4 lbs corned beef brisket
3 carrots peeled and cut into large chunks
1 lb small yellow potatoes halved
1/2 head green cabbage cut into wedges
3 cups water
4 tablespoons butter
2 teaspoon minced garlic
1 tablespoon chopped parsley
1 teaspoon salt
1 teaspoon pepper
grainy mustard for serving optional

Steps:

  • Remove the corned beef from the package.
  • Place the corned beef brisket (fat side up), carrots and potatoes in a slow cooker. Add 3 cups of water to the slow cooker, plus the seasoning packet that comes in the corned beef package.
  • Cover and cook on LOW for 6 hours.
  • Add the cabbage on top of the corned beef and cook on LOW for another 2 hours.
  • Remove the cabbage, corned beef, potatoes and carrots from the slow cooker. Slice the corned beef against the grain.
  • Place the butter, garlic, parsley and salt and pepper in a small bowl. Microwave in 30 second increments or until melted.
  • Drizzle the garlic butter over the carrots, potatoes and cabbage. Place the meat, potatoes and vegetables on a platter and serve with mustard on the side if desired.

  • Cut meat to fit, if necessary.
  • Cover and cook on low 10-12 hours; high 6-7 hours or auto 6-8 hours.

3 carrots, cut into 1 inch pieces
3 parsnips, cut into 1 inch pieces (sweeeter then carrots)
3 -4 lbs corned beef brisket
2 -3 onions, cut into quarters
10 small red potatoes, halved, 6 medium quartered, 4 large cut into six pieces
1 small head of cabbage, cut into wedges keeping the core on each wedge so they stay in wedges
1/2-2 teaspoon mustard powder
1/2-2 teaspoon garlic powder
1 sprig thyme
1 teaspoon sugar
12 ounces Guinness stout
1 cup water
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Place carrots and parsnips into bottom of crock pot.
  • Add corned beef brisket & onions.
  • Mix together beer, water, sugar, dry mustard, garlic powder, sprig of thyme, salt and pepper.
  • Pour into crock pot.
  • Cover & cook on low heat for 8 hours.
  • If carrots, parsnip and onions are tender you can remove them, placing them in a covered dish. Add cabbage wedges and potatoes to crock pot & push down into liquid.
  • Turn crock pot on high & cook 2 more hours adding back the veggies if removed just to warm.
  • Serve with a good mustard or place corned beef on a foil lined cookie sheet fat side up. Score fat, broil 3 minutes then pour about 1/2 cup Pineapple Ham Glaze Great for Corned Beef recipe # 57813 on top and broil for 2 more minutes.

4 cups hot water
2 tablespoons apple cider vinegar
2 tablespoons sugar
1/2 teaspoon fresh ground pepper
1 large onion, cut into quarters
3 lbs corned beef brisket (with spices)
8 small white potatoes or 8 small yellow potatoes, scrubbed and cut into quarters
1 head cabbage, cored and cut into 10 wedges (about 1 1/2 pounds)
4 -5 carrots, cut into 1 inch pieces

Steps:

  • Combine the water vinegar, sugar, pepper and onions, in a 6 qt crock pot and mix well.
  • Place corned beef and contents of spice packet in the mixture.
  • Scatter the potatoes and carrots over the top and along the sides.
  • Cover and cook on high heat setting 4 hours.
  • Remove the lid and scatter the cabbage wedges over the top.
  • Cover and continue cooking on low 3-4 hours longer, or until beef is tender.
  • To serve, carve the beef into slices against the grain and serve with the cabbage and potatoes, with some of the cooking liquid spooned on top of the beef to keep it moist.

10 baby red potatoes, quartered

2 lb corned beef w/ seasoning packet
3 bay leafs
2 c baby carrots
4 medium red potatoes, peeled and cubed
1 medium cabbage head, cut up in small wedges and core removed
1/2 stick butter
2 Tbsp ham soup base mix

Steps:

  • 1. In your Crock Pot place your corned beef in the bottom.
  • 2. Add enough water to cover the corned beef. Add the soup base and the peppercorn seasoning packet from the corned beef package.
  • 3. Let this cook for about 3 hours on high setting.
  • 4. Add potatoes, carrots, more water if needed, and bay leaves on top of corned beef.
  • 5. Push your cabbage wedges on to the top of veggies.
  • 6. Then place your butter on top of that.
  • 7. Place lid on and cook 4 or 5 more hours or until corned beef is very tender
  • 8. At this point, I tore the corned beef into serving chunks. Then place on a warm setting until ready to eat. Smells wonderful!

3 lb corned beef brisket - seasoning packet - rinsed
4 c hot water
2 Tbsp cider vinegar
2 Tbsp sugar
1 bay leaf
1/2 tsp ground pepper
1 or 2 medium onions, cut into wedges
6 medium potatoes, peeled and quartered
6 - 8 carrots, peeled and cut into 1 inch pieces
1 - 1 1/2 lb head of cabbage, cored - cut into wedges
salt & pepper when serving
whole grain mustard for serving - optional

Steps:

  • 1. Combine water, vinegar, sugar and pepper, in the bottom of a 6 quart slow cooker. Mix well. Then place the onion into the water mixture. Add bay leaf. Place the rinsed brisket on top of the onions, sprinkle with seasoning packet. Scatter the potatoes and carrots over the top and along the sides of the brisket. Cover and turn pot to high. Cook for 4 hours.
  • 2. Remove the lid and place cabbage wedges over the top, cover and continue to cook another 3 - 3 1/2 hours or until beef and vegetables are to desired tenderness.
  • 3. Carefully remove the brisket from the pot and cut across the grain. Serve with vegetables on the side, along with the yummy juices and some whole grain mustard. Salt & pepper as desired.

3 -4 lbs corned beef brisket
2 -3 medium onions, quartered
3/4-1 1/4 cup water
1/2 small head of cabbage, cut in wedges

Steps:

  • Put all ingredients except cabbage wedges in Crock Pot in order listed.
  • Cover and cook on Low 10-12 hours or High 5-6 hours.
  • Add cabbage wedges to liquid, pushing down to moisten, after 6 hours on Low or 3 hours on High.
  • Note: Vegetables may be varied, or omitted for plain corned beef.
  • Note: To prepare more cabbage than Crock Pot will hold with large brisket, cook it separately in skillet. Remove 1 cup of broth from Crock Pot during last hour of cooking. Pour over cabbage wedges in skillet. Cover and cook slowly for 20-30 minutes.
