Oh my, it's like pot pie! A tender biscuit layer tops a creamy filling of a tasty ham and asparagus duo.

- Heat oven to 400°F. Heat asparagus, ham, milk, soup and 3/4 cup of the cheese to boiling in 3-quart saucepan, stirring constantly. Boil and stir 1 minute. Spread in ungreased 2-quart casserole.
- Stir Bisquick mix, milk and remaining 1/4 cup cheese in small bowl until blended. Pour evenly over ham mixture.
- Bake uncovered about 30 minutes or until golden brown and toothpick inserted in biscuit layer comes out clean.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender; drain well. , In a greased 2-1/2-qt. baking dish, combine the asparagus, ham, rice, celery and lemon-pepper; set aside. In a large saucepan, combine soup and broth; add cheese. Cook and stir over medium heat until cheese is melted. Pour over ham mixture. , Combine crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 35 minutes or until heated through.

CREAMY HAM AND ASPARAGUS SOUP
A great dish for using up that leftover ham. This comes from TOH Country Soups and Stews 1999 by Maurine Kent of Texas. I have adapted slightly by adding swiss cheese and dill which I have shown as optional ingredients. This is really good soup, you will enjoy it.

Steps:
- Place asparagus in a saucepan with enough water to cover and cook until crisp-tender.
- Drain and set aside.
- In a heavy saucepan, saute carrot in butter for 3 - 5 minutes.
- Add onions and saute 2 minutes longer or til tender.
- Stir in flour and gradually add milk whisking until smooth.
- Bring to a boil and stir for 2 minutes.
- Add broth, ham, mushrooms and reserved asparagus.
- Reduce heat and add cream.
- Heat through but do not boil.
- Salt and pepper to taste.
- Add Swiss Cheese and dill if using.
- Garnish with Parmesan and parsley.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Stir asparagus into pot in the last five minutes of cooking; drain.
- While pasta is cooking, heat butter and cream in a medium saucepan over medium heat. When mixture begins to bubble, stir in Parmesan, garlic powder, pepper and cayenne. Continue cooking until mixture thickens, stirring occasionally. Stir in ham and heat through.

- In a large saucepan, combine asparagus, chopped onion, and 1/2 cup chicken broth. Cover, and bring to a boil over high heat. Reduce heat, and simmer uncovered until asparagus is tender, about 12 minutes. Process the mixture in a blender to puree the vegetables. Set aside.
- In the same saucepan, melt the butter over medium-low heat. Stir in the flour, salt, and pepper. Cook, stirring constantly for 2 minutes. Whisk in the remaining chicken broth, and increase the heat to medium. Cook, stirring constantly until the mixture boils. Stir in the asparagus puree and the milk.
- Put the sour cream in a small bowl, and stir in a ladleful of the hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don't allow it to boil. Serve immediately.

- In stock pot over medium heat to start, add butter and melt, then add onion, carrots and celery, and sauté until the veggies are softened and the onions are translucent. (*Lower heat to medium-low about halfway through, then to low during last 5 minutes for best results. Cooking time is about 20 minutes.They will still be crisp-tender and cook further later.) Add the garlic, and cook one minute longer. Stir in the flour to coat, raise heat to medium-low, and sauté 2 minutes longer, stirring and folding to cook out the raw flour taste.
- Slowly stir in the chicken broth and milk, then add the chicken bouillon base, thyme, pepper, salt, bay leaf and potatoes. Bring to a simmer over medium heat, lower heat to medium-low, and cook for at least 20 minutes, gently simmering, until the mixture has thickened and veggies are tender through. *Stir frequently, scraping bottom of pot.
- Add the cut-up cream cheese and white American cheese, and stir after each addition, until cheeses have fully melted and the broth is creamy.
- Stir in heavy cream, ham, and parmesan. Cook over low just until heated through. Set aside to rest partially covered with lid tilted and cook asparagus until desired tenderness by steaming or roasting. (*I steam mine for 6 - 7 minutes depending on the thickness of the asparagus.)

- In a good size soup pot, over medium heat, gently sweat the onion, garlic and two whole slices of bacon, with a splash of olive oil. While that is gently cooking, cut the bottom inch off the asparagus stems and discard. Reserve eight asparagus stems for garnish. Cut the remaining stems into 2.5 centimeter-length pieces and add to the onions, garlic and bacon. Gently cook for three to four minutes, turning up the heat as needed. Season with a little salt and pepper, and add three cups of the chicken broth. Bring to a gentle simmer and cook for approximately 12-18 minutes, until the asparagus is fully cooked, soft and tender.
- In the meantime, the reserved eight stems of asparagus can be sliced on the bias in 2.5 centimeter lengths and quickly blanched by plunging them into boiling water for 30 seconds and the removing & chilling under cold water immediately. Add to a large bowl. Dice the cooked ham into small cubes, and add to the bowl of asparagus. Season with a little bit of oil and salt & pepper to taste. Place off to the side.
- From the pot of cooked asparagus, lift out and remove the bacon – its job is done. Carefully blend the remaining cooked asparagus mixture in a blender, a little at a time – no accidents, please! Each batch of blended asparagus should be smooth and lump-free. Pour the blended mixture into a clean pot, adding the batches as you go. Taste and adjust the seasoning. Bring to a gentle simmer and stir in the 35% cream. If needed, you can add a little more chicken stock to adjust the consistency.
- To serve, ladle the soup into serving bowls. Add one teaspoon of plain yogurt in the center and on top, add a sprinkling of the diced ham and asparagus mix. Serve hot.
