This soup is so delicious that I was making it twice a week and eating everyday for lunch! I'm posting it with the alterations I made. 1 large carrot - peeled and diced
2 ribs of celery - diced
1 small onion - chopped
3 c water
2 medium potatoes - peeled and diced
1/2 tsp chicken bullion
8 oz low fat smoked kielbasa - chopped***
1/2 pkg refrigerated sauerkraut - drained and rinsed
1 1/2 c fat free sour cream
1 pinch each of salt and pepper
***note - if you can't find smoked kielbasa, use regular and add 1 tsp. of liquid smoke to the soup

Steps:

  • 1. In a small amount of butter, saute carrot, celery, onion, and a dash of salt until vegetables are softened.
  • 2. Add water, potatoes and chicken bouillon. Boil until potatoes are just about tender; 5 - 7 min.
  • 3. Add smoked kielbasa and sauerkraut. Bring to a boil; reduce heat to medium low, and simmer about 5 min. or until potatoes are tender.
  • 4. Remove about 1 c. of cooking liquid from soup along with about 1/2 cup of the potato chunks. Mash the potato chunks and stir together with sour cream in a small bowl; add back the liquid with the potato mash to the soup, along with the sour cream. Heat through. Taste for seasoning. Add salt and pepper if needed.
  • 5. Serve warm!

A hearty and quick meal or side dish. If you desire a thicker soup (I do), add a milk and flour mixture, and let simmer until desired thickness. Enjoy!

4 potatoes, cubed
1 onion, chopped
1 stalk celery, cut into 1/2 inch pieces
1 (14 ounce) can beef broth
1 (14.5 ounce) can chicken broth
1 cup water
¾ pound kielbasa sausage, sliced into 1/2 inch pieces
1 (10.75 ounce) can condensed cream of chicken soup
ground black pepper to taste

Steps:

  • In a large pot over medium heat, combine potatoes, onion, celery, beef broth, chicken broth, and water. Bring to a boil, then reduce heat and simmer until potatoes are tender, 15 minutes. Stir in sausage and condensed soup and continue to simmer until heated though and slightly thickened. Season with pepper. Serve hot.
