1 tablespoon good olive oil
2 1/2 ounces pancetta, 1/4-inch-diced
1 large shallot, halved and sliced
1 (10-ounce) box frozen peas, such as Birds Eye Garden Peas
Kosher salt and freshly ground black pepper
1 tablespoon julienned fresh mint leaves

Steps:

  • Heat the olive oil in a medium (10-inch) saute pan, add the pancetta and shallot, and cook over medium heat for 5 to 7 minutes, stirring occasionally, until the pancetta is browned and the shallot is tender. Add the frozen peas, 1 teaspoon salt, and 1/4 teaspoon pepper and cook over medium-low heat for 4 to 5 minutes, until the peas are hot. Stir in the mint, taste for seasonings, and serve hot.

kosher salt
2 can(s) shelled fresh english peas or thawed frozen peas (about 10 ounces)
1 lb sugar snap peas, trimmed
1/4 lb snow peas, trimmed and thinly sliced
4 oz pancetta, chopped
2 Tbsp all-purpose flour
1 1/2 c low-sodium chicken broth
1/2 c heavy cream
juice of 1 lemon
freshly ground pepper

Steps:

  • 1. Bring a large pot of salted water to a boil over high heat. Fill a large bowl with ice water. If using fresh English peas, add to the boiling water and cook until tender, about 1 minute. Add the snap peas and cook until bright green, about 2 minutes, then add the snow peas and cook 30 seconds. Drain the peas and plunge into the ice water to cool.
  • 2. Cook the pancetta in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate with a slotted spoon. Add the flour to the drippings in the skillet and cook, whisking, until toasted, about 1 minute. Whisk in the chicken broth and cream and cook until reduced by one-third, about 6 minutes.
  • 3. Drain the peas, shaking off the excess water, then add to the skillet (if using frozen peas, add them here). Cook, stirring, until heated through, 3 to 5 minutes. Stir in the lemon juice and season with salt and pepper. Transfer to a serving bowl and top with the pancetta.

1/2 pound pancetta, cut into small dice
3 shallots, halved and thinly sliced
Pinch red pepper flakes
1 pound frozen peas, thawed

Steps:

  • Heat the oil in a large high sided saute pan over medium heat. Add the pancetta and cook until golden brown and the fat has rendered. Remove the pancetta to a plate lined with paper towels.
  • Add the shallots and red pepper flakes to the pan and cook until soft. Add the peas and cook until warmed through. Transfer to a large bowl and top with the crisp pancetta.

16 ounces fettuccine
8 ounces pancetta, diced
1/2 onion, chopped
1 (10-ounce) bag frozen peas
2 cloves garlic, minced
1/4 cup grated Parmesan
Salt and freshly ground black pepper
1/2 lemon, juiced

Steps:

  • Bring a large pot of salted water to a boil over medium heat. Add pasta and cook until al dente. Drain pasta, reserving 1 cup of pasta water.
  • Meanwhile, saute pancetta in a large saucepan over medium-high heat until golden and crisp, about 6 minutes. Transfer to a paper towel-lined plate. In the same pan, saute onions until softened, about 5 minutes. Add peas and garlic and saute for 3 minutes. Stir in Parmesan, pasta and pancetta. Moisten pasta with some of the reserved pasta water. Toss to incorporate, season with salt and pepper, if necessary, and serve, sprinkled with lemon juice.

Creamy Peas and Pancetta image

This is a very quick and tasty side dish to make that will go down well with the whole family. I love fresh peas just boiled in some water and served with a little butter and mint, but my son is not as keen, so I came up with this so he would eat them and enjoy them. You can make this with frozen or fresh peas just make sure you cook the peas first if fresh.

Number Of Ingredients 9

1 tablespoon butter
1/2 onion, finely chopped
3 garlic cloves, crushed
5 pancetta, rashers chopped finely
2 cups cream (I use a half fat cream, can use full fat or double cream)
1/2 cup parmesan cheese, grated
2 cups cooked fresh peas (can use frozen, you can add them straight into the cream without cooking.)
1 dash cayenne pepper
mint, sprinkle with some chopped fresh mint (optional)

Steps:

  • Melt butter in a pan, add onion, garlic and bacon, cook until onion is soft and bacon cooked.
  • In a saucepan add cream, bring to the boil, reduce heat and simmer, to reduce slightly, Approx 4-5 Min's.
  • Add onion garlic mix, cheese and peas, stir to heat through and melt cheese, approx 3-4 Min's. If using frozen peas cook a little longer.
  • Add cayenne and season with salt and pepper if desired, cook for a further minute or two, until nice and hot and thickened slighlty.
  • Serve sprinkled with fresh mint.

This comes from the April 2005 issue of Cooking Light. They recommend that you do not substitute bacon for the pancetta as the smoky flavor would overwhelm the peas. The unsmoked pancetta really balances the sweetness of the new peas. You can substitute frozen petite green peas for the fresh.

3/4 cup white onion, finely chopped
1 garlic clove, minced
3 cups shelled green peas
1 cup reduced-sodium fat-free chicken broth
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh parsley, chopped

Steps:

  • Heat a non-stick skillet over medium-high heat. Add the pancetta and saute for about 5 minutes or until the pancetta is crispy. Remove pancetta. Chop pancetta into pieces.
  • Add onion and garlic to the drippings in the skillet. Saute for 2-5 minutes until tender.
  • Add peas, broth, sugar, salt and pepper. Simmer, stirring occasionally, for about 5 minutes or until the peas are at the desired tenderness.
  • Stir in chopped parsley and pancetta. Stir and heat through.
  • Serve.

  • Add chopped pancetta to a large saute pan or skillet. Render the fat from the panetta over a medium heat. Stir with a wooden spoon. Cook until the pancetta is brown and crisp. Use a slotted spoon to remove the pancetta from the pan. Drain on paper towels. Reserve rendered fat.
  • Add the sliced shallot to the rendered fat. Reduce the heat to medium-low. Toss the shallots in the fat. Add 1/4 teaspoon salt and 1/2 teaspoon sugar. Continue to cook the shallots until they're soft and caramelized, about 7-8 minutes.

Bring to a boil and reduce to a simmer. Simmer until the half and half is slightly thickened, and peas are hot, about 4-5 minutes Add pancetta back to the peas, stir. Season to taste with salt and pepper.
