- Preheat oven to 375°. In a large bowl, combine all ingredients. Transfer to a greased 13x9-in. baking dish., Cover and bake 30 minutes. Uncover and stir; bake until bubbly and rice and vegetables are tender, 20-25 minutes.

CREAMY CHICKEN AND MUSHROOMS WITH RICE

Steps:
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove to a bowl and set aside.
- Reduce heat to medium and add onions. Cook, stirring, until softened and translucent, about 5 minutes. Add mushrooms and continue cooking until mushrooms are cooked. Add chicken back in along with garlic. Cook for 1 minute or until fragrant.
- Reduce heat to medium-low and add cream cheese, cheddar cheese, and milk. Continue to cook until cheese has melted and a creamy sauce has formed. Add more milk if desired to thin sauce.
- Serve over cooked brown rice, and garnish with fresh parsley.

MAMAW'S CHICKEN AND RICE CASSEROLE
I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

- Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
- Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.
- Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.

CREAMY MUSHROOM CHICKEN N RICE
An old recipe from my mother-in-law, really good

Steps:
- 1. Place cut up chicken in a oven proof baking pan
- 2. Spoon cream of mushroom soup over top of chicken pieces. It doesn't have to be neat it spreads out with the heat of the oven.
- 3. Sprinkle with black pepper. I add just a tiny bit of salt because the soup has salt in it.
- 4. Cover with foil and bake 350 degrees for 35-40 minutes.
- 5. Uncover the chicken and bake another 15 minutes. Serve chicken and gravy over rice that was prepared while baking chicken.
- 6. Note: The chicken juices mix with the soup during cooking and makes a great gravy. I have used a third can of cream of chicken soup to have more gravy. Use mashed potatoes instead of rice if desired.
