These are great for football parties! You can make the meat spicy with the hot peppers or for the wienies use mild (I'm teasing!) The leftovers are awesome made into quick chimichangas. Put the meat into a tortilla, roll and fold, and fry. Use more or less meat and peppers depending on the guest list.

2 lbs roast
2 (12 ounce) jars banana pepper rings (hot, medium or mild)
1 onion, sliced
3 -4 minced garlic cloves
10 hoagie rolls
10 slices provolone cheese
2 tablespoons oil
salt and pepper

Steps:

  • Heat the oil in a skillet and brown the roast on all sides adding salt and pepper to each side.
  • Put roast, garlic, pepper rings, and onion in a crockpot and cook on low 8-10 hours or high 4-5 hours.
  • Serve on a split hoagie roll with the cheese (You may want to toast the rolls after you cut them because them meat will be juicy!).

My family really enjoyed the sweet and spicy flavor of this pork. So tender you could cut it with a fork. I served mine in slices with a side of macaroni and cheese and a vegetable. This would also be excellent in a sandwich. No matter how you serve it, it's delicious! I believe this would be great on chicken, also. Enjoy!

RUB MIX
3/4 c brown sugar
2 Tbsp spicy montreal steak seasoning
1 Tbsp each - kosher salt, chili powder, garlic powder, onion powder
1 tsp red pepper
PORK
3 1/2 - 4 lb pork roast - i used pork shoulder end roast - any pork roast would work
1 Tbsp olive oil

Steps:

  • 1. Rinse and dry pork. Rub with olive oil all over. Mix rub ingredients. I used half of the mix to cover my pork. You can halve the recipe if you like. I made enough to use for another day. Store in a jar with lid.
  • 2. Pat the rub evenly over the roast. Place in slow cooker and cover. I cooked mine for 8 hours on low and let set for another hour on warm, covered. Or, cook until desired tenderness. This could be done on a low temperature in your oven as well. I'm sure you could cook it on high for a couple hours, then low until good and tender.
  • 3. After carving, I ladled some juices from slow cooker, over the meat. Yum! Enjoy!

  • Season the roast with pepper (no need to salt it as there will be plenty of salt in the seasoning packets already). Heat a large skillet over medium-high heat, then add the oil. Brown the roast on all sides in the hot oil, then transfer to a large slow cooker. This step can be skipped, if you don't have time.
  • Dump the packets of Italian seasoning and au jus gravy mix, along with the pepperoncini peppers, 1/2 cup of their juice, and the butter, right on top of the roast. Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until the beef shreds easily with a fork.
  • Once the meat is shredded, butter and toast the buns, then spread with a thin layer of mayonnaise. Pile the shredded pot roast onto the bottom buns and top with a slice of Provolone cheese. Toast under a broiler just until the cheese is melted, then top with the remaining buns and enjoy!
