CRUNCHY BAKED FRIES
I never thought I would prefer a baked "fry" over a regular french fry until I tried these. Wow! It is all in the preparation, and it may seem tricky at first, but once you have the technique down, you will be making these all the time. Follow the instructions carefully for best results. Steps:
- Peel potatoes and cut them into evenly sliced "fry" wedges.
- Set oven at 475 degrees.
- Place potatos in large bowl and cover with warm tap water for 10 minutes.
- Meanwhile, coat 18 X 12 non stick baking sheet with 4 tablespoons of oil, and sprinkle evenly with 3/4 teaspoon of seasoned salt and 1/4 teaspoon of pepper.
- Drain potatoes, and dry them completely on a triple layer of paper towels (keeping them dry here is key). Wipe out empty bowl, return potatoes, and toss with remaining 1 tablespoon of oil.
- Arrange potatoes in a single layer on baking sheet; cover tightly with foil, and bake 10 minutes.
- Remove foil, and return to the oven for another 10-15 minutes.
- In the last 5 minutes, check for doneness by using a spatula to check for a golden brown color underneath. Turn the fries, and return to the oven for a golden color on the flip sides.
- Dab with a paper towel to remove excess oil, and sprinkle with seasoned salt and pepper to taste. Yum!

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

OVEN BAKED CRISPY POTATO FRIES
I made this side last night from a Rachael Ray recipe. I've tweaked it a little based on my initial experience. It's super fast and easy. Any other ideas on how to tweak more would be great!

Steps:
- Heat oven to 550 degrees (or as high as your oven goes).
- Halve each potato, then cut each half in 5 slices lengthwise. Place on a baking sheet and drizzle the olive oil over them, work the potatoes around in the oil until evenly coated.
- Season with the rosemary, salt, pepper and red pepper. (I recommend LOTS of salt and I'm not big on super salty foods.) Throw the garlic cloves on the sheet with the potatoes.
- Roast 25 minutes. Make sure to turn them all once at the halfway point or they will end up sticking to the baking sheet.

- Place a rimmed baking sheet in the oven; preheat to 425°F. Combine water, vinegar and 1 teaspoon salt in a large pot and bring to a boil over high heat.
- Cut potatoes into ½-inch-thick sticks. Add to the pot, reduce heat to medium and cook just until starting to become tender, 8 to 10 minutes.
- Carefully remove the potatoes to a clean kitchen towel with a slotted spoon. Gently pat dry, then transfer to a medium bowl and toss with oil. Carefully spread the potatoes in a single layer on the hot baking sheet. Bake, flipping halfway through, until golden and crispy, 30 to 40 minutes.
- Transfer the fries to a paper-towel-lined bowl. Let rest for 2 minutes. Remove the paper towels and sprinkle the fries with the remaining ¼ teaspoon salt. Serve immediately.

- Place a rack in the lower third of your oven and preheat to 450 degrees F. Drizzle a large rimmed baking sheet with 1 1/2 tablespoons olive oil, brushing it as needed so that it nicely coats the pan.
- Scrub the potatoes and peel if desired (I leave the peels on). Slice into 1/4-inch-wide sticks. Place the potatoes in a large bowl, then pour very hot tap water over the top so that it covers the potatoes by at least 1 inch. Let sit 10 minutes.
- Drain the potatoes, then transfer them to a clean towel and dry as completely as you can, changing the towel as needed. Rinse and wipe out the bowl you soaked the potatoes in, then return the potatoes to the bowl. Drizzle with the remaining 1 1/2 tablespoons olive oil and sprinkle with salt, garlic powder, dill weed, onion powder, and pepper. Toss to coat, making sure the spices and oil are well distributed. Spread the potatoes into a single layer on the prepared baking sheet.
- Roast in the lower third of the oven for 15 to 20 minutes, until turning golden underneath. Remove the baking sheet from the oven and, with a large, firm spatula, carefully loosen the fries from the bottom of the pan. Flip them in large sections as best as you can so that the potatoes rotate and brown evenly on all sides (no need to painstakingly flip every single one). With your fingers (be careful—the pan is hot!) return the potatoes to a single layer. Place the pan back in the oven and continue baking until the fries are as golden and crisp as you like, about 5 to 10 additional minutes (30 minutes total was ideal timing for this crispy-fry lover). While the fries are hot, sprinkle with any desired toppings and a bit more salt to taste. DEVOUR.

- Using a mandoline, slice the potatoes into fries. I don't worry too much about the size of fry I am making- some are bigger, and some are smaller. That's fine!
- Let fries sit one hour. This helps to remove excess starch and will help the fries crisp up more in the oven.
