Steps:
- Combine broth and water in a 4 cup glass measuring cup and microwave on high until very hot, about 5 minutes. You can also heat the broth and water mixture in a saucepan on the stovetop. Don't let the mixture boil.
- Spray a 3 1/2 quart slow cooker with cooking spray to reduce sticking.
- Combine rice, onion, and pepper in the slow cooker and mix to combine.
- Pour hot broth mixture over and cover crock pot.
- Cook on high for 1 1/2 to 2 hours, until rice, is tender. Stir and serve.

- In a large skillet, saute rice in butter until lightly browned. Add green onions and garlic; cook and stir until tender. Stir in mushrooms., Transfer to a 1-1/2-qt. slow cooker. - Chop together the lemon rind, garlic and parsley.
- Heat the butter in heavy 2-qt pot.
- Cook the garlic mixture very gently for 10 minutes.
- Stir in the rice.
- Stir over medium heat for 2 minutes.
- Combine the stock and wine in a saucepan.
- Heat until it begins to bubble at the sides.
- Stir into rice; add salt and freshly ground pepper.
- Cover tightly and simmer over very low heat for 20 minutes or until liquid is absorbed and rice is tender.
- Fluff with a fork.
- Cover the pot with a kitchen towel and lid until it is time to serve.

- In a large saucepan, saute pecans in 2 tablespoons butter until toasted; remove from the pan and set aside., In the same pan, saute onion in remaining butter until tender. - Put the oil in a deep skillet or large saucepan over medium-high heat. When it's hot, add the onion and garlic and cook, stirring, until softened, about 5 minutes.
