LEMONY SMOKED SALMON & SPINACH TAGLIATELLE

- Cook the pasta following pack instructions. Meanwhile, heat the oil in a large saucepan and cook the garlic for 1-2 mins until softened. Add the spinach and continue to cook until just wilted. Stir through the cream cheese, lemon zest juice and, and some black pepper.
- Drain the pasta but reserve a few spoonfuls of the cooking water. Add the salmon, basil and pasta to the sauce, along with the cooking water to loosen it a little. Toss together and season with more pepper, to taste, before serving.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
- Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
- Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

- Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 10 to 15 min or until al dente; drain.
- Meanwhile melt the butter in a large skillet and add onion, garlic, and red pepper flakes. Cook over medium heat until onions are translucent. Reduce heat to low and add in milks, cheeses, and basil and stir over low heat until smooth and creamy about 10 to 15 minutes. Add smoked salmon and spinach and toss until heated through. Add cooked pasta and tomatoes and toss to combine. Add a bit of starchy pasta water if needed to make the sauce a good consistency. Season with salt and pepper to taste.

Steps:
- Cook the pasta.
- Drain but do not rinse. Meanwhile, heat the butter in a large frying pan.
- Add the shallots and saute=E9 for about 5 minutes.
- Meanwhile, cut the salmon into thin bite-size pieces (I use thick bite sized pieces) and slice the green onions; set aside. Then, whisk the sour cream, Dijon and pepper into the sauted shallots.
- Remove from the heat and immediately stir into the drained cooked pasta.
- Add the salmon and green onions and toss.
- Serve hot or as a cold pasta salad.
- The flavour becomes fuller with a day's refrigeration.
- If it's not creamy enough after being chilled, simply stir in more sour cream.

Steps:
- Bring a large pot of lightly salted water to boil.
- Add pasta and cook for 8-10 minutes or until al dente; drain.
- Melt butter in a large non-stick skillet over medium heat.
- Stir in crushed red pepper, allow it to season the butter.
- Saute onion in butter until tender, about 8 minutes.
- Add garlic in the last 2 minutes.
- Then, stir in flour; gradually stir in milk; whisking all the while.
- Check for seasoning.
- Heat to just below boiling and then gradually stir in cheese until the sauce is smooth.
- Stir in peas and mushrooms; cook over low heat for 4 minutes.
- Toss in smoked salmon and cook for 2 more minutes.
- Serve over pasta, a salad of greens, French bread and a bottle of wine.

GREAT NORTHWEST SMOKED SALMON PASTA
A re-creation of a wonderful pasta dish I ate on Whidbey Island in Wash. State, this is fresh with tomatoes, mushrooms, and spinach.

Steps:
- Saute shallots and garlic in olive oil in a large skillet until soft.
- Add mushrooms and tomatoes, saute for another 2 mins.
- Add chicken broth and 3/4 of the spinach; gently simmer over low heat while pasta cooks.
- Cook pasta a little less time than according to pkg directions.
- Drain pasta and gently stir it into the sauce.
- Simmer gently until pasta absorbs some of the sauce, and is cooked to your preference.
- Crumble the salmon into chunks and gently stir it into the pasta.
- Add more chicken broth if needed and heat through.
- Serve on a bed of the reserved spinach and sprinkle with freshly ground pepper to taste.

- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente. Reserve 1 cup of the pasta water then drain the pasta and put it back into the pot. Place the spinach on top of the pasta.
- While the pasta cooks, begin making the sauce. Heat the oil in a large pan over medium-high heat. Add the onion and cook for 2 minutes, until it is transparent. Add the garlic and cook for 1 minute.
- Break the smoked salmon into pieces and add it to the pan along with the cherry tomatoes, artichoke hearts, sour cream, lemon juice, capers, chili flakes, and ½ cup of the pasta water. Bring the pan to a boil and stir until everything is creamy and mixed together. Season to taste with salt and pepper then mix in the dill.
- Pour the smoked salmon sauce into the pasta pot and mix everything together. If needed, add a splash more pasta water to loosen the pasta.
