My favorite summer salad. Great for luncheons. Sometimes I substitute chopped pecans for the sunflower seeds. And I've also used a blue cheese vinaigrette rather than the creamy caesar. It's a very pretty salad and I get rave reviews every time I serve it.

romaine lettuce, chopped (I use one bag of the pre-chopped)
1/2 cup crumbled blue cheese
1/2 cup dried cranberries
1/4 cup sunflower seeds
1/4 cup creamy caesar salad dressing

Spinach Salad with Cranberries, Pecans, Bacon, and Blue Cheese image

Number Of Ingredients 10

1/2 pound hickory smoked bacon slices, roughly chopped
1/2 cup pecans, toasted and roughly chopped
Two 6-ounce containers baby spinach
1/2 small red onion, thinly sliced
1 cup dried cranberries
1/2 cup Danish blue cheese, crumbled
1/4 cup buttermilk
1/4 cup sour cream
1/4 teaspoon sugar
Salt and freshly cracked black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Fry chopped bacon in a medium skillet over medium-high heat until brown and crisp. Using slotted spoon, transfer to a paper towel-lined 1/4-sheet tray to drain.
  • Toast pecans in the oven on a 1/4-sheet tray until lightly golden and fragrant, about 6 minutes.
  • In a medium bowl mash the blue cheese with a fork. Mix in the buttermilk, sour cream, sugar, salt and pepper, to taste.
  • Combine baby spinach, red onion, pecans, dried cranberries and bacon in large bowl. Toss with the dressing immediately before serving.

1 cup sliced almonds
3 tablespoons red wine vinegar
⅓ cup olive oil
¼ cup fresh cranberries
1 tablespoon Dijon mustard
½ teaspoon minced garlic
½ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons water
½ red onion, thinly sliced
4 ounces crumbled blue cheese
1 pound mixed salad greens

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Arrange almonds in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.
  • In a blender or food processor, combine the vinegar, oil, cranberries, mustard, garlic, salt, pepper, and water. Process until smooth.
  • In a large bowl, toss the almonds, onion, blue cheese, and greens with the vinegar mixture until evenly coated.

Use up the remains of the cheeseboard and your cranberry sauce in this sweet-savoury tart

4 onions , finely sliced
2 tbsp olive oil
375g pack ready-rolled puff pastry
3 tbsp cranberry sauce
75g blue cheese
2 Little Gem lettuces , leaves separated
1 pear , cored and thinly sliced
2 tbsp salad dressing

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a non-stick frying pan, cook the onions in the olive oil with some seasoning for 12-15 mins until golden and soft.
  • Lay the pastry on a parchment-lined baking sheet. Spread over the cranberry sauce, leaving a small border. Scatter over the onions. Bake for 20-25 mins, sprinkling with cheese halfway through.
  • Toss the lettuce leaves and pear with the dressing and serve alongside the tart.
