Red Cabbage Coleslaw is an easy coleslaw recipe that pairs well with any BBQ recipe. A no mayo coleslaw that can be made ahead and stays good at room temperture.

1 head red cabbage (, cored and sliced)
1/2 cup apple cider vinegar
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 tablespoon honey (, optional )
1 tablespoon olive oil

Steps:

  • Chop, minced or shred cabbage as desired. Place in a large mixing bowl.
  • Toss with apple cider vinegar. (If using honey, whisk with apple cider vinegar before adding to cabbage).
  • Toss with Kosher salt, ground black pepper and olive oil.
  • Cover, refrigerate and marinate for 1 hour to 24 hours.
  • Toss again and drain before serving.

3/4 head green cabbage, finely chopped
8 green onions, finely chopped
1/2 cup sliced almonds
1/2 cup sesame seeds
1/4 cup (1/2 stick) butter
2 3-ounce packages ramen noodles, flavor packets discarded
2 tablespoons sugar
1/2 cup vegetable oil
3 tablespoons red wine vinegar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix the cabbage and green onions in a large bowl. In a small saucepan over medium heat, brown the almonds and sesame seeds in the butter.
  • Combine the dressing ingredients in a small bowl and stir well. Just before serving, add the sesame seeds, almonds, and crushed raw ramen noodles to the cabbage and green onions. Pour the dressing, a little at a time, over the salad mix, then toss.

Another recipe that I collected with an eye to eating healthier. I think red cabbage is underused anyway. If you threw some cooked chicken in with this if you wanted a bit more substance in this light meal. You could also more than likely use light mayo to make it even lower in fat. This is from British TV cook Silvana Franco and was first published in the July 2006 issue of BBC Good Food Magazine.

10 ounces red cabbage
1 large carrot, coarsely grated
1 red apple, coarsely grated
1 bunch green onion, thinly sliced
2 tablespoons mayonnaise
1 tablespoon wine vinegar
1 tablespoon extra virgin olive oil

Steps:

  • Using a large knife, shred the cabbage.
  • Place in a large bowl with the carrot, apple and green onions.
  • Whisk the mayonnaise, vinegar and oil. Season.
  • Toss with the salad and serve.

  • To make this Tangy Red Cabbage Slaw Recipe, start by washing the red cabbage and peeling off any outside leaves that may have wilted. Cut the cabbage in half and then either using a sharp knife and a stead hand or a mandolin, shredd the cabbage into thin slices. Move the cabbage to a large mixing bowl.
  • Next, dice up the red onions and cilantro and add them to your mixing bowl with the red cabbage. Cut the jalapenos in half and remove the seeds, stem and ribs. Dice the jalapenos and add that to the bowl, as well.
  • Then mix together the orange juice, lemon juice, lime juice and zest, olive oil, apple cider vinegar, salt and pepper together in a small bowl and pour over the cabbage mixture. Mix well to combine, cover with plastic wrap and refrigerate for 1 hour before serving.

  • Prepare the cabbage: Remove the outer leaves from the cabbage and discard. Slice the cabbage in half lengthwise through the stump. Place each half face-down on a cutting board and slice very thin. Place the slices in a large mixing bowl, breaking up the dense leaves with your hands.
  • For the carrots: Wash, then peel the tough outer layer from each carrot and discard. Continue to peel the carrots all the way to down to nubs, creating lots of long carrot ribbons. Add them to the cabbage.
  • In a small mixing bowl, whisk together the shallot, vinegar, honey or sugar, mustard, salt, and pepper. Drizzle in the olive oil, whisking, until the dressing emulsifies.
  • Add about half the dressing to the slaw and toss, along with most of the scallions. Taste for seasoning and add more dressing as necessary. Garnish with the reserved scallions.This red cabbage slaw will keep for up to two days, dressed, covered in the refrigerator. Toss again before serving.
