MUDSLIDE BROWNIES

Butter-flavored cooking spray
1 (18.3-ounce) box fudge brownie mix (recommended: Betty Crocker)
3 eggs, divided use
2/3 cup vegetable oil
1/4 cup pre-made mudslide drink (recommended: T.G.I. Friday's)
1 tablespoon instant coffee crystals
1 tablespoon hot water
1 (8-ounce) block cream cheese, softened
1/2 cup sugar
1/2 cup mini chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 9 by 13-inch baking pan with butter-flavored cooking spray; set aside.
  • In a medium bowl, combine brownie mix, 2 eggs, vegetable oil, and mudslide drink. Mix well to combine. Transfer to prepared baking pan and set aside.
  • In a medium bowl, combine instant coffee and 1 tablespoon of hot water. Stir together until all the coffee has dissolved. Add cream cheese, sugar and remaining egg. Using an electric mixer beat on low speed until smooth. Fold in chocolate chips. Spread over brownie mixture. Use a butter knife to cut cream cheese mixture into brownie mixture for a marble effect.
  • Bake in preheated oven for 40 to 45 minutes. Remove from oven and cool completely.

1 cup sugar
1/2 cup butter (softened)
1 teaspoon vanilla
2 eggs
2/3 cup flour
1/2 cup baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup Andes Creme de Menthe pieces

Steps:

  • Preheat oven to 350 degrees. Grease or line with foil a 9 x 9 baking dish.
  • In a large bowl or the bowl of a stand mixer, cream together butter and sugar.
  • Add vanilla and eggs, and mix until smooth.
  • Add flour, cocoa, baking powder, and salt, and mix until just combined.
  • Gently fold in creme de menthe pieces, reserving a few to sprinkle on top.
  • Spread evenly in prepared pan, top with remaining creme de menthe pieces, and bake 20-25 minutes, or until a toothpick inserted about two inches from the side of the pan comes out clean.
  • Let cool and then cut into squares (I usually cut 16 squares, since they are pretty rich).

Nonstick cooking spray
1 (19.50-ounce) box chocolate brownie mix
2 eggs
1/4 cup chocolate milk
1/4 cup canola oil
1 cup chocolate chips, divided
1/2 cup heavy cream
30 caramels (recommended: Kraft)
2 cups shredded coconut, toasted

Steps:

  • Preheat the oven to 350 degrees F. Generously spray a 9 by 13-inch baking dish with cooking spray.
  • In a large bowl, beat the brownie mix with the eggs, chocolate milk, and oil until just combined. Using a spatula, fold in 1/2 cup chocolate chips. Spread into the prepared baking dish and bake until center is barely set, 25 to 30 minutes. Remove from the oven and cool completely.
  • Heat the cream in a small saucepan over medium low heat. Stir in the caramels until completely melted and incorporated into the cream. Remove from the heat and stir in the coconut. Spread in an even layer over the cooled brownies.
  • Melt the remaining chocolate chips in the microwave at 15 second intervals, stirring between intervals. Drizzle the chocolate in a criss-cross pattern over the coconut topping. Place in the refrigerator for at least 30 minutes to set before slicing into bars.

1/4 cup chocolate milk, Nestle
3 tablespoons chili powder
2 tablespoons chopped canned jalapenos
1 teaspoon ground cinnamon
Powdered sugar, Domino

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13-inch baking pan lightly with cooking spray; set aside. In a large mixing bowl, stir together all ingredients, except powdered sugar, until well combined. Spread batter evenly into prepared pan.
  • Bake in preheated oven for 24 to 26 minutes or until a toothpick inserted in brownies two inches from the edge of the pan comes out almost clean. Cool completely on a wire rack before cutting. Before serving, dust brownies with powdered sugar.

1 1/2 cups semisweet chocolate chips
1 cup canola oil, plus 1 tablespoon
1 1/2 cups sugar
4 large eggs
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1 teaspoon pumpkin pie spice
1 tablespoon chili powder
1 tablespoon powdered sugar, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray a 13 by 9-inch baking pan with cooking spray. Put a medium glass bowl over a pot of simmering water. Add the chocolate chips and 1 tablespoon canola oil. Stir frequently until the chocolate melts, then remove from the heat and let cool a bit.
  • In a large bowl add the sugar, eggs, and vanilla. Mix until well combined and the sugar has dissolved, about 2 minutes. Sift together the flour, cocoa powder, pumpkin pie spice and chili powder. Add to the egg mixture and stir well until everything is combined. Add the remaining oil and mix with an electric hand mixer until smooth. Stir in the melted chocolate and mix well. Pour into the prepared pan and bake until a toothpick comes out clean when inserted into the brownie, about 30 to 35 minutes. Cool and dust with powdered sugar before serving.

1/4 teaspoon almond extract

1 box moist chocolate devil's food cake mix
1 cup slivered almonds, toasted
1 stick butter, softened
4 cups powdered sugar, divided
1 1/2 teaspoons instant espresso powder
1/2 cup chocolate syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9 by 13-inch baking pan with nonstick cooking spray.
  • In a large mixing bowl, combine butter, coffee, and brown sugar. Beat with an electric mixer on medium speed until light and fluffy. Add egg, almond extract, water, and cake mix and beat until smooth. Stir in almonds.
  • Turn batter into prepared pan and smooth to edges. Bake for 30 to 35 minutes until tester comes out clean. Cool completely before icing.
  • For icing: In a small mixing bowl, beat butter with powdered sugar, adding the sugar 1 cup at a time, until light and fluffy. Beat in espresso powder and chocolate syrup until smooth.
  • Ice brownies and cut into squares.

Steps:

  • Preheat oven to 350 degrees.
  • Mist 9x13 baking pan with cooking spray.
  • Prepare brownies: In double boiler, melt baking chocolate and 1 cup butter over simmering water; cool slightly.
  • In medium mixing bowl, beat eggs with a whisk until blended, then add the 2 cups granulated sugar and continue whisking until mixture is light and fluffy.
  • Add cooled chocolate mixture, salt, vanilla and flour.
  • Keep whisking until thoroughly blended.
  • Pour batter into prepared pan and bake 25 minutes.
  • Remove from oven and leave brownies to cool in pan.
  • Make filling: Using an electric mixer on medium speed, beat the 1/2 cup butter and confectioners' sugar together until well blended.

  • Refrigerate until chocolate hardens.
  • To cut, allow brownies to come to room temperature in the pan so chocolate doesn't crack.
