CLASSIC CUBAN-STYLE PICADILLO
Here is a classic Cuban recipe for ground beef that is typically eaten over white rice. It can also be used as a filling for tacos or empanadas. It's delicious with fried ripe plantains.

Steps:
- Heat olive oil in a skillet over medium heat; cook and stir garlic, onion, and green bell pepper in the hot oil until softened, 5 to 7 minutes.
- Crumble ground beef into the skillet; cook and stir until browned completely, 7 to 10 minutes.
- Stir olives, raisins, capers, tomato sauce, sazon seasoning, cumin, sugar, and salt through the ground beef mixture.
- Cover the skillet, reduce heat to low, and cook until the mixture is heated through, 5 to 10 minutes.

CUBAN BEEF STEW
The traditional dish uses a good amount of olive oil and meat with a lot of marbling. This version is lower in fat, but is true to the spirit of the recipe. Although it does take a fair amount of time, it is not difficult to make.

Steps:
- In a large saute pan, heat oil over medium heat. Cook onion and garlic in oil, stirring frequently, until transparent. Stir in cubed meat, and cook until browned. Stir in red bell pepper, bay leaf, cumin, and oregano; cook for 2 to 3 minutes.
- Stir in sherry, tomato sauce, vinegar, olives, raisins, and capers. Pour in enough water to just cover meat. Bring to boil, reduce heat to low, and cover. Simmer until fork tender, about 1 1/2 hours. Add more water if the stew becomes too thick.
- Stir potatoes into the stew. Season with salt and pepper to taste. Cook, covered, until potatoes are almost tender. Uncover, and cook until done.

CUBAN BEEF AND POTATOES OVER RICE

- In a large frying pan, brown ground beef until no longer pink. Drain if necessary. In a bowl, combine tomato sauce, onion, bell pepper, capers, onion powder, garlic powder, and bay leaf. Pour into ground beef. Stir in potatoes, bring to a boil, and then reduce heat. Cover and simmer over low heat 45 minutes to 1 hour, stirring often, or until potatoes are fork tender. Remove bay leaf and serve meat mixture over hot cooked rice. For an authentic Cuban taste, garnish with sliced bananas.

- Heat the oil in a large skillet. Add the beef and saute until lightly browned, stirring to break up any clumps, about 7 minutes. Add the onion and garlic and saute for 5 minutes longer. Add all the remaining ingredients except the butter and almonds. Mix well and simmer, uncovered, over moderate heat for about 20 minutes. In a small skillet, heat the butter and saute the almonds until they are golden brown.
- Mound the beef onto a serving platter and surround with white rice. Drizzle almonds over rice.

- In a large, hot skillet over medium high heat, crumble the ground beef, then add the bell pepper, onion, and garlic, browning the ground beef until it is cooked throughout and the veggies have softened; drain any excess fats from the skillet, then stir in the remaining ingredients, not including the cooked rice. Simmer the Picadillo over low heat for 30-35 minutes, to let the flavors combine. then serve over hot rice. Delish!!!
- Using the sauté setting on the Instant Pot, let the pot preheat a bit, then add the ground beef, crumbling it; add the bell pepper, onion, and garlic, browning the beef until it is cooked throughout and the veggies are softened; drain any excess fats from the pot. Stir in remaining ingredients, not including the rice. Lock the Instant Pot lid into place, choosing the high pressure setting for 3 minutes, bringing the Instant Pot to full pressure. When the timer sounds, use a natural release for 5 minutes, then a quick release to remove remaining pressure from the Instant Pot. Carefully unlock and remove the Instant Pot lid, giving the Picadillo a gentle stir. Serve at once over bowls of warm rice.
- Bring 2 1/4 cups of water or broth and 1 Tbs. unsalted butter or olive oil to a boil; stir in 1 1/2 cups RINSED jasmine or basmati rice. Lock the Instant Pot lid into place, choosing the high pressure setting for 3 minutes bringing the Instant Pot to full pressure. When the timer sounds, use a natural release for 1 minute followed by a quick release to remove any remaining pressure from the Instant Pot. Carefully unlock and remove the Instant Pot lid, fluffing the hot rice with a fork. Yield: approx. 3 cups cooked rice.
- To make basmati or jasmine rice on the stove top in a sauce pan, follow the package instructions.
