CRUNCHY POTATOES WITH DILL & ONIONS
Roasties packed with flavour, and they're good for you too... try them with slow-roast lamb

Steps:
- Bring a large pan of salted water to the boil. Add spuds, bring back to the boil, then cook for 3 mins. Drain really well, leave in the colander for 10 mins to steam dry. Toss with the oil, onion and seasoning in a large roasting tin.
- Heat oven to 220C/200C fan/gas 7 and put in the potatoes. Roast for 30 mins, stirring halfway, until golden and crunchy. Stir in the dill and put back in the oven for 5 mins, then serve.

Steps:
- Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
- In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

Steps:
- Preheat oven to 400º F.
- Wash, dry and prick potatoes.
- Place in a baking dish and cook until done (about 1 hour).
- When done, remove from oven and set aside to cool slightly.
- Cut potatoes into chunks (while they are warm) and place in serving bowl.

Steps:
- To caramelize the onions, heat the olive oil with the butter in a medium skillet until butter just begins to foam. Add onions and cook over medium heat until they start to brown, stirring frequently, about 10 minutes.
- Reduce heat to low and continue cooking, stirring occasionally, about 20 minutes longer until onions turn a golden brown. Watch carefully toward the end of cooking time. Sprinkle with sugar, if desired, and cook another minute or two, tossing to incorporate. Set aside.
- In a large pot of salted water, boil potatoes until tender, 10 to 15 minutes. Drain well, return to pot, and set over low heat for a few minutes to evaporate any remaining water. Remove from heat.
- Add caramelized onions, salt, and dill. Toss until all ingredients are well incorporated.
- Transfer potatoes to a serving dish and serve warm.

CRISP ONION-ROASTED POTATOES
You may omit the thyme or marjoram and substitute other herbs like oregano. Make them to your liking. This is a high fat recipe you can cut it back by only spraying the potatoes with Pam or other such spray and then sprinkle the herbs over the pottoes coating them. They will still be tasty and much healthier

- Heat oven to 450F degrees.
- In a shallow baking dish mix all the ingredients except the potatoes, thoroughly blend the spices oil etc.
- Add potatoes and turn to coat all sides.
- Bake stirring the potatoes occasionally for about 1 hour or until the potatoes are tender and golden.
