syrup
2 ounces gin (such as Hendrick's)

Steps:

  • Add the cucumber wheels and simple syrup into a shaker and muddle.
  • Add the gin, the lime juice and ice and shake until well-chilled.
  • Strain into a coupe glass.
  • Garnish with a cucumber wheel.

2 ounces gin or cucumber vodka (homemade or purchased)
1/2 ounce lime juice, plus a lime wedge for garnish
1/2 ounce simple syrup
Splash of soda water, optional

Steps:

  • Add the cucumber slices to a cocktail shaker and muddle them (gently mash) to release the juices.
  • Add the gin or cucumber vodka, lime juice, and simple syrup to a cocktail shaker. Fill it with ice and shake until cold.
  • Strain the drink into glass. If desired, add a splash of soda water. Garnish with a lime wedge or cucumber slice and serve.

4 ounces gin
2 ounces lime juice ((freshly squeezed))
1 1/4 ounces simple syrup
1 ounce cucumber juice ((from 1.5 inches of cucumber))
4, 2 thin lengthwise slices of cucumber, 2 inches long

Steps:

  • Start with the cucumber juice. Cut a 1.5 inch piece of cucumber and dice it.
  • Place the fine mesh strainer in a 2 cup measuring glass and add the diced cucumber.
  • Take a spoon and with the back of it, squish the cucumber against the strainer until you get enough juice (1 ounce).
  • Add ice to the cocktail shaker so it's halfway full.
  • Add gin, lime juice, simple syrup and cucumber juice.
  • Cap shaker and shake for 15 seconds. Add ice to the double old fashioned glass if you're going to use one and strain and divide the liquid between the two glasses.
  • Add 2 slices of cucumber to each glass for garnish.
  • Sip
  • Smile
  • Enjoy

1 cup sugar
1 cup water
1 c mint leaves, lightly packed plus more for garnish
2 1/4 cup fresh lime juice
lime slices and/or cucumber slices as garnish

Steps:

  • Directions Steep 2 1/2 cups cucumber slices in 4 1/2 cups gin, covered and chilled for at least 8 hours and up to 4 days. Strain; store indefinitely in the refrigerator. Heat 1 cup sugar and 1 cup water over medium-high heat, stirring until dissolved. Add 1 cup mint leaves; remove from heat. Cover; steep 30 minutes to 1 hour. Strain; discard mint. Refrigerate up to 2 months. In a 2-quart pitcher, stir gin, simple syrup and lime juice. Refrigerate. To serve, pour individual servings into a cocktail shaker filled with ice, shake vigorously, and strain into an ice-filled double old-fashioned glass. Garnish with cucumber and/or lime slices and mint. Repeat for additional cocktails.

I also served mine over ice as it was a bit too potent for me as written!!!
