Vary the flavor of this family-favorite casserole by using different kinds of soup and potato mixes. I usually dish out hearty helpings with a salad and garlic bread. - Eileen Majerus, Pine Island, Minnesota

1 package (5-1/4 ounces) au gratin potatoes or cheddar and bacon potatoes
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 cup water
1 can (4 ounces) chopped green chiles, drained
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (4 ounces) diced pimientos, drained
1 pound ground beef
1 medium onion, chopped

Steps:

  • Set potato sauce mix aside. Place potatoes in a 3-qt. slow cooker; top with corn. In a bowl, combine soup, water, chiles, mushrooms, pimientos and reserved sauce mix; mix well. Pour a third of the mixture over corn. , In a large skillet, cook beef and onion over medium heat until the meat is no longer pink and onion is tender, 5-7 minutes, breaking up beef into crumbles; drain. Transfer to slow cooker. , Top with remaining sauce mixture. Do not stir. Cover and cook on low until potatoes are tender, 4 hours.

1 pkg au gratin potato mix
1 can(s) whole kernel corn
1 can(s) condenced beefy mushroom soup
1 c water
1 can(s) 4 oz green chili's drained (optional)
1 can(s) mushrooms drained
1 lb hamburger
1 medium onion diced
1/2 c shredded cheese for top.

Steps:

  • 1. Place dry potatoes in the bottom of a crock pot. top with corn.
  • 2. In a pan fry the hamburger and onion together. adding the mushrooms the last few minutes.
  • 3. In a bowl mix the cheese sauce from the au gratin potatoes with the water and beefy mushroom soup. Pour 1/3 of the sauce over the potato/corn mixture in the crock pot.
  • 4. cover with all the meat mix. then the remainder of the sauce goes over that. Do NOT stir.
  • 5. Cook on low for 4 hours check potatoes to be sure. Optional: add shredded cheese on top the last 20 minutes of cooking

6 large potatoes, peeled and cut into 1/4 inch slices
2 cups diced precooked ham
3 hard-boiled eggs, sliced
1/4 cup butter or 1/4 cup margarine
3/4 cup chopped onion
3/4 cup chopped celery
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
2 cups grated sharp cheddar cheese
1/4 cup chopped parsley

Steps:

  • Place potatoes over bottom of 5-quart slow cooker.
  • Toss gently with diced ham and egg slices.
  • Melt butter or margarine in large skillet over medium heat; add onion and celery and saute until tender, about 5 minutes, stirring constantly.
  • Sprinkle flour, salt and pepper on vegetables; slowly blend in milk.
  • bring to boiling point, stirring constantly until mixture thickens.
  • Stir in 1 cup of the grated cheese to melt; stir in parsley.
  • Pour sauce over potato mixture; stir gently to blend.
  • Sprinkle with remaining cheese.
  • Cook, covered, on low setting for 8 hours.
  • Serves 8.
  • NOTE: This recipe is a double energy saver.
  • Serve half for one meal.
  • Cool and chill remaining potatoes; reheat on low setting for 30 minutes the next day.
  • Energy-Wise Cooking.
