An easy and delicious crab quiche, with lots of herbs and Gruyere cheese. Make one quiche, but is easily doubled.

1 9-inch frozen deep dish pie shell (thawed, unbaked)
5 large eggs
1 1/2 cups half and half cream (10% b.f.)
2 Tablespoons finely chopped fresh chives (plus whole chives for topping, or 1/2 tsp dried)
2 Tablespoons finely chopped fresh parsley (or 1/2 tsp dried)
2 Tablespoons finely chopped fresh cilantro (or 1/2 tsp dried, or omit and use more parsley)
1/4 teaspoon Old Bay seasoning (or substitute a pinch of celery salt and a pinch of paprika)
1/2 teaspoon fine salt
1/4 teaspoon black pepper
1/8 teaspoon nutmeg
1 cup Gruyere cheese (grated, or substitute Swiss or Emmental)
1/2 lb. lump crabmeat (canned or thawed if frozen, and picked over)

Steps:

  • Preheat oven to 375F. (not fan assisted) with rack in the centre of the oven.
  • In a large bowl, whisk together the eggs, cream, herbs and seasoning. Stir in grated cheese and crabmeat.
  • Pour the egg mixture into thawed, unbaked pie crust (you may have a tiny bit of filling that won't fit). Use a fork to gently distribute the crab and herbs evenly in the pan. Lay several whole chives across the top.
  • Bake quiche until filling puffs and is no longer wobbly in centre when quiche is gently shaken, about 40-45 minutes. Let cool 10 minutes before serving.

4 ounces gruyere cheese, shredded
One 9-inch pie shell, par-baked and pricked with a fork
1 pound fresh white crabmeat, drained
2 scallions, minced
1 cup heavy cream
1/2 teaspoon grated lemon zest
1/2 teaspoon dry mustard
1/2 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon salt
Pinch ground mace
3 eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Sprinkle the cheese evenly over the bottom of the pie crust. Top with the crab meat and sprinkle with the scallions. Whisk together the heavy cream, lemon zest, mustard, seafood seasoning, salt, mace and eggs in a bowl. Pour the egg mixture into the pie crust.
  • Bake until the custard sets, about 40 minutes. Let stand for 15 minutes before slicing.

2 unbaked pastry shells (9 inches each)
5 large eggs
1-1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper

1-1/2 cups grated Parmesan cheese
1 cup shredded Swiss Cheese
3 tablespoons all-purpose flour
6 to 8 ounces canned or frozen crabmeat, thawed, drained, flaked and cartilage removed
1 package (10 ounces) frozen chopped spinach, thawed and well-drained

Steps:

  • Line each unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes longer., In a large bowl, combine the eggs, milk, salt, pepper and nutmeg; set aside. Combine cheeses and flour; add to egg mixture. Stir in crab and spinach. Pour into pastry shells., Bake at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Serve warm.,

1 (9 inch) deep dish frozen pie crust
4 eggs
1 cup heavy cream
½ teaspoon salt
½ teaspoon black pepper
3 dashes hot pepper sauce (e.g. Tabasco™), or to taste
1 cup shredded Monterey Jack cheese
¼ cup grated Parmesan cheese
1 (8 ounce) package imitation crabmeat, flaked
1 green onion, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Bake the pie crust for about 10 minutes, until just starting to brown. Remove from the oven, and allow to cool.
  • In a large bowl, whisk together the eggs, cream, salt, pepper, and hot sauce. Stir in shredded cheese, onion and imitation crab. Pour into the pie shell.
  • Bake for 25 to 30 minutes in the preheated oven, then turn off the oven, but leave the door closed. Leave quiche in the oven for an additional 20 to 30 minutes until firm. This will give it a smoother texture.

1 (10 inch) prepared pie crusts (to fit a 10-inch pie plate)
4 green onions, chopped
1 tablespoon fresh minced garlic (or to taste)
2 tablespoons butter
2 (6 ounce) cans lump crabmeat (rinsed and well drained)
1 teaspoon grated lemon rind
1/2 teaspoon Old Bay Seasoning
1 pinch cayenne pepper (or use ground red pepper)
1 cup half-and-half cream (or use 18% table cream)
3 large eggs
1 teaspoon salt (or to taste)
black pepper
3/4 cup grated parmesan cheese

Steps:

  • Set oven to 400 degrees (oven rack set to bottom-lowest position).
  • Fit the prepared pastry into the 10-inch pie plate; fold edges under and crimp edges as desired.
  • Using a fork, prick holes in the pastry all over.
  • Fill with pie weights or dried beans.
  • Place the pie plate on a baking sheet and bake for 8 minutes; remove the pie weights; cool.
  • In a skillet saute the green onions with garlic over medium heat for about 3 minutes; stir in crabmeat, lemon rind, Old bay seasoning and cayenne (or ground red pepper) saaute for another 2 minutes.
  • In a large bowl whisk together eggs, cream, salt and parmesan cheese.
  • Add in the crab mixture; mix to combine and season with black pepper.
  • Pour into prepared pie crust.
  • Bake quiche (on top of a baking sheet) for about 35-40 minutes or until set.
  • Let stand for 15 minutes before serving.

