Southwestern Orzo Pasta Salad with Cilantro - Lime Dressing is a fun, colorful and super flavorful addition to your Southwestern or Mexican-inspired meal!

Salt
1 pound orzo pasta
2 tablespoons olive oil
2 cups cherry or grape tomatoes ((1 pint) halved)
2 cups corn kernels (from 3 cooked ears)
1/2 medium red onion (finely chopped (1/2 cup filled to heaping))
1 can (15-ounce) black beans (drained and rinsed)
1 bunch cilantro (with tender stems, coarsely chopped)
1 medium jalapeno pepper (coarsely chopped)
1/2 cup olive oil
1/2 cup lime juice
2 cloves garlic (coarsely chopped)
Salt and freshly ground black pepper (to taste)
Cilantro sprigs and lime wedges (for garnish)

Steps:

  • Bring a large saucepan of salted water to a boil.
  • Add the orzo and cook according to the package directions, being sure to not overcook.
  • Drain in a sieve or colander and immediately rinse with cold running tap water.
  • Drain again and toss with 1-2 tablespoons olive oil. Transfer to a large mixing bowl.
  • Add the tomatoes, corn, red onion and black beans and stir to combine.
  • Combine all the ingredients in a food processor or blender. Process until smooth.
  • Pour dressing over salad and stir well. Serve immediately garnished with cilantro sprigs and lime wedges.

1-1/2 cups uncooked orzo
1 can ((15-oz) sweet corn, drained and rinsed)
1 can ((15-oz) black beans, drained and rinsed)
1 pint cherry tomatoes (, halved)
2 avocados (, diced)
1/4- cup fresh parsley leaves
grated parmesan cheese (, optional)
1/2 cup fresh lemon juice
1/4 cup olive oil
salt and fresh ground pepper (, to taste)

Steps:

  • Cook Orzo according to the directions on the box.
  • Remove from heat; drain and rinse with cold water.
  • In a large salad bowl, combine cooled orzo, sweet corn, black beans, tomatoes, and avocado chunks; set aside.
  • In a separate mixing bowl, whisk together lemon juice, olive oil, salt and pepper.
  • Add as much dressing as you want to the prepared orzo salad. Refrigerate any remaining salad dressing.
  • Toss salad, cover, and refrigerate for 20 minutes.
  • Garnish with parsley and grated parmesan cheese.
  • Serve.

16 ounce package orzo
1 1/2 cups corn (fresh, frozen, or canned)
1 can (15 ounce) black beans, rinsed and drained
1 red bell pepper, diced small
1/2 cup green onions, thinly sliced ((about 3 green onions or scallions))
8 ounces sharp white cheddar, cut into small cubes
1 pkg (1 ounce) Ranch Salad Dressing and Seasoning Mix
1 cup buttermilk
1 cup mayonnaise ((I like the kind made with olive oil))
1 tablespoon taco seasoning
1/2 cup chopped fresh cilantro, opt.

Steps:

  • In a small bowl, mix together mayonnaise, buttermilk, ranch salad dressing mix, and taco seasoning. Place in fridge while you make the rest of the salad.
  • Cook orzo as directed on package. Drain and rinse with cold water. Drain well.
  • Meanwhile, cut corn off cob into a large bowl. Add black beans, bell pepper, green onions, orzo, and cheddar.
  • Pour dressing over salad and stir to combine. Serve immediately or store covered in the fridge until ready to serve.

3/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
1 pound orzo (rice-shaped pasta)
2 tablespoons olive oil
1 large shallot, finely chopped
1 garlic clove, minced
1 (14.5-ounce) can diced tomatoes, juices drained
1 1/4 cups whipping cream
1 cup frozen peas, thawed

Steps:

  • Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, heat the oil in a heavy large frying pan over medium heat. Add the shallot and garlic, and saute until tender, about 2 minutes. Add the tomatoes and cook until they are tender, about 8 minutes. Stir in the cream and peas. Add the orzo and toss to coat. Remove the skillet from the heat. Add the Parmesan to the pasta mixture and toss to coat. Stir the pasta mixture until the sauce coats the pasta thickly, adding enough reserved cooking liquid to maintain a creamy consistency. Season the orzo with salt and pepper, and serve.

In a separate mixing bowl, whisk together lemon juice, lime juice, olive oil, chili powder, cumin, salt and pepper. 6. Add as much dressing as you want to the prepared orzo salad. 3/4 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/2 cup chopped zucchini
1/2 cup chopped sweet red pepper
1/4 cup chopped onion
2 teaspoons canola oil
1-1/2 cups uncooked orzo pasta
1 can (15 ounces) black beans, rinsed and drained
1/2 cup frozen corn, thawed
1/2 cup salsa
1/4 cup ranch salad dressing
2 teaspoons chili powder
1/2 teaspoon minced garlic
1/2 cup shredded cheddar cheese
1 cup sour cream

Steps:

  • In a large skillet over medium heat, cook the chicken, zucchini, red pepper and onion in oil for 6-8 minutes or until meat is no longer pink, stirring occasionally. Meanwhile, cook the orzo according to package directions., Stir the beans, corn, salsa, salad dressing, chili powder and garlic into chicken mixture. Bring to a boil. Reduce heat; cover and simmer for 5 minutes, stirring occasionally. Stir in cheese until slightly melted. Remove from the heat; whisk in sour cream until smooth. Drain orzo; serve with chicken mixture.
