Challah
Whole wheat
White
Havarti
Brie
Bleu
Cheddar
Apricot
Strawberry
Hot pepper
Grape
Unsalted butter, softened

Steps:

  • *Cook's note: Feel free to try any bread, cheese, or jelly in any combination, not just the ones listed here.
  • Select any bread, any cheese, and any jelly. Spread 2 pieces of bread with butter. Place 1 piece, butter side down, in a skillet over medium heat and top with several slices of the cheese. Spread the unbuttered side of the other piece of bread with some jelly and put it jelly side down on top of the cheese. When the first side is browned, after about 3 minutes, flip the sandwich and cook until the other side has browned, about another 3 minutes. Serve while warm.

1/2 small orange (unpeeled), cut into pieces, seeded
4 cups frozen blueberries (about 1 1/2 pounds), thawed
12 ounces cranberries
1 1/2 cups sugar, additional sugar for sprinkling
3 tablespoons cornstarch
Pie crust dough, enough for a 9-inch double crust pie
2 tablespoons unsalted butter, cut into pieces
Milk (do not use nonfat)

Steps:

  • Coarsely grind orange in processor. Transfer to medium saucepan. Add blueberries, cranberries, sugar, and cornstarch. Stirring constantly, boil mixture over medium high heat until thick, about 3 minutes. Cool completely.
  • Position the rack in center of oven and preheat to 400 degrees F.
  • Place rolled piecrust dough in a 9-inch pie plate; press into place. Trim edges to leave 1/4-inch overhang; reserve trimmings. Spoon the berry filling into crust, mounding in center. Dot filling with butter. Roll the second pie crust out on lightly floured surface. Transfer to top of pie; trim edges and pinch edges together to make a seal. Crimp edges for decorative border. Make several slashes in top crust to allow steam to escape. Brush crust with milk.
  • Gather the reserved crust trimmings and roll out 1/8-inch thick round. Using knife cut out 6 or 7 small leaf shapes. Place leaves decoratively atop pie. Press gently. Brush leaves with milk. Sprinkle pie with sugar. Place on rimmed cookie sheet and bake until crust is golden brown, about 50 minutes. Cool on rack for 1 hour. Serve.

1/2 cup pimento stuffed olive, chopped
12 slices bread

Steps:

  • Let cream cheese soften to room temperature.
  • In a bowl mix cream cheese with mayonnaise.
  • Add chopped olives and mix well.
  • Spread mixture onto 6 bread slices and top with remaining 6 bread slices to make sandwiches. Cut crust edges off and slice each sandwich into quarters.

4 slices whole wheat sandwich bread
8 tablespoons cream cheese (4 oz.)
4 tablespoons pomegranate jelly*
Garnish:
1 cup arils from 1 large POM Wonderful Pomegranate
*Crimson POM Jelly:
juice from 46 large POM Wonderful Pomegranates,** or 2 cups POM Wonderful 100% Pomegranate Juice
1 cup arils from 1 large POM Wonderful Pomegranate
2 tablespoons lemon juice
1 packet liquid fruit pectin or half of a 1-oz. package powdered fruit pectin
4 cups granulated sugar

Steps:

  • Sandwiches: 1. Prepare Crimson POM Jelly in advance of making sandwiches.* 2. Prepare garnish Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 4 tablespoons of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 3. Place 4 slices of bread on a flat surface. 4. Spread each slice of bread with 2 tablespoons of cream cheese. 5. Cover each cream cheese-coated slice of bread with 1 tablespoon of Crimson POM Jelly. 6. Use a cookie cutter to make shaped sandwiches if desired. 7. Decorate each sandwich with 1 tablespoon of arils. *Crimson POM Jelly: 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Prepare fresh pomegranate juice.** 3. In a 6-quart saucepan or Dutch oven, combine pomegranate juice, lemon juice and pectin. Over high heat, bring mixture to a boil. 4. Stir in sugar all at once, then stir constantly. Heat mixture again until it comes to a full rolling boil; boil 1 minute over medium-high heat. 5. Remove from heat and skim foam from jelly with a spoon. Discard foam. 6. Immediately ladle the jelly into clean jelly jars with lids or refrigerator containers with tight-fitting lids. Sprinkle reserved arils over the top of each container of jelly. Cover tightly. Let stand for 45 minutes to cool, then refrigerate for 1 hours. If not using immediately, refrigerate for up to 4 to 6 weeks or freeze for up to 1 year.
