Creamy Lemon Herb Orzo image

Orzo pasta is combined with garlic, butter, cream, herbs and parmesan cheese in this simple but delicious side dish that goes with almost any meal.

1 cup orzo pasta
1/4 cup butter
1 clove garlic, minced
1 tablespoon lemon juice
1 teaspoon lemon zest
4-6 tablespoons heavy cream
2 tablespoons minced fresh herbs
1/4 cup grated Parmesan cheese
Salt and pepper, to taste

Steps:

  • Cook orzo according to package directions until just al dente, about 7 minutes; drain.
  • In a large skillet over medium heat, melt the butter. Add the garlic and cook until tender, about 2 minutes.
  • Stir in the cooked orzo, lemon juice, lemon zest and 4 tablespoons of cream. Add the additional 2 tablespoons cream if desired.
  • Remove from heat and stir in fresh herbs and Parmesan cheese. Season with salt and pepper to taste. Serve warm.

  • Cook 2 cups sliced Tuscan kale in olive oil in a nonstick skillet over medium-high heat, 2 minutes. Add 2 sliced garlic cloves and cook 1 minute; season with salt and pepper. Add 2 cups vegetable broth and 1/2 cup heavy cream; bring to a simmer. Stir in 1 cup orzo and cook 9 minutes. Stir in 3 ounces baby spinach. Turn off the heat; stir in 3/4 cup grated Parmesan and 1 tablespoon each lemon zest and juice. Season with salt and pepper. Drizzle with olive oil.
