Creamless cream of asparagus soup is healthy, delicious, smooth, creamy, quick and easy to make. A perfect spring soup for a last minute lunch or dinner.

- In a large stockpot, melt butter over medium-high heat. Sauté the onions, garlic and celery until the onions are soft and translucent. Add the potatoes and asparagus and stir well to combine.
- Add the chicken (or vegetable) stock, and bring to a simmer. Turn the heat down to low and continue to simmer for about 15 minutes, covered, until the vegetables have become soft.
- Use an immersion blender to puree the soup. Alternatively, you can transfer the soup to a standing blender and puree in batches, then pour it back into the pot.
- Add the lemon juice and black pepper and stir to mix. Continue to cook on low for a couple of minutes, stirring occasionally.
- Serve hot with coconut cream, microgreens and/or asparagus tips on top.

- Add the butter to a large saucepan over medium heat to melt. Once foaming and melted, add the shallots and garlic and saute until tender, about 5 minutes. Add the red pepper flakes, cook until fragrant, and sprinkle with salt and pepper. Stir in the flour and cook until blonde and pasty. Gradually pour in the chicken broth while stirring. Bring the mixture to a boil, and then reduce to a simmer. Add the asparagus and simmer until it's nice and tender, about 15 minutes. Stir in the half-and-half. Remove from the heat and use a stick blender to puree the soup until smooth. Season with salt and pepper.
ASPARAGUS SOUP
Velvety asparagus soup, lovely green color, great with crunchy rolls. My friend gave me this recipe, it originally used chicken broth. When my daughter became vegetarian, I modified it with vegetable broth instead! It also doubles easily. This soup will tempt even asparagus haters!

- Microwave onion and butter on HIGH for 2 minutes. Add asparagus, vegetable broth, garlic powder and white pepper. Microwave, covered, on HIGH for 10 to 12 minutes. Puree in blender.

Spring means fresh asparagus, and what better way to celebrate than with this flavorful, pretty soup? It's creamy without any cream, and incorporates lots of veggies. Using margarine will keep it completely dairy free. It's best fresh, so I normally cut the recipe in half. From The Daily Soup cookbook.

Steps:
- In soup pot, melt butter or margarine over medium heat; add onion, celery& carrots and cook until tender (4-5 minutes.) Add salt, thyme, bay leaves, mustard seeds and pepper, stirring to coat the veggies.
- Add stock, potato, and sliced asparagus; bring to a boil.
- Reduce heat& partially cover, then simmer for 30 minutes.
- Remove the bay leaves, puree half the soup in a blender or processor, and return to the pot- or use a stick blender right in the pot.
- Add the reserved asparagus tips and simmer 4-5 minutes.
- Remove from heat and stir in the garlic.
- Garnish each serving with the chopped fresh dill.

- In a Dutch oven, heat oil over medium heat. Add onions, celery and carrots; cook and stir until onion is tender, 6-8 minutes. Stir in butternut squash, sweet potato and summer squash. Cook and stir until squash and potato are lightly browned, 5-7 minutes. Add garlic; cook 1 minute longer., Add broth, savory and pepper; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, 20-25 minutes., Puree soup using an immersion blender, or cool slightly and, in batches, puree in a blender and return to pan; heat through. If desired, serve with cheese. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. I found this recipe in my Immersion Blender manual. It is a great first course. Listed to serve ten if only half cup servings are used, as would be for a first course. If using as a main course adjust servings appropriately.

- Melt butter in a 4-quart saucepan over medium low heat.
- Add shallots and crushed garlic and saute over medium low heat for about 5 minutes. Do not allow to brown.
- When shallots are soft, add asparagus, reserving the tips for garnish, and potato to saucepan and cook for about 6 minutes, until the asparagus is bright in color.
- Add wine. Raise the heat to bring the wine to a boil. Reduce the wine until a scant tablespoon remains.
- Add chicken stock. Bring to a boil and then reduce heat to low.
- Simmer for about 20 minutes until the vegetables are soft.
- While simmering, blanch asparagus tips and dry.
- Use immersion blender, or transfer to blender/food processor and blend 30 to 45 seconds.
- Return to pot if necessary.
- Add salt, pepper and basil.
- Stir in cream.
- Serve soup hot, garnished with reserved asparagus tips.

