CREAMY BACON PASTA BAKE
Creamy bacon sauce makes this pasta bake a delicious, comforting dinner. This is the perfect recipe to make-ahead and feed a crowd.

Steps:
- Preheat the oven to 180°C/350°F.
- In a large, oven-proof pan, fry the bacon until it starts to crisp. Remove from the pan and set aside. Drain off the bacon fat and reserve for cooking with.
- In the same pan, melt the butter and add the onion. Allow to cook until soft.
- Add the garlic and sage and cook for a minute before adding the flour.
- Stir the flour into the butter then whisk in the milk and cream. Reduce the heat and allow to simmer for 5-7 minutes until the sauce is thick and creamy. Remove from the heat then stir in the bacon, Parmesan and half of the grated cheese. Season to taste.
- Add the cooked pasta and some of the pasta cooking water. Stir to coat the pasta in the sauce. At this stage, the sauce should look quite thin. The pasta will absorb more sauce as it cooks so if it looks too dry at this stage, add more pasta cooking water.
- Top with the remaining cheese and more sage leaves if desired then place in the oven.
- Allow to bake for 15-20 minutes until the cheese is golden brown.
- Remove from the oven, allow to cool for 10 minutes then serve.

CREAMY CANADIAN BACON PASTA
One of my favorite, quick pasta dishes. This dish can also be made with precooked chicken pieces instead of Canadian Bacon, my husband prefers it that way, I like the bacon. You may need to add more liquid to your sauce, you will have to make that decision as you cook the sauce, so have extra cream and wine on hand....

- 1. Bacon and onion In a large skillet, add olive oil, heat oil, add chopped bacon, heat for several minutes, then add chopped onion, cook until onion is soft, add butter and flour, cook for several minutes to make sure flour taste is cooked out.
- 2. Sauce Add wine, or broth to skillet, then slowly add cream, stirring for several minutes. Then add Dijon mustard, nutmeg, salt and pepper. Cook for a few minutes, then add cheese, once cheese is melted into sauce add cooked pasta. Stir all ingredients together for a few minutes. Then serve.
- 3. Serve Place into a bowl and top with fresh parmesan cheese.

- 1.Cook pasta according to package directions. Drain in a colander, reserving 1/2 cup pasta water. 2.Return hot, empty pan to low heat. Add butter to the pan and allow to melt. Add onion and garlic and cook, stirring frequently, until onion is tender. Add Canadian bacon and cook, stirring frequently, until Canadian bacon is lightly browned. Season with salt and pepper. Stir in cooked pasta. 3.Whisk together milk and egg yolks. Add milk-egg mixture to pasta and cook, stirring frequently, over low heat 1 minute. Stir in reserved pasta water and shredded Parmesan cheese. Cook, stirring frequently, for 1 to 2 minutes or until hot and cheese has melted. 4.Option: Add 1 cup frozen broccoli florets or 1/2 cup frozen peas to pasta water during the last 3 minutes of cooking. Proceed as recipe directs.

- Cook linguine according to package directions. Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. , In a small bowl, whisk flour and cream until smooth; stir into the pan. Bring to a boil, stirring constantly. Reduce heat; cook and stir for 1 minute or until thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer., Drain linguine; add to the pan. Stir in bacon and cheese; heat through.

- Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
- While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl, and stir in the olive oil to coat the pasta.
- Drain the bacon grease from the skillet, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta, and sprinkle the Parmesan cheese over the pasta. Stir to mix in the cheese, and serve.
