CRANBERRY BROWNIES
Steps:
- Preheat oven to 350ºF. Line with parchment and lightly grease an 8×8" baking pan.
- In a medium bowl, whisk the flour, salt, and cocoa powder together.
- Put the chocolate and butter in a large glass bowl and microwave for 30 seconds. Stir, and repeat until the chocolate and butter are completely melted and smooth. Add the sugars. Whisk until completely combined. The mixture should be room temperature.
- Add 2 eggs to the chocolate mixture and whisk until combined. Add the vanilla and stir. Do not overbeat the batter at this stage or your brownies will be cakey.
- Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible. Fold in the dried cranberries, chocolate covered cranberries and fresh cranberries.
- Bake in preheated oven for about 30 minutes or until a toothpick comes out with moist crumbs attached.
- Cool brownies completely before cutting into 16 equal squares with a very sharp knife.
- Brownies will keep in an airtight container at room temperature or in the refrigerator for up to 1 week, or in the freezer for up to 3 months.

Steps:
- Pour sugar into a clean and dry one quart jar. Press down firmly.
- Add cocoa powder and press down firmly. Pour in chopped pecans, making sure pecans are evenly layered in the jar. Combine flour, baking powder and salt. Pour into jar and seal.
- Attach the following directions to the jar: Empty mix into large bowl. Use your hands to mix thoroughly. Add 3/4 cup of butter or margarine and 4 slightly beaten eggs. Mix until completely blended. Spread batter into a lightly greased or sprayed 9 x 13 inch pan. Bake at 350 degrees F (180 degrees C) for 30 minutes or until done. Cool in pan. Cut into 2 inch squares.

- Heat the oven to 180C/ 160C fan/ gas 4 and line a 20cm x 20cm baking tin with baking parchment. Melt the dark chocolate with the butter in the microwave or in a heatproof bowl over just simmering water.
- Mix together the sugar, flour and cocoa powder and stir in the melted chocolate and butter mixture, followed by the eggs. Stir through the dried cranberries and macadamia nuts, then swirl through the cranberry sauce.
- Pour into the tin and smooth the surface. Bake for 25 - 30 mins. Allow to cool before slicing.

- Make the batter. Melt the butter in a large, microwaveable bowl (60 to 90 seconds on high power). Stir in the cocoa powder and sugar, mixing until full dissolved and no lumps of cocoa powder remain. Add the eggs one at a time, followed by the vanilla extract. Gently fold in the flour and salt until no streaks of flour remain. Fold in the white chocolate chips and cranberries, reserving some to press in the top of the batter.
- Bake the brownies. Transfer the batter to the prepared pan and top with the remaining cranberries and bake for 30-35 minutes, or until the center is just set and a tester comes out with a moist crumb. Cool completely before cutting.
- Drizzle with white chocolate. If desired, melt an additional 1/4 to 1/2 cup of white chocolate chips in the microwave, melting in 30 second increments on 50% power and stirring well in between. If the chocolate is too thick to drizzle, add 1/2 teaspoon of vegetable, canola, or coconut oil and stir to mix. Drizzle the chocolate over the cut brownies before serving.
