I whipped this up tonight and thought someone else may enjoy this easy side. Add some "zing" to your frozen green beans with some succulent dried fruits. Very good and simple side for everyday or around the holidays.

2 tablespoons dried sweetened cranberries
2 tablespoons golden raisins
10 ounces frozen green beans
2 tablespoons walnuts, broken apart (or 1 tablespoon toasted sesame seed or 1 tablespoon toasted slivered almonds)
2 teaspoons olive oil, better quality
2 teaspoons fruit balsamic vinegar, better quality (I like fig)
2 tablespoons goat cheese (optional)

Steps:

  • In small bowl, combine cranberries and raisens. Add 2 T water. Microwave until plump, but not mushy. Drain water.
  • In serving bowl, microwave green beans until hot (but not shriveled).
  • Put berry/raisen mixture on top of beans.
  • Top with walnuts.
  • Drizzle with oil and vinegar.
  • Crumble cheese on top and serve.

Cranberry Raisin Relish image

I'm not what you'd call an "expert" cook, but even I can make this! The fruit-filled relish is a colorful-tongue tingling addition to Christmas dinner.

Yield 2-1/2 cups.

Number Of Ingredients 7

2 cups plus 2 tablespoons sugar
1/2 cup water
1/2 cup orange juice
2 cups fresh or frozen cranberries
1/2 cup chopped dried apricots
1/2 cup golden raisins
1-1/2 teaspoons grated orange zest

Steps:

  • In a small saucepan, combine the sugar, water and orange juice; cook and stir over medium heat until sugar is dissolved. , Stir in the cranberries, apricots, raisins and orange peel; bring to a boil. Reduce heat; cover and simmer until the berries pop, about 15 minutes. Serve warm or chilled.

Green Beans with Golden Raisins image

This recipe combines golden raisins and Parmesan cheese from the West with sesame and tea from the East.

2 tablespoons white sesame seeds
2 tea bags (green or white tea)
4 cups green beans, trimmed
1/4 cup golden raisins
3 tablespoons rice vinegar
1 tablespoon sesame oil
1/4 cup shaved Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees. Spread the sesame seeds on a baking sheet in a single layer. Bake for 5 to 6 minutes, or until the sesame seeds are crisp and fragrant.
  • In a large steamer pot, bring 4 cups water to a boil. Add tea bags. Place green beans in the steam rack. Be sure the water doesn't rise onto the rack. Steam at medium-high heat, covered, until beans are bright green, about 4 minutes. Sprinkle raisins into the steam basket and steam for one more minute.
  • In a large salad bowl, toss green beans and raisins with vinegar, sesame oil, and sesame seeds. Garnish with Parmesan cheese. Serve immediately.

1 cup golden raisin
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 1/4 cups sugar
1 large egg
1/2 cup canola oil
1/2 cup sour cream
1/2 cup heavy cream
1 teaspoon pure vanilla extract
1 tablespoon fresh orange zest
1 teaspoon fresh lemon zest
1 cup fresh cranberries, if frozen (thawed)
nonstick cooking spray

Steps:

  • 1. Preheat the oven to 400 degrees F. Spray muffin trays with nonstick spray.
  • 2. In a small bowl, add raisins and cover with warm water to slightly rehydrate. Set aside.
  • 3. In a large bowl, whisk together the dry ingredients (flour, baking powder, salt and sugar).
  • 4. In a medium bowl, whisk together wet ingredients (egg, canola oil, sour cream, heavy cream, vanilla extract, orange zest and lemon zest).
  • 5. Combine wet and dry ingredients. Batter is almost too tender, so feel free to beat well.
  • 6. Drain water from raisins. Fold raisins and cranberries into the batter.
  • 7. Spoon batter into muffin tins, almost to the top. Bake until risen and lightly browned, about 20 minutes.
  • 8. Allow to cool in the muffin pans for five to 10 minutes. Using both hands on each muffin, loosen the tops of the muffins, then pop them out of the pans. Place on a cooling rack to finish cooling.

2 1/2 tablespoons butter
2 cups raw butternut squash, peeled & cut in 1/2-inch cubes
1 small pinch nutmeg
1 1/2 cups green beans, trimmed and cut in 1/2-inch pieces
1/2 cup dried cranberries
1 teaspoon fresh sage, minced
juice and zest from 1 small lemon
sea salt
freshly cracked black pepper

Steps:

  • Place butter in large saute pan over medium heat. Allow the butter to brown over medium heat, stirring frequently, until it has turned golden and smells nutty, about 6 minutes.
  • Add the butternut squash to the pan. Sprinkle with pinch of nutmeg, kosher salt and freshly cracked black pepper. Toss then allow the butternut squash to cook, untouched, for about 4-5 minutes or until the bottoms begin to caramelize. Toss the squash and cook for another 4-5 minutes so that a new side of has a chance to caramelize.
  • Next, add the green beans, dried cranberries and sage to the pan. Sprinkle with kosher salt and freshly cracked black pepper. Stir. Cook for another 10-15 minutes, stirring occasionally, until the green beans are tender and the squash has cooked through.
  • Finally, add the lemon juice and zest to the pan. Stir and continue cooking until all of the lemon juice has cooked off.
  • Taste then adjust seasonings as desired with more kosher salt and freshly cracked black pepper.
  • Serve immediately.
