Crispy Chicken and Rice with Sweet Potato and Lemon Slices image

Chicken, rice, and sweet potato slices all roasted together in the oven, releasing juices and flavors that will make your mouth water.

Extra-virgin olive oil
2 sweet potatoes, scrubbed, trimmed, and cut into ⅛-inch (3-mm) slices
1 large yellow onion, cut into ⅛-inch (3-mm) slices
Kosher salt and freshly ground black pepper
1 lemon (preferably Meyer), scrubbed and cut into ⅛-inch (3-mm) slices
Juice of 1 lemon
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
4 sprigs thyme or 1 teaspoon dried thyme
1 whole butterflied chicken, skin on and bone in, trimmed of excess skin and fat
1 cup (200 g) long-grain white rice
1 teaspoon light olive oil
½ teaspoon turmeric
Zest of 1 lemon
2 cups (500 ml) boiling water

Steps:

  • Preheat the oven to 375°F (190°C). To prepare the chicken, drizzle 1 tablespoon extra-virgin olive oil into a large baking dish (at least 9 by 12 inches/23 by 30 cm). Add the sweet potato and onion slices, season with salt and pepper, and toss them in the oil. Arrange the potato and onion slices in a single layer in the base of the dish. Place the lemon slices over them. In a small bowl, whisk together the lemon juice, Worcestershire sauce, onion powder, and thyme. Drizzle this mixture all over the chicken and rub into the top and underside of the chicken, coating it as much as you can. Place the seasoned chicken, skin side up, in the center of the baking dish. To prepare the rice, rinse the rice under cold running water and drain. Transfer to a small bowl and stir in the light olive oil, turmeric, lemon zest, ½ teaspoon salt, and ¼ teaspoon pepper. Scatter the rice around the chicken in the baking dish. Pour the boiling water directly over the scattered rice (but not over the chicken). Cover the dish tightly with aluminum foil and bake in the oven for 45 minutes. Remove from the oven and uncover. Return to the oven to cook until crispy, 30 minutes longer. Make-Ahead Tip Crispy chicken and rice with sweet potato and lemon slices (without the rice) may be marinated and stored in the fridge for up to 24 hours. Add the seasoned rice and boiling water just before cooking. Can I Freeze It? Do not freeze. How to Reheat Crispy chicken and rice with sweet potato and lemon slices may be reheated, uncovered, in a 350°F (180°C) oven for 10 minutes.

1 pound chicken thighs cut into 1 inch chunks
1/3 cup cornstarch
1/2 cup canola oil
3 cloves garlic minced
1 tablespoon ginger minced
1/2 teaspoon red pepper flakes
2 tablespoons soy sauce
1/2 cup honey
zest of one large lemon
1/2 lemon (juiced)
1/2 cup water
1 tablespoon cornstarch
green onions
sesame seeds
lemon zest

Steps:

  • In a large bowl or ziplock bag, toss the chicken thighs with the cornstarch well so every piece is covered in cornstarch. Set aside.
  • Add all the "Sauce" ingredients to a bowl and whisk together to combine. Set aside.
  • Add the vegetable oil to a large pan on medium-high heat.
  • Once the oil is hot, add the chicken and fry on medium-high heat until crispy and golden.
  • Remove chicken from the pan, save one tablespoon of oil and discard the rest.
  • Add garlic, ginger and red pepper flakes to the pan and cook on low heat for about 30 seconds, until you smell the garlic. Stir continuously and be careful as the garlic and red pepper flakes can burn quickly.
  • Add in the chicken back to the pan and toss.
  • Give the sauce in the bowl a quick stir and add it to the pan.
  • Stir to coat well the chicken for about 30 seconds to 1 minute, until sauce has thickened.
  • Garnish with chopped green onions, sesame seeds and fresh lemon zest.
  • Serve immediately with rice.

"Ready, Set, Cook! Hidden Valley Contest Entry" This recipe is an example of a layered Persian tah-dig dish. I developed an interest in Persian foods while surfing the internet. I was amazed at how many ways this rice dish can be prepared. I experimented and put my on spin to this dish. I usually prepare this dish in my Persian rice cooker. However, this recipe was prepared in a 13 inch non-stick skillet.

