HOMEMADE COLESLAW
A quick and easy creamy coleslaw with plenty of crunch - just like those luxury supermarket versions. Made at home in 5 minutes.

Steps:
- Julienne the white cabbage and the 2 carrots using a mandoline, so you have fine, even, strips. Place in a large bowl.
- Carefully grate (shred) the quarter of an onion using a grater and add the onion to the bowl.
- Add the cup (240g) of mayonnaise, 3 tbsp sour cream, 1 tbsp white wine vinegar, 1/2 tsp salt, 2 tsp sugar, 1/8 tsp mustard powder and the pinch of white pepper.
- Stir everything together until thoroughly combined.
- Serve immediately, or cover and refrigerate until needed (up to 2-3 days).

LONG BEACH COLESLAW

Steps:
- In a large skillet over medium-high heat, combine the olive oil, red onion and garlic and cook 2 minutes (do not brown). Add the cabbage, 1 teaspoon salt, 1 tablespoon pepper and the vinegar and mix thoroughly; cook 3 to 5 minutes, until the cabbage is tender. Transfer to a bowl and let cool to room temperature, then refrigerate 30 minutes.
- In a large salad bowl, toss the lettuce with the blue cheese dressing. Drain the cabbage and lightly mix with the iceberg and dressing. Add more pepper to taste. Serve immediately.
GREEN APPLE SLAW WITH PECANS
Steps:
- In a large bowl combine the yogurt, mayo, vinegar, honey, lemon juice, red pepper flakes and some salt and pepper. Mix well to combine. Add the apples, green and red cabbages, carrots and onions. Mix together well and place in the refrigerator to allow flavors to come together and the cabbage soften slightly, 10 to 15 minutes.
- Serve topped with the toasted pecans.
EASY CREAMY COLESLAW

Steps:
- Put the cabbage, carrots, spring onions and sultanas in a large bowl and stir to combine.
- Mix the mayonnaise with the mustard in another small bowl and drizzle over the veg. Fold everything together to coat in the creamy sauce, then season to taste.
