Creamy Garlic Mushrooms image

These creamy garlic mushrooms come together in just 20 minutes and taste like a million bucks. A must make side dish that is sure to wow your guests!

2 tablespoons butter
1 tablespoon olive oil
8 cloves of garlic, minced
8 oz whole baby bella mushrooms
1/3 cup heavy cream
2 tablespoons cream cheese, softened
1/3 cup fresh grated parmesan cheese
1/4 teaspoon onion powder
3/4 teaspoon dried oregano
salt and pepper, to taste
fresh parsley, to garnish

Steps:

  • Rinse and clean the mushrooms and pat dry
  • melt butter and olive oil in a skillet over medium heat
  • Add mushrooms and cook until browned, around 5 - 7 minutes
  • Add garlic, cream, cream cheese, parmesan, onion powder, and oregano and cook for 5 - 10 minutes, until sauce is thick and creamy
  • Salt and pepper to taste
  • Garnish with fresh parsley and serve

For a more distinct flavor and color, opt for a bulb of black garlic in place of the roasted garlic.

Number Of Ingredients 12

1 tablespoon olive oil
3 tablespoon thinly sliced shallot
6 cup sliced fresh cremini mushrooms (16 oz.)
0.667 cup dry white wine
0.667 cup reduced-sodium chicken broth
2 sprigs fresh thyme
6 ounce dried whole wheat linguine
1 bulb black garlic or roasted garlic
3 tablespoon heavy cream
0.5 teaspoon kosher salt
0.25 teaspoon freshly cracked black pepper
3 tablespoon shaved Parmesan cheese

Steps:

  • For sauce, in a 12-inch skillet heat oil over medium-high. Add shallot; cook and stir 3 minutes or until starting to soften. Add mushrooms; cook 5 minutes or until tender, stirring occasionally. Stir in wine, broth, and thyme. Bring to boiling; reduce heat. Simmer, uncovered, 7 to 10 minutes or until sauce is reduced by one-third.
  • Meanwhile, cook pasta according to package directions; drain.
  • Squeeze garlic from paper husks into a small bowl and coarsely mash with a fork. Stir garlic, cream, salt, and pepper into sauce. Simmer, uncovered, 5 minutes more or until slightly thickened. Remove and discard thyme sprigs.
  • Add cooked pasta to sauce in skillet; toss to coat. Sprinkle servings with cheese.

8 medium russet or Yukon gold potatoes (about 3 lb), peeled, cut into quarters
4 large cloves garlic, peeled
1/3 cup fat-free (skim) milk, heated
1 teaspoon salt
1/8 teaspoon pepper
1/4 cup reduced-fat sour cream

Steps:

  • In 3-quart saucepan, place potatoes and garlic; add enough water (salted if desired) to cover. Heat to boiling. Reduce heat to medium-low; cover loosely and boil gently 15 to 20 minutes or until potatoes are tender. Drain; shake pan with potatoes over low heat to dry.
  • Mash potatoes and garlic until no lumps remain. Add milk in small amounts, beating after each addition (amount of milk needed to make potatoes smooth and fluffy depends on type of potato used).
  • Add remaining ingredients. Mash vigorously until potatoes are light and fluffy.

Earthy mushrooms made savory with roasted garlic and a beautiful richness from sherry, butter and cream cheese.

2 tablespoons olive oil
1 lb button mushroom, whipped clean and cut into 1/4
1 tablespoon cream cheese
1 teaspoon butter
1 bulb garlic, roasted and removed from skins and mashed with fork
1 teaspoon fresh thyme leave, chopped
1/4 teaspoon lemon zest
1/2 cup dry sherry

Steps:

  • In a large heavy skillet, heat the oil over high heat.
  • Add the mushroom quarters.
  • Do not move the mushrooms until they have caramelized. When the bottoms are browned, stir them and continue to cook for about 5 minutes.
  • Add cream cheese and butter and cook and toss for 5 minutes, until nicly coated.
  • Add the rest of ingredients stir for 2 minutes cooking till mushrooms are coated.
  • Garnish with fresh thyme leaves.
