Homemade Chocolate-Hazelnut Spread image

Making your own chocolate-hazelnut spread is easy and lets you use ingredients that are tastier and healthier than the original.

¼ cup white sugar
¼ cup raw sugar
¾ cup toasted hazelnuts
4 ounces 70% dark chocolate, chopped
¼ cup powdered milk
¼ cup light vegetable oil

Steps:

  • Combine white sugar and raw sugar in a food processor or blender; process until pulverized. You may have to do this in batches to not burn the motor.
  • Add hazelnuts to the sugar mixture in the food processor, and continue blending until a smooth cream forms. Add powdered milk and blend to combine. Add oil and blend again.
  • Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes total. Add to the cream in the food processor, and blend until everything is well combined. Pour into a glass jar and allow to cool before sealing and refrigerating.

1 cup skinless raw hazelnuts
¼ cup unsweetened cocoa powder
3 Tbsp coconut oil (melted)
⅓ cup maple syrup
⅓ cup coconut cream
½ tsp vanilla ((or hazelnut extract))
⅛ tsp sea salt

Steps:

  • Preheat oven to 400°F.
  • Place hazelnuts on a baking sheet and toast in oven until coloured and aromatic, about 7 to 10 minutes. Set aside to cool.
  • Transfer cooled hazelnuts to food processor and process until nut butter starts to form, stopping to scrape down the sides often.
  • Add cocoa powder and coconut oil and continue processing, drizzling maple syrup in a little at a time. Process until fairly smooth. Add coconut cream, vanilla and salt and blend until smooth and creamy.

A dollop of chocolate hazelnut spread here, a splash of nut liqueur there - this boozy hot chocolate with whipped cream is a glass of pure indulgence

50ml double cream
1 tsp chocolate hazelnut spread (we used Nutella)
150ml whole milk
25g milk chocolate , chopped
25ml hazelnut liqueur (we used Frangelico)
1 tsp chopped hazelnuts , toasted

Steps:

  • Whip the cream until thick and billowy then fold in the chocolate hazelnut spread. Only stir once or twice, you want a marbled effect.
  • In a small saucepan over a medium heat warm the milk until simmering. Take off the heat then add the chocolate. Let it melt, stirring frequently until smooth. Return to the heat until warm then add the hazelnut liqueur.
  • Pour the hot chocolate into a mug and add the whipped cream mixture. Sprinkle the top with the toasted hazelnuts and enjoy.

  • After 30 minutes, drain the hazelnuts and dates and add them to a high-speed blender along with the filtered water. Blend until creamy and smooth. Keep the blender running for at least 1-2 minutes so you get the most out of your hazelnuts.
  • Strain using a nut milk bag or our favorite trick — a thin dish towel. Simply lay a clean dish towel over a mixing bowl, pour over the hazelnut milk, carefully gather the corners, and lift up. Then squeeze until all of the liquid is extracted. Discard pulp, or save for adding to baked goods. Find more inspiration for the pulp here.
  • Rinse the blender and pour the strained hazelnut milk back into it. Add the salt, maple syrup (starting with the lesser amount), vanilla (optional), and cocoa powder (or cacao powder). Blend until well combined — about 1 minute. Taste and adjust if desired, adding more maple syrup for sweetness or cocoa powder for chocolaty goodness.

  • Preheat your oven to 350°. Place the hazelnuts on a baking sheet and roast for 13-15 minutes, until golden brown. Transfer the nuts to a clean, lint free kitchen towel and cover with the edges to steam and loosen the skins.
  • Once cool enough to handle, hold the towel with the nuts forming a pouch. Using the palm of your other hand, firmly and quickly rub the hazelnuts forcing the skins off. Do this for 30-60 seconds until most of the skins have been removed. Separate the hazelnuts from the skins, placing them in a blender or food processor. Discard the skins.
  • Blend the hazelnuts on low speed for 8-10 minutes until it turns into nut butter. You will likely need to scrape the sides of the container down a few times. You will notice it first becomes a paste before you eventually notice the oil releasing from the hazelnuts and it becomes a creamy nut butter.
  • While the nuts are blending, melt the chocolate in a double boiler. Stir in the maple syrup, vanilla, and espresso powder until combined. Once the nuts are blended pour the chocolate into the blender with a pinch of salt, and blend until combined.
