  • Add an extra course to your Christmas dinner -- all you need is a bottle of juice! To make this cranberry granita, pour 4 cups cranberry juice into a 9-inch square metal baking dish and freeze, scraping with a fork every 30 minutes, until frozen, about 3 hours. Spoon into small bowls, top with frozen cranberries and serve between dinner and dessert.

2 cups cranberry juice
1/3 cup sugar
1/4 cup fresh lime juice
1/4 cup vodka
6 fresh cranberries, for garnish

Steps:

  • Whisk the cranberry juice and sugar in a heavy medium saucepan over medium heat just until the sugar dissolves. Pour the cranberry mixture into a 13 by 9 by 2-inch glass baking dish. Cool completely. Whisk in the lime juice and vodka. Freeze until the granita becomes slushy, about 2 hours. Using fork, stir to blend. Continue freezing the granita until frozen, stirring every hour to form crystals, at least 5 hours or overnight.
  • Divide the granita among 6 dessert glasses. Garnish with fresh cranberries, if desired, and serve.

2 cups water
5 1/2 ounces cranberries, approximately 1 1/2 cups, washed and sorted
3/4 cup granulated sugar
1/2 teaspoon lime zest

Steps:

  • Place the water, cranberries and sugar into a small saucepan, set over medium-high heat and simmer until the berries begin to pop, approximately 7 minutes. Remove from the heat. Puree with a stick blender, blender or food processor, for 1 minute. Pass the mixture through a fine mesh strainer directly into a metal 13 by 9-inch pan. Do not press on the skins. Simply allow the juice to drip through the strainer. Add the zest and stir to combine. Place in the freezer until set, at least 6 hours and up to overnight. Once frozen, scrape the mixture with a fork to create a shaved ice texture. Serve immediately.

3/4 cup sugar
1/2 cup fresh orange juice
3 cups cranberry-juice cocktail
1 tablespoon fresh lemon juice
1 teaspoon finely grated orange zest
Salt
2 teaspoons finely grated peeled fresh ginger

Steps:

  • Place a 2-quart shallow baking dish in the freezer. In a medium saucepan, bring sugar and orange juice to a boil over medium-high heat, stirring, until sugar dissolves, about 2 minutes. Remove from heat. Stir in cranberry and lemon juice, zest, and a pinch of salt.
  • In a fine-mesh strainer set over cranberry mixture, press ginger with a spoon to release juice (discard solids). Stir to combine.
  • Pour mixture into baking dish. Freeze until solid, at least 6 hours or overnight. Mash with a fork to break granita into small crystals. Cover; freeze until ready to serve.

1 stick cinnamon
3 tea bags red zesty herbal tea flavored with hibiscus, rose hips and lemongrass
1 1/2 cups cranberry juice cocktail
1 1/2 cups pineapple juice
fresh fruit, if desired
thin almond wafer cookies, if desired

Steps:

  • 1. Insert cloves into peel of orange slice. Heat water, sugar, cinnamon and orange slice to boiling in 2-quart saucepan, stirring occasionally remove from heat. Add tea bags cover and let steep 5 minutes. Remove tea bags, cinnamon stick and orange slice.2. Stir cranberry and pineapple juices into tea. Pour into 2-quart nonmental bowl or square baking dish, 8x8x2 inches. Cover and freeze about 2 hours or until partially frozen. Stir with fork or wire whisk. Cover and freeze 3 hours or overnight.3. Remove granita from freezer 20 minutes before serving. Scrape surface with fork and spoon into glasses. 4 cups water
2/3 cup loosely packed fresh mint leaves
2 tablespoons sugar
8 lemon herbal tea bags
3-1/2 cups reduced-calorie reduced-sugar cranberry juice
1 tablespoon lemon juice
Ice cubes
Lemon slices, optional

Steps:

  • In a large saucepan, bring the water, mint and sugar to a boil. Remove from the heat; add tea bags. Cover and steep for 15 minutes., Discard tea bags. Cover and let stand 45 minutes longer. Strain and discard mint leaves. Stir the cranberry and lemon juices into tea. Serve over ice with lemon slices if desired.

A lovely clear red, hot beverage for holiday parties, an afternoon break, for dinner or bedtime as it contains no caffeine. I have been making this for decades and keep it in the fridge all winter. One of my most requested recipes!

1 pound fresh or frozen cranberries
3 quarts cold water
2 cups orange juice
2 ⅛ cups pineapple juice
¼ cup lemon juice
2 cups white sugar, or to taste
1 (3 inch) cinnamon stick
1 teaspoon whole cloves
½ teaspoon whole allspice berries

Steps:

  • Place the cranberries and water into a large pot. Bring to a boil and cook just until the berries pop, about 5 minutes. Remove from the heat and let stand at room temperature until cold, several hours.
  • Strain out the cranberries and stir the orange juice, pineapple juice, lemon juice and sugar into the liquid. Add the cinnamon stick, whole cloves and allspice berries. Bring to a low boil. It is ready to serve at this point, but it is even better if you allow it to sit overnight.
