CRISPY LEMON-COCONUT PAN-FRIED TROUT RECIPE - (4.1/5)

Steps:
- 1. In a high-sided frying pan or skillet, pour peanut oil to a depth of 1/2 inch. Heat over medium-high heat. (If oil is smoking, it is too hot.) 2. While oil is heating, whisk milk and egg together in a shallow bowl. Place flour in another shallow dish. Mix lemon zest, panko, and coconut flakes in a third dish. 3. Dip each fillet in egg mixture, then dredge in flour. Shake off excess flour. Dip floured fillet in egg mixture again, then lightly coat in the panko mixture. 4. Place coated fillet in hot oil, skin side down. When bottom is lightly browned, flip fillet. Cook until medium-brown, then flip back to skin side and cook until skin side is also medium-brown. When fully cooked, the skin will be crisp and the trout will flake easily. Serve immediately.
LEMON TROUT
Steps:
- In a large bowl, stir together the flour, lemon pepper, salt, thyme, cayenne and half of the lemon zest. Combine the lemon juice and remaining lemon zest in a shallow dish and soak fish fillets for about 1 minute.
- Heat oil in a large skillet over medium heat. Dip the trout fillets in the flour mixture so that both sides are coated. Shake off the excess and place fillets in the hot oil. Cook for 3 to 4 minutes on each side, until golden brown and fish can be flaked with a fork. Discard the leftover lemon juice.
- Remove from the skillet and drain on paper towels briefly before serving. Garnish each serving with a wedge of lemon.

CRISPY COLORADO TROUT
Steps:
- Preparing Trout: After de-boning, finning, cleaning, and filleting fish, rinse and pat dry. Combine egg and milk in a shallow dish to make an egg wash. Dredge trout in seasoned flour shaking off excess. Dip into egg wash mixture, and then into panko crumbs, turning to coat both sides and patting lightly. Remove fillets and place separately onto platter. Use waxed paper to keep fish from touching. Preparing Aioli Sauce: Place all ingredients into blender except for olive oil, and puree. Add a little water to loosen, if needed. Once you have reached the puree stage, slowly add the olive oil in a steady stream. This will cause the ingredients to emulsify. Set aside. Cooking Trout: Preheat oven to 325 degrees F. In a heavy saute pan, coat bottom with 1/8-inch of oil. Heat pan and oil to medium heat. Add fillet skin side up and cook for about 1 1/2 minutes. Turn fillet over and cook until golden brown on the other side. Remove from heat and place on paper towels in baking dish.
- Place fillets in preheated oven for 6 to 7 minutes. Arrange on plates and drizzle with sauce making thin ribbons across the fillets.
- Serve with Chevre Orzo.
- Cook orzo in salted boiling water to just under done. Drain and keep warm.
- Heat the cream, add remaining ingredients, and toss with the pasta. Season with salt and pepper, to taste.
PAN-FRIED TROUT
Steps:
- In a wide flat dish, combine the bread crumbs, garlic, parsley, oregano, red pepper flakes, zest of 1 lemon and salt, to taste.
- In a small bowl, mix together the mustard and the juice of 1 lemon. Brush both sides of the trout with mustard mixture. Coat the fish on both sides with the seasoned bread crumbs and press firmly to adhere the crumbs to the fish.
- Preheat the oven to 250 degrees F.
- Coat a large skillet with about 1/4 to 1/2-inch of olive oil and bring to a medium-high heat. Add the fish to the pan, skin side down, and cook the fish 2/3's of the way, about 6 to 7 minutes. Carefully turn the fish over and cook the other side until the fish is brown and crispy, about 2 to 3 minutes. Remove the fish from the pan and drain on paper towels. You will probably need to work in batches to do 4 fish. After the first batch is done and dried on paper towels reserve it on a rack in a warm oven.
- When all the fish has been fried, remove the oil and any brown bits from the pan. Add the butter and remaining lemon juice and swirl to combine as the butter melts. Season with salt, to taste, and reduce by about half. Transfer the fish to a serving platter, drizzle with the butter lemon sauce and serve.