2 1/2 cups jasmine rice
2 boneless chicken breasts
1 peeled and thinly sliced sweet potato
3 egg yolks
1 1/2 cups plain Greek yogurt
1 (5 ounce) container peach Greek yogurt
1 (12 ounce) jar sweet mango chutney
5 shallots, finely chopped
1/4 cup chopped fresh chives
1 tablespoon lemon zest
2 tablespoons lemon juice
1/2 teaspoon powdered saffron
1/2 teaspoon turmeric
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
3 tablespoons extra virgin olive oil
6 tablespoons chicken stock
1/4 teaspoon black pepper
1/4 teaspoon salt
water

Steps:

  • In a skillet, cover the chicken breasts, shallots, lemon juice, and turmeric with water. Bring to a boil on medium-high heat. Reduce temperature and simmer for one hour. Reserve the stock. Cool and cut the chicken into small pieces.
  • Wash and drain the rice. Bring six cups of water and 1/4 teaspoon turmeric to a boil in a large pot. Add rice and boil uncovered for ten minutes. Drain and rinse the rice in cool water.
  • In a food processor, combine yogurt, egg yolks, Hidden Valley Original Ranch Seasoning Mix, lemon zest, chives, salt, and pepper. Process for 30 seconds or until all ingredients are thoroughly combined. Add 2 cups of the rice to the yogurt mixture. Process for 15- 20 seconds.
  • Dissolve the saffron into 3 tablespoons of the chicken stock.
  • Lightly brush one side of the sweet potato slices with a tablespoon of olive oil. Cover the bottom of a large non-stick skillet with two tablespoons of olive oil and 1/2 teaspoon of the saffron mixture. Layer 2/3 of the rice and yogurt mixture in the bottom of the pan. Line the edges of the pan with the sweet potatoes.
  • Layer the chicken on top of the mixture. Spoon on the rest of the yogurt mixture. Spread it as evenly as possible. Add the remaining rice. Flatten the rice with the back of a spoon. Combine three tablespoons of chicken stock with the remaining saffron mixture. Drizzle over the top of the rice layer.
  • Cook covered on medium heat until it begins to steam. Reduce temperature to low and cook for one hour. Cool, then place a large plate over the top of the pan. Carefully invert the pan. Garnish as desired. Top with a dollop of Greek peach on the bottom yogurt and sweet mango chutney.

LEMON & ROSEMARY ROAST CHICKEN WITH CRISPY POTATOES



Lemon & rosemary roast chicken with crispy potatoes image

This recipe's a messy job, but the pay-off is fragrant meat deliciously infused with citrus herb flavours

2kg floury potatoes such as King Edward or Maris Piper, peeled
1 lemon
1 tbsp coarse sea salt
1 extra large fresh chicken , around 2.7kg/6lb
6 sprigs rosemary , plus extra for garnish
4 tbsp olive oil
400ml fresh chicken stock (buy two 300ml tubs and use the rest for the lettuce)

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Cut the potatoes into 2 mouthful-sized chunks and put in a large pan of salted water. Bring to the boil, cook for 5 mins, then drain. Meanwhile, place the olive oil in a really large, sturdy roasting tin and heat for 5 mins. Tip the potatoes in and cook for 20 mins.
  • Meanwhile, peel the zest from the lemon (a vegetable peeler is great for this) and slice it finely. Mix it with the sea salt. Place the chicken on a board with the legs pointing towards you, and undo any string tied around. Lift up the skin around the cavity and work your fingers under the skin over the breast and legs, easing it away from the flesh. Push the salty shreds of lemon rind under the skin, spreading it as evenly as possible, followed by four sprigs of rosemary, one on each leg and one on each breast. Then put one sprig inside the bird along with the peeled lemon.
  • Take the tin out of the oven, give the potatoes a good shake, and then arrange them so you can fit a rack over the roasting tin. Then place the chicken upside down on the rack and roast for 20 mins. Turn the chicken over and turn potatoes, coating them in the fat that's run off the bird. Return to the oven and roast for another 20 mins, then turn the potatoes again and cook for another 20-30 mins, until the chicken juices run clear.
  • Remove the roasting tin from the oven and put the chicken on a serving platter, covering it with foil to keep it warm. Leave to rest for 20 mins. Meanwhile, scoop the potatoes into an ovenproof dish and return to the oven to finish crisping up. Pour away the fat from the roasting tin, then put the tin on the hob over a low to medium heat. Add half the stock, then bring to simmering point, stirring and scraping up the brown residue. Boil, reducing until darker and syrupy. Add the rest of the stock, and bring to simmering point again, bubbling to reduce it. Taste and adjust seasoning. Pour through a sieve into a warmed gravy jug.
  • Pile the potatoes around the chicken, and garnish with remaining rosemary sprigs. Serve with gravy and braised lettuce.
  • Freezing: Freeze the chicken at the end of step 2, for up to a month. Defrost thoroughly before continuing with the recipe.
