CRACKLING BISCUITS
The name of these little biscuits is pretty self explanatory, and who doesn't like biscuits and pork fat? This recipe can easily be halved if 6 dozen biscuits is too much. I haven't tried freezing them yet but I'm sure them would be fine.

Steps:
- Preheat oven to 300°F.
- In large bowl mix together cracklings, flour, baking powder, and salt.
- In a separate bowl whisk together the eggs, sour cream, and wine.
- Make a well in the center of the flour mixture and pour the egg mixture into it.
- Gradually combined the two mixtures.
- On a flour surface roll dough to 3/4 inch thickness and cut with a 2 1/2-3 inch cookie cutter.
- Place biscuit rounds on a greased cookie sheet.
- In a small bowl whisk together the egg yolk and cream.
- Brush the tops of biscuits with cream mixture.
- Bake for 20-25 minutes.

POGACSA (HUNGARIAN CHEESE BISCUITS)
These pogacsa, Hungarian for "biscuit," are perfect for parties. You may either add the following in the dough, sprinkled on top before baking, or both - finely shredded medium-firm fresh cheeses and aged dry hard cheeses, chopped pork crackling, minced cabbage, black pepper, hot or sweet paprika, minced garlic, minced red onion, caraway seeds, sesame seeds, sunflower seeds or poppy seeds.

Steps:
- In a large bowl, combine milk, yeast and sugar and let stand until yeast is softened, about 10 minutes.
- Add flour, cheese, salt, eggs, butter, and sour cream to the yeast mixture. Using an electric mixer, mix on low speed until dough comes together. Beat on medium speed 1 to 2 minutes. The dough should be smooth and not sticky.
- Roll dough 1/2 inch thick on a lightly floured surface. Make a shallow cross-hatched pattern with the point of a sharp knife over the top of the dough and brush with egg yolk. Sprinkle cheese on top, and cut out rounds with a 1 to 1 1/2 inch cutter.
- Arrange circles in rows on a parchment-lined baking sheet, about 1/4 inch apart. Put pan in a cold oven and set temperature to 400 degrees F. Bake about 25 minutes, until pogacsa are nicely browned on their tops and bottoms. Let cool completely and store airtight.
- Pogacsa may also be frozen up to 1 month. Thaw and reheat at 225 degrees F for 20 minutes.

SNOWY CHOCOLATE CRACKLE BISCUITS
Roll balls of dough in icing sugar to give these chocolate biscuits their 'crackle' effect. They make perfect presents for kids to make at Christmas time

Steps:
- Melt the chocolate in a bowl set over a pan of barely simmering water (make sure the base doesn't touch the water), or in a microwave in short bursts. Set aside to cool.
- Beat the butter and sugar using electric beaters, then beat in the eggs, flour, cocoa powder, baking powder and chocolate. Pour in the milk to make a soft dough, but don't overmix it. Cover and chill for 1 hr.
- Heat oven to 180C/160C fan/gas 4. Line one or two baking sheets with parchment. Put the icing sugar in a bowl. Scoop heaped tablespoons of dough and roll each ball in your hands before dropping it into the icing sugar and rolling it around. Put on baking sheets and repeat, spacing the balls apart.
- Bake for about 12-15 mins until the biscuits feel firm when touched. The biscuits should puff up and cracks should open up, too. Leave to cool on the trays, then transfer to wire racks to cool completely. Will keep for up to a week in an airtight container.
