Crispy Rice Salad with Kale image

This salad is inspired by one of the best bites of food I've ever had, the crispy rice salad at Hai Hai, an amazing Vietnamese restaurant in Minneapolis. It's got, like, four different layers of crunch and a dressing that's spicy, sweet, salty, and bright. I never knew I could love a salad this much!

Number Of Ingredients 12

Canola or vegetable oil, for frying
4 cloves garlic, grated
1 teaspoon grated fresh ginger
1 Thai bird chile, thinly sliced
2 tablespoons lime juice
2 tablespoons fish sauce
2 tablespoons sugar
1/4 cup dry roasted, unsalted peanuts
1 1/2 cups cooked jasmine rice (see Cook's Note)
4 cups chopped dinosaur kale
1 shallot, thinly sliced (about 1/4 cup)
1/2 cup whole fresh cilantro leaves

Steps:

  • Fill a cast-iron pan with 1 1/2 inches oil and heat to 350 degrees F. Line a sheet tray with paper towels and set aside.
  • Meanwhile, make your dressing. Combine the garlic and ginger in a large bowl. Add the Thai bird chile. Add 2 tablespoons hot oil from your cast iron into the mixture. Add the lime juice, fish sauce and sugar and whisk together. Let the mixture sit while you prepare your other ingredients.
  • Add the peanuts to the hot oil and fry until they are golden brown, about 2 minutes. Remove and add to the dressing. Mix to coat the peanuts.
  • In the same cast-iron pan, scatter the rice in the hot oil and fry until crispy and golden brown, about 5 minutes. Transfer the fried rice to the lined sheet tray to drain.
  • Add the kale, shallot, cilantro leaves and crispy rice to a large bowl and toss with the peanuts and dressing to taste. Serve immediately.

If you delight in leftover rice - and the infinite ways to put it to good use - here's another technique to add to your repertoire: Crisp cooked rice in just a couple tablespoons of hot oil until it's scorched in spots, and simultaneously crunchy and chewy. The turmeric-stained rice clusters are used as salty croutons in this salad of ginger-lime marinated onions, seared halloumi and a pile of baby greens, a delicate backdrop that highlights the rice's crunch and the halloumi's squeak. A riot of texture, this salad crackles and pops.

1/2 medium red onion (about 2 1/2 ounces), very thinly sliced from tip to tip
1/4 packed teaspoon finely grated lime zest
3 tablespoons lime juice (from 2 limes)
1 teaspoon finely grated fresh ginger
1/4 teaspoon finely grated fresh garlic (one small clove)
1/2 cup extra-virgin olive oil
Salt and black pepper
1/2 teaspoon ground turmeric
2 1/2 packed cups (about 10 ounces) day-old cooked rice, preferably sushi rice
8 ounces halloumi, chilled (Vegan? See Tip)
1 (5-ounce) package mixed baby greens

Steps:

  • Make the ginger-lime vinaigrette: In a large bowl, stir together the sliced red onion, lime zest, lime juice, ginger, garlic and 1/4 cup olive oil. Season to taste with salt and pepper and set aside, letting the red onion marinate and tenderize.
  • Prepare the rice: Heat 2 tablespoons olive oil over medium-high in a large nonstick skillet. Stir in the turmeric. Add the rice and cook, stirring quickly to coat the rice evenly, about 1 minute. (No need to break it up entirely; clumps are encouraged for texture.)
  • Season generously with salt and pepper, and let rice sit, undisturbed, until crispy underneath and toasted in spots, 2 to 3 minutes. Gently turn the rice with a spatula, trying to preserve any clumps, and cook another 3 minutes, until crispy on the second side. (The rice should be almost equal parts crispy and chewy, and evenly stained by the turmeric.) Transfer to a large, paper towel-lined rimmed baking sheet, set in an even layer and let cool.
  • Prepare the halloumi: Chop the halloumi into 3/4-inch cubes, then pat them dry using a kitchen towel or paper towels. Wipe out the skillet, then heat the remaining 2 tablespoons oil over medium-high. Add the cubed halloumi in an even layer and cook, stirring frequently, until golden at the edges, 2 to 3 minutes. (Sturdy but delicate, halloumi needs to cook quickly at a high temperature so it sears without fully melting down and losing its shape. Stir attentively!) Transfer to a paper towel-lined plate and season with pepper.
  • When ready to eat, add the greens to the vinaigrette, toss to coat and season with salt and pepper. Transfer to a wide, shallow bowl or dish. (You want a big surface area to accommodate the toppings.) Scatter with the crispy rice clusters and hot halloumi. Serve immediately.

  • Cook coarse-chopped slab bacon in neutral oil until done; add cooked rice, chopped scallions, minced ginger and garlic; cook until rice begins to brown. Crack in 1 or 2 eggs, and continue to stir; finish with soy sauce.

