Easy and yummy! Veggies, beans, and cheese sandwiched in tortillas. You could add or substitute any vegetables that you'd like. Serve with sour cream and rice.

1 tablespoon vegetable oil
1 onion, finely diced
2 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 green bell pepper, chopped
2 tomatoes, chopped
½ (10 ounce) package frozen corn
12 (12 inch) flour tortillas
1 cup shredded Cheddar cheese
¼ cup vegetable oil

Steps:

  • Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn; cook until heated through.
  • Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas.
  • Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once, until cheese is melted and both sides are lightly browned.

This is a kid pleaser recipe, especially served with ranch dressing for dipping. We often eat these for lunch along with chips and salsa. For a lower fat version, just microwave them instead of frying. They just lack the buttery crispy edges, but my kids still like them.

8 12 inch tortillas
1 (16 ounce) can refried beans (Rosarita)
6 ounces monterey jack cheese
6 ounces cheddar cheese, shredded and mixed together
4 tablespoons oil
4 tablespoons butter

Steps:

  • Divide each ingredient into four portions Spread 1/4 beans over tortilla, add 1/4 cheese, top with second tortilla, In large skillet, heat together 1tbs oil and 1 tbs butter over med heat.
  • place assembled quesadilla into pan.
  • Cook till bottom is browned then turn over and brown other side.
  • Place on large plate and cool 1-2 min.
  • cut into eight wedges with scissors.
  • repeat three more times.
  • Serve immediately.

1 medium white flour tortillas or 1 medium wheat flour tortilla
2 teaspoons cream cheese
2 ounces cheddar cheese, cut into thin strips
2 -3 tablespoons canned black beans
1 tablespoon diced onion, optional
1/2 teaspoon unsalted butter, melted
sour cream, optional
salsa, optional

Steps:

  • Spread cream cheese on one side of the tortilla, completely covering it.
  • Top the cream cheese with the black beans and onion.
  • Top the beans with the cheddar and fold over.
  • Heat skillet to medium.
  • Brush one side of folded tortilla with melted butter.
  • Put the quesadilla butter side down in skillet.
  • While that side is cooking, brush butter on the other side.
  • When lightly browned, flip.
  • When both sides are lightly browned, remove from skillet and serve with sour cream and salsa, if desired.

Season ground pork with the flavors of chorizo sausage and tuck it into a bean-and-cheese quesadilla.

1 tablespoon lard
1/4 cup minced onion
3 cloves garlic, minced
1/2 pound ground pork
1 teaspoon ancho chile powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon dried oregano
Pinch ground cinnamon
Pinch ground cloves
Kosher salt
Four 10-inch (burrito size) flour tortillas
2 cups shredded Cheddar
1 cup refried beans
1 jalapeno, chopped (seeds removed for less heat)
2 tablespoons unsalted butter
Guacamole, salsa, chopped scallions and sour cream, for serving

Steps:

  • Heat the lard in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until soft, about 5 minutes. Add the ground pork, ancho powder, cumin, paprika, oregano, cinnamon, clove and 1/2 teaspoon salt and cook, stirring and breaking up the meat, until brown, about 4 minutes. Add 1/2 cup water, bring to a simmer and cook for 5 minutes. Transfer to a medium bowl.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup Cheddar. Add 1/4 of the chorizo, 1/4 of the beans and some jalapeno. Fold the tortilla in half to enclose fillings. Repeat with remaining tortillas and ingredients.
  • Melt 1/2 tablespoon butter in a large non-stick or cast-iron skillet over medium heat. Cook the quesadilla, flipping once, until the cheese is melted and it is golden brown on both sides, about 3 minutes per side. Remove to a cutting board and repeat with the remaining quesadillas.
  • Cut into triangles and serve with guacamole, salsa, chopped scallions and sour cream.

About 5 tablespoons unsalted butter
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 (15 1/2-ounce) can pinto beans, drained
1/2 teaspoon kosher salt, plus more, to taste
16 corn tortillas, preferably white
1 1/2 cups Cheddar (about 3 ounces)
1 ripe Hass avocado
1 ripe tomato, cored and diced
Freshly ground black pepper
1/4 cup sour cream, optional

Steps:

  • Melt 1 tablespoon of the butter in a large skillet, over medium-high heat, with the cumin, coriander, and toast the spices until fragrant, about 30 seconds. Add the beans and mash with a potato masher into a thick paste. Mix in 1/2 teaspoon salt and transfer to a bowl. Rinse and dry the skillet.
  • Lay out half the tortillas on a work surface. Spoon and spread the beans evenly onto the tortillas. Scatter the cheese evenly over the beans, and top with the remaining tortillas.
  • Halve, seed and dice the avocado. Toss with the tomato and season with salt and pepper, to taste.
  • Melt about 1/2 tablespoon of the butter over medium heat in the skillet. Cook the quesadillas one at a time, until golden and the cheese melts, about 1 1/2 to 2 minutes per side. (Add a bit more butter, if needed when they are turned.) Transfer to a cutting board and cool briefly before cutting into wedges. Serve warm with the avocado mixture and the sour cream, if desired.

1/2 cup canned petite diced tomatoes
2 green onions, chopped

This recipe is really good! It sounds like a weird combo, but it's surprisingly tasty. I thought it up one day because I didn't have any cheddar cheese and wanted to try cream cheese on a quesadilla. You can serve with salad and salsa for a simple yummy meal :)

1 slice swiss cheese (or more, depending on taste)
1 tablespoon cream cheese
2 tortillas
salsa (for dipping) (optional)

Steps:

  • Spread cream cheese on to one of the tortillas. You may need more depending on size of tortilla.
  • Put swiss slice on top of cream cheese, and combine tortillas.
  • Toast quesadilla in toaster oven until it reaches your level of crunchiness. (I do it on meduim heat for about a minute or two) You could also do this in a microwave, or fry it.
  • Remove from oven, slice with pizza slicer into triangles, serve with salsa and enjoy!