- Cut off the tough bottom ends of the asparagus and discard.
- Cut off the tips of the asparagus and set into a bowl; set aside a few of them for garnishing later.
- Chop the stalks of the asparagus into small, bite sized pieces and add to the bowl of asparagus tips.
- Place butter in a heavy, deep round microwaveable dish (such as a white Corningware casserole) and let it melt on HIGH for approximately 1 minute, or until melted.
- Add the onion and aspargus tips& spears to the butter, cover, and cook on HIGH for about 4-5 minutes.
- Stir in the flour, mixing well.
- Next, pour in the broth and add the chives, stir, recover, and cook on HIGH for 10 minutes, stirring 3 times during this process.
- Asparagus should be very tender- if not, return for 2 more minutes, stir, test again, repeat if needed.
- Remove from microwave (wear oven mits) and puree using a wand blender (or use your regular blender).
- Add cream, lemon juice, and seasonings to taste.
- Get the asparagus tips you set aside for the garnish and put them into the microwave, in a microwave safe dish, for just about 2 minutes or so- just enough to blanch them so they aren't so raw tasting.
- Ladle soup into individual bowls and garnish with an asparagus tip before serving.
- NOTE: Since microwaves vary greatly, there may be some variations in the cooking times depending upon your microwave.

- In a large saucepan, combine asparagus, chopped onion, and 1/2 cup chicken broth. Cover, and bring to a boil over high heat. Reduce heat, and simmer uncovered until asparagus is tender, about 12 minutes. Process the mixture in a blender to puree the vegetables. Set aside.
- In the same saucepan, melt the butter over medium-low heat. Stir in the flour, salt, and pepper. Cook, stirring constantly for 2 minutes. Whisk in the remaining chicken broth, and increase the heat to medium. Cook, stirring constantly until the mixture boils. Stir in the asparagus puree and the milk.
- Put the sour cream in a small bowl, and stir in a ladleful of the hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don't allow it to boil. Serve immediately.

- Cut the tips off of 12 asparagus (1 1/2") and set aside.
- Discard cut bottom ends of asparagus. Cut asparagus stalks into 1" pieces.
- Cook onion and asparagus in oil in large fry pan over medium heat, stirring often till softened (I cover the pan).
- Pour this into large sauce pan.
- Add broth and simmer on low medium about 15-20 minutes.
- While soup simmers, cook reserved asparagus tips in boiling salted water until just tender (3-4 minutes).
- and drain.
- Puree soup in a blender (or hand blender) until smooth.
- Ladle into bowls and season with salt and pepper.

VEGAN CREAMLESS CREAMY ASPARAGUS SOUP
I got the original recipe for this on worldsoups.com but I changed around some of the amounts of the ingredients. There would have been scraps if I hadn't and I don't like wasting any bit of food. For the measurements, you can translate "2 lbs" of asparagus to "2 of those bundles you get at the grocery store." And for the cauliflower, just use the whole head, however much that gives you.

- (Before cutting the asparagus, be sure to snap off the ends. The asparagus will naturally break at it's "fresh" point. Discard the stumps).
- In a pot, bring the water to a boil.
- Heat the olive oil in another pot over medium heat. Add the garlic, onions and dill seeds. Sauté for 5 minutes or until the onions begin to soften and the ingredients become fragrant.
- Add the celery, cauliflower, salt and pepper. Sauté for another 5 minutes, until cauliflower begins to soften.
- Add the asparagus, basil, thyme and water and bring to a boil. Turn the heat down to a simmer and cook for 10 minutes, or until the asparagus and cauliflower are fork-tender.
- Turn the heat off and blend the soup in batches, pouring into another pot over low heat, or use an immersion blender until the soup is creamy.
- Season with more salt and pepper to taste and serve with some warm artisan bread.
