SPANISH TUNA CROQUETTES RECIPE (CROQUETAS DE ATUN)
Steps:
- Heat up extra virgin olive oil and salted butter in a large skillet.
- Once the butter is melted, add a finely diced, medium sized white or yellow onion. Stir frequently until the onions start coloring.
- Add five tablespoons of flour and stir frequently until the mixture has a golden color.
- Add one and a half cups of whole milk and stir to work out the lumps
- Add tuna, pepper, nutmeg and sea salt.
- Mix everything well until the mixture becomes really thick.
- Pour the dough into a large bowl and let it cool down to room temperature. Afterward, cover the bowl with plastic wrap directly on the dough and store it in the fridge for at least four hours, or even better overnight!
- Once the croquette dough is cold start forming the croquettes and cover them one by one in flour, then eggs, and then bread crumbs.
- Heat up extra virgin olive oil in a skillet and start frying the croquettes. Don't forget to turn them around so that they get evenly brown on all sides. That should take around five minutes.
- Remove the croquettes from the pan and drain them on paper towels.

CROQUETAS DE ATúN - TUNA FISH BALLS
This is a simple recipe based that most of children will like. These fish balls can be served as appetizer with a salsa sauce or as starter with the suggested vegetable mix (salad). I used potatoes that after boiling, peeling and mashing they hold together. If you don't have this kind of potatoes, please add 1 egg and some 2 or tablespoon of flour.

Steps:
- First of all make all the ingredients ready.
- In a big bowl combine potatoes, tuna fish, parsley, spices and salt. Work with a fork. If it doesn't stick together add 1 egg and about 2 tablespoon of flour.
- Form walnuts sized balls, coat first with egg and then with the breadcrumbs. Flat them slightly and place them on a dish.
- Preheat a non sticky pan with about 2 tablespoon oil to medium temperature.
- Fry the meatball on the first size when golden brown, turn, add 2 tablespoon oil and brown the second size.
- For the serving suggestion combine all the vegetable in a bowls toss, eventually add some salt (I didn't). Serve with lemon and olive oil.
- If you prefer serve this with a fresh salsa.
- Enjoy!
- Note: this looks wonderful with some fresh green salad.
TUNA CROQUETTE

- Place the tuna, onions, mustard, eggs, lemon juice, salt, pepper and 1/4 cup of the bread crumbs into a medium mixing bowl and stir to combine. Divide the mixture into 8 rounds and set aside on a parchment lined half sheet pan. Allow to rest for 15 minutes. Place the remaining bread crumbs into a pie plate. One at a time, coat each round in the panko on all sides.
- Heat enough olive oil to cover the bottom of a 12-inch saute pan over medium heat until shimmering. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lined with paper towels. Allow to cool for 2 to 3 minutes before serving.
DANISH FISH BALLS
These are delicious and versatile. These are traditional in the Danish Mock Turtle soup. Serve them as an appetizer with a dip or make it as a fish loaf. Any way it is good In one of the pictures you will see that I made a sauce and fried them - these went over really well. They are wonderful in a curry sauce

- Mix seasoning with the minced fish and the flour.
- Beat the mixture very well and integrate the butter.
- Add eggs one at a time.
- Gradually add the liquid.
- If the mixture curdles stand the bowl in hot water and whisk until it is smooth again.
- Check your seasoning.
- Shape the farce into round balls using 2 spoons dipped in hot water.
- Bring about 2 pints of salted water to a boil.
- Cook one ball to check the consistency.
- Add more egg if the ball is too soft, or cream if it is too stiff.
- If the ball is right cook all the balls, they only take a minute to cook and float when done.
- Serve as an appetizer, use in the Danish mock turtle soup or make it in a ring shaped mold and serve it with a sauce as your main course.

This is a super easy recipe with only a few ingredients. Serve with crackers, chips or raw veggies. Chill time not included.

- Cut fillet of cod into small cubes (I used a meat grinder, therefore it required an addition of flour).
- Add the lemon juice, cream, salt and ground black pepper.
- Gently form 25 small balls.
- One layer of puff dough divided into 4 parts, each part to unroll and cut into thin strips (about 5 mm width).
- Cover fish balls completely with strips of dough.
- Slightly press strips to balls.
- Fry balls in a plenty of oil 3-4 minutes (I baked balls in oven).

FRIED TUNA FISH BALLS

- Drain tuna; SAVE the oil!
- Heat 1 TB of tuna oil in saucepan, mix in the flour, blend until smooth.
- Remove from burner and add milk.
- Continue stirring.
- Add in onion, salt, pepper, and cayenne.
- Place back on burner.
- Stir constantly.
- Cook mixture until smooth but thick.
- Remove from heat add in egg and tuna fish.
- Refrigerate until firm,then roll into 3/4 inch balls.
- Roll tuna balls in flour.
- Fry in deep fat (375°F),until nice and golden.
- Drain on paper towels, insert toothpicks and serve!
BAKED TUNA BALLS
These tuna balls are very tasty, they can be made into 10-12 larger balls, or 30-40 smaller cocktail size balls (served with a cocktail picks). If you are one of those people (like myself) that just have to add garlic to everything, no matter what it is, then fresh minced garlic in any amount may be added to these if desired. This recipe can easily be doubled, I usually do if I am making, them into larger balls, for a snack or a main meal.

- Set oven to 375 degrees.
- Prepare a greased 13 x 9-inch baking pan, or any size to fit the tuna balls.
- In a bowl, combine the tuna, egg, breadcrumbs, mayo, onion, parsley, almonds, mustard, poultry seasoning, salt, pepper and fresh garlic, or garlic powder (if using), do NOT add the crushed Corn Flakes cereal; combine well.
- Shape into 40 balls (for cocktail size) or larger balls, any size you desire.
- Roll completely and evenly in the crushed Corn Flakes cereal to coat well.
- Dip the coated balls completely in melted butter.
- Place on a baking sheet/pan.
- Bake for 10 minutes (for the cocktail size), and 20-25 minutes (depending on how large you make the balls) for the larger size, DON'T OVERBAKE, these do not take long to to get done.