1/2 lb fresh mushrooms, sliced
2 tablespoons butter
4 eggs
1 cup sour cream
1 cup cottage cheese, small curd
1/2 cup parmesan cheese, grated
1/4 cup flour
1/3 cup onion, diced
1/4 teaspoon salt
5 drops Tabasco sauce
2 cups monterey jack cheese, shredded

Steps:

  • In a medium skiller sauté mushrooms and onions in the butter till tender. Drain on paper towel.
  • In a bowl combine the sour cream, cottage cheese, parmesan cheese and crabmeat. Toss the shredded Monterey jack cheese with the flour in a plastic bag and then add to the crabmeat mixture.
  • Beat the eggs and combine the rest of the ingredients in a bowl.
  • Pour into a 10 inch greased quiche dish or a deep dish pie plate. Bake at 350 degrees for 40 minutes or until a knife inserted in comes out clean. Quiche should be puffed and golden brown. Let stand 5 min before cutting.

3/4 pound fresh asparagus, cut into 2-inch pieces
1 unbaked pastry shell (9 inches)
1 can (6 ounces) crabmeat, drained and flaked
1 cup shredded Swiss cheese
1 tablespoon all-purpose flour
3 large eggs, lightly beaten
1-1/2 cups half-and-half cream
1/2 teaspoon salt
3 drops hot pepper sauce
2 tablespoons grated Parmesan cheese
8 fresh asparagus spears for garnish

Steps:

  • Place asparagus in a large saucepan with enough water to cover; bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain well and pat dry. Arrange cooked asparagus over bottom of pastry. Top with crabmeat. Combine Swiss cheese and flour; sprinkle over crab. , In a small bowl, whisk eggs, cream, salt and hot pepper sauce. A proper quiche (also known as a tarte salée, or savory open pie) should have really good pastry and contain a soft, tender eggy custard. It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about. This is a rosy bisque-like shellfish quiche with a handful of crab meat (use shrimp or lobster if you like).

Short-crust dough (see recipe), rolled and chilled in a 9 1/2-inch tart pan
1 small red pepper
3 large eggs
2 teaspoons Dijon mustard
1/2 teaspoon kosher salt
Black pepper to taste
1 teaspoon paprika
Pinch cayenne
1 and 1/4 cups heavy cream
1 teaspoon chopped fresh tarragon
2 teaspoons slivered chives
6 ounces cooked crab meat, or use chopped cooked shrimp or lobster

Steps:

  • Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
  • Set red pepper in the flames of a stovetop gas burner turned to high. Turn with tongs until skin is blackened, 5 to 7 minutes, then cool. Peel, remove seeds and veins, and slice into 1/4-inch strips.
  • Make the custard: in mixing bowl, beat eggs, mustard, salt, black pepper, paprika and cayenne. Whisk in cream and herbs. Set aside.
  • Set tart pan on a baking sheet. Spread crab meat evenly over bottom of pastry. Arrange red pepper strips over crab meat. Beat custard once more and carefully pour into tart shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.

2 tablespoons unsalted butter
3 Belgian endive, cleaned and minced
salt
freshly ground white pepper
1 cup fresh crabmeat
3 large eggs
3/4 cup all-purpose flour
2 cups milk
1 dash hot sauce

Steps:

  • in a large skillet, melt butter over high heat.
  • Add endive, with salt and pepper to taste, and sauté for 4 minutes.
  • Remove from pan and chill.
  • Preheat oven to 450° F.
  • Butter a 9-inch pie plate or quiche pan without a removable bottom.
  • Remove all bits of shell and cartilage and place crabmeat into the bottom of the pie plate.
  • Add the endive.
  • In a mixing bowl, beat eggs, flour, milk and a pinch of salt until well combined.
  • Pour over the crabmeat and endive and bake for 35 minutes.
  • Serve hot or warm.
