I've always loved the marvelous contrast between a hot, smoky piece of meat, and a cold, fruity salsa; and this version featuring nectarines did not disappoint. In fact, the only thing that pairs better with this fresh fruit salsa is a basket of crispy tortilla chips.

1 cup finely diced nectarine
½ cup finely diced red bell pepper
⅓ cup finely diced onions
2 tablespoons finely diced jalapeno pepper
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons olive oil
½ teaspoon salt, plus more to taste
1 pinch cayenne pepper
1 pinch freshly ground black pepper

Steps:

  • Combine nectarines, bell pepper, onions, jalapeno pepper, and cilantro in a bowl. Stir in lime juice, olive oil, salt, and cayenne pepper.
  • Cover bowl with plastic wrap. Refrigerate to let flavors develop, 30 minutes to 1 hour.
  • Before serving, stir in black pepper. Add a pinch more salt, if needed.

8 Roma Tomatoes (whole)
12 oz yellow sunburst tomatoes or grape tomatoes
2 sweet onions (roughly chopped)
1 red bell pepper (roughly chopped)
1 green bell pepper (roughly chopped)
1 tablespoon garlic (minced)
28 oz crushed tomatoes
1 lime (squeezed)
cliantro (to taste) (chopped)
salt (to taste)
1 bag tortilla chips

Steps:

  • Place all ingredients in a 4-6 quart slow cooker except lime, salt and cilantro.
  • Cover and cook on high for 3-4 hours until veggies are tender..
  • In batches, blend cooked ingredients until salsa reaches desired consistent.
  • Stir in lime juice, cilantro and salt to taste. Then serve with chips.

NECTARINE SALSA

A refreshingly sweet and tangy blend. Especially good when cooked on the grill and served with a mild fish such as tilapia. If you are grilling fish, the salsa can be cooked on the grill at the same time and served over the fillets.

32 ounces salsa (I use 2- 16 oz. jars)
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained
flour tortilla
sour cream
guacamole

cheese
salsa

Steps:

  • Place first four ingredients in crock pot.
  • Cook on low 6-8 hours.
  • 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
  • To serve, use chicken mixture as filling inside tortillas.
  • Add desired condiments.

2 garlic cloves
1 small onion, cut into wedges
1 green pepper, seeded and quartered
2 jalapeno peppers
1/4 cup fresh parsley leaves
1 teaspoon salt

Steps:

  • Cut a small slit in two tomatoes; insert a garlic clove in each. Place tomatoes and onion in slow cooker. Cut stem off jalapenos; remove seeds if a milder salsa is desired. Place peppers in slow cooker. Cover and cook on high for 2 1/2 to 3 hours or until vegetables are softened (some may brown slightly); cool. In blender, combine tomato mixture parsley and salt . Process until smooth. Refrigerate leftovers. Also freezes well.
  • I use my hand blender to process, then I can chop it all right in the slow cooker and don't have to transfer it to blender container.

2 1/2 lbs nectarines (peeled, pitted and sliced)
1 1/2 cups brown sugar
1 cup cider vinegar
2 tablespoons prepared ginger (from a jar)
2 teaspoons kosher salt
1/4 cup onion, chopped
1 teaspoon dry mustard
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
1/2 cup almonds (slivered, toasted)

Steps:

  • Place the following in the crock pot: nectarines, brown sugar, vinegar, ginger, salt, onion, mustard, cinnamon, cloves.
  • Stir and, on the low setting, allow to cook for 4 hours. Taste and adjust seasonings if desired.
  • Allow chutney to cool and then add the almonds and refrigerate.
  • This is a nice condiment/topping for baked pork roast or even on a small beef steak.
  • This chutney can be used as a base for Henry Bain Sauce.

10 plum tomatoes
2 garlic cloves
1 small onion, cut into wedges
2 jalapeno peppers

  • Core tomatoes. Cut a small slit in 2 tomatoes; insert a garlic clove into each slit. 6 chicken breasts
2 (15 ounce) cans corn
2 (15 ounce) cans black beans
2 (16 ounce) jars salsa
1 (1 1/4 ounce) package taco seasoning mix

Steps:

  • Place frozen or unfrozen chicken in crockpot.
  • Pour one jar of salsa on top of chicken.
  • Pour two drained cans of corn and two drained cans of black beans on top.
  • Pour taco seasoning on top.
  • Pour last jar of salsa on top.
  • Add 8 oz. of water if necessary.
  • Cook for 8 hours on low or 4 hours on high.
  • 30 minutes prior to serving shred chicken and place back in crockpot.
  • Place over rice or tortillas and add your favorite toppings!