Amanda Cohen, the chef at Dirt Candy in Manhattan, loves how easy it is to make fried rice. "If you're a chef, the idea of cooking at home on your one night off is like some kind of terrible nightmare," she said. "Takeout becomes your best friend. but before long half your fridge is taken up by those little white cartons of rice." At home, she digs into those cartons to make fast batches of vegetable fried rice, and she combats the threat of blandness by stocking her freezer in advance with her Secret-Weapon Stir-Fry Sauce: small, dark green ice blocks of puréed garlic, ginger, cilantro, parsley and other ingredients, which she freezes in ice-cube trays (they can be slipped directly into the hot pan). She uses brussels sprouts, fennel, chard and mushrooms, but this dish is the definition of flexibility. "As long as you maintain the proportions, this recipe can take any vegetable you throw at it," she said. "Think of it as a chance to clean out your crisper drawer."

1 tablespoon sesame oil
4 tablespoons canola oil
1 cup of trimmed and quartered brussels sprouts
1 cup diced fennel
2 cups chopped chard
1 cup chopped cremini mushrooms
4 loosely packed cups of leftover rice (about 1 large, quart-size carton, or 2 small pint-size cartons)
Rice wine vinegar, to taste
4 frozen cubes (or 4 tablespoons fresh) Secret Weapon Stir-Fry Sauce (see recipe)
Soy sauce, to taste
Fish sauce, to taste
Hot sauce, to taste

Steps:

  • Heat sesame oil and canola oil in a large pan or a wok over medium-high heat until the oil shimmers. Add the vegetables and stir constantly until they have started to soften and brown, about 4 minutes.
  • Toss in the rice, and use a wooden spoon or spatula to break up the clumps. Some of the rice will stick to the pan, but don't panic. The older and drier the rice, the longer this takes. If it starts sticking a lot, add a dash of rice wine vinegar or water. Keep stirring until the rice softens and becomes slightly translucent.
  • Add the frozen Stir-Fry Sauce cubes, and keep stirring as they melt and coat the rice. Transfer the rice into a bowl and season to taste with soy sauce, rice wine vinegar, fish sauce or hot sauce, or all four.

An easy, yet zesty vinaigrette for use on both green and pasta salads. This dressing is best made the day before so flavors meld. Adapted from "Jean-Georges: Cooking at Home with a Four-Star Chef" by Jean-Georges Vongerichten and mark Bittman.

Crispy Grains and Halloumi With Smashed Cucumbers image

This vegetarian sheet-pan meal is inspired by crispy rice dishes like tahdig, fried rice and pegao, but, instead of white rice, this recipe calls for whole grains like brown rice, wheat berries or farro. For best results, spread the grains and chickpeas on a sheet pan and pat lightly with a paper towel to remove moisture before cooking - the drier they are, the more they'll crisp up. Then top everything with smashed cucumbers that have been combined with citrus and fresh herbs. As the whole grains cook, the cucumbers marinate, releasing sweet, grassy juices that are then used as a dressing. (You can also use the liquid on a simple panzanella or a baby-green salad.)

3 cups cooked grains (such as brown rice, wheat berries, farro or a mix), shaken or patted dry
8 to 9 ounces halloumi or feta, torn into 1/2- to 1-inch pieces
1 (15-ounce) can chickpeas, drained, rinsed and shaken dry
4 Persian or mini seedless cucumbers
Kosher salt
2 limes or lemons or 1 grapefruit
1/2 cup finely chopped cilantro, dill or parsley leaves and stems, or a mix
1/4 cup extra-virgin olive oil, plus more as needed
1 teaspoon ground cumin or coriander
Black pepper

Steps:

  • Heat the broiler on high with a rack six or fewer inches from the heat source. Put the grains, halloumi and chickpeas on a sheet pan to air dry while you prepare the other ingredients. (You can do this up to a day ahead and refrigerate the sheet pan.)
  • Meanwhile, smash the cucumbers with the side of your knife until they're craggy and split. Coarsely chop into irregular 1/2-inch pieces. Transfer the cucumbers and any liquid on the cutting board to a small bowl and season with salt. Finely grate about 1 teaspoon of the citrus zest over the cucumbers, then squeeze in 3 tablespoons juice. Cut any remaining citrus into wedges for serving. Add the herbs and 1 tablespoon olive oil, stir to combine and set aside. (Cucumbers can be prepared up to 3 hours in advance.)
  • Add remaining 3 tablespoons olive oil and the cumin to the sheet pan. Stir to combine. Season with salt and pepper, spread in an even layer, and broil, shaking the pan occasionally or tossing with a fork, until the chickpeas start to pop and everything is crisped and golden brown, 7 to 10 minutes.
  • Serve the grain-bean mixture topped with the cucumbers and the dressing in the bowl. Season to taste with salt, pepper, citrus juice and olive oil.
