A delicious vegan bacon alternative for breakfast or lunch

3 sheets of rice paper
3 tbsp Soy sauce
2 tbsp Nutritional yeast
1 tbsp Maple syrup
1 tbsp Ketchup
½ tsp Garlic powder
1 tsp Flakey salt (optional)

Steps:

  • Preheat the oven to 400F.
  • Stack 3 rice paper sheets together. Slice into equal strips.
  • Make the marinade with the listed ingredients, apart from the flakey salt. Dip your rice paper in water to soften slightly, and then lay on parchment paper. Add flakey salt (optional), then layer with another softened piece of rice paper.
  • Using a brush, liberally coat with marinade, then flip and brush the other side as well.
  • Once your sheet pan is full, place in the oven for approximately nine minutes. Allow to cool before removing from the baking sheet.

CRISPY TOFU BACON IN 10 MINUTES



Crispy Tofu Bacon in 10 Minutes image

Wonderfully crispy and salty-smoky-slightly sweet, this vegan tofu bacon recipe hits all the right notes. And it cooks up in only 10 minutes!

Number Of Ingredients 5

7 ounces extra firm tofu, sliced thin* (half a 14-ounce block; aim for 12-14 slices, 1/8-inch to 1/4-inch thick)
2 tablespoons olive oil (for cooking)
2 - 3 tablespoons soy sauce
1 teaspoon pure maple syrup
1/4 teaspoon smoked paprika

Steps:

  • Slice your tofu.** Lay slices on a couple of layers of paper towels. Add another paper towel on top and press gently to extract some of the moisture from the tofu.
  • Place a large non-stick saucepan over medium to medium-high heat. If your burner runs hot like our high BTU burner on our gas stove, opt for lower - medium or even medium low. You know your stove best! You want to fry your tofu nicely, but you don't want your oil to burn.
  • Add olive oil to the pan.
  • When the oil is hot, lay the tofu slices in a single layer in the pan. The tofu will bubble, sizzle, and maybe even spit a bit so use caution, but know this will result in the easiest, most delicious tofu bacon of your life! Cook until light golden on one side, 3-4 minutes, then flip and cook the other side until light golden, 2 minutes or so.
  • While the tofu cooks, mix together the soy sauce, pure maple syrup, and smoked paprika in a small bowl.
  • When both sides of the tofu are golden and the slices are beginning to stiffen and look drier around the edges, reduce the heat to low. Reducing the heat is important to prevent burning! Then pour the soy sauce mixture over the tofu and toss the tofu slices until coated in the mixture. Cook, tossing gently, until the soy sauce is evaporated, about 1 more minute. Transfer to a clean plate to cool a bit and then enjoy!
  • Tofu bacon keeps, refrigerated in an airtight container, for 3-4 days. But once it sits for a bit, it does lose its crispiness. Still delicious! Just not crisp anymore.

MUSHROOM "BACON" RECIPE BY TASTY

Even if you aren't vegan, this easy liquid-smoke technique for making vegan "bacon" will trick any bacon lover. Simply marinate trumpet mushrooms in a seasoned liquid smoke mixture, then bake in the oven until roasted to a crisp. Serve immediately on a BLT-style sandwich or make ahead and store as a topper for salads, soups, and baked potatoes.

4 king oyster mushrooms, caps removed and tough bottoms trimmed
2 teaspoons garlic powder
1 tablespoon smoked paprika
¼ teaspoon kosher salt
⅓ teaspoon black pepper
¼ cup vegetable oil
⅓ cup liquid aminos
2 tablespoons brown sugar
2 tablespoons maple syrup
1 tablespoon apple cider vinegar

Steps:

  • Use a mandolin to cut the mushroom stems lengthwise into ¼-inch thick planks.
  • In a large bowl, whisk together the garlic powder, smoked paprika, salt, pepper, vegetable oil, liquid aminos, brown sugar, maple syrup, and apple cider vinegar.
  • Gently toss the mushrooms in the marinade until evenly coated. Transfer to the refrigerator and marinate for at least 1 hour, up to overnight.
  • Preheat the oven to 250°F (120°C). Set a wire rack over a baking sheet.
  • Arrange the marinated mushrooms in a single layer on the wire rack.
  • Bake for 90-120 minutes, until the mushrooms have dehydrated and are slightly crisp on the edges, but still flexible. They will harden slightly as they cool.
  • Serve the mushroom bacon as desired, such as on a "BLT" sandwich, in tofu scramble or breakfast burrito, as a salad topper or soup garnish, or as a topping for baked vegan mac and cheese.
  • Enjoy!
