JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA



Jim Lahey's No-Knead Pizza Margherita image

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

Number Of Ingredients 12

3 cups all-purpose flour or 3 cups bread flour, more for dusting
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/4 cups water
1 vine-ripened tomatoes (about 5 oz.) or 1 heirloom tomato (about 5 oz.)
1 pinch salt
1/4 teaspoon extra virgin olive oil
5 tablespoons tomato sauce
2 ounces buffalo mozzarella (about 1/4 ball)
basil leaves
1 tablespoon extra virgin olive oil
salt

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

Whoa, cowboy! Here's a pizza you can take your hat off for. Its easy crust folds up over a meaty filling.

2 cups Original Bisquick™ mix
1/4 cup sour cream
1/4 cup very hot water
1 container (18 oz) refrigerated original barbecue sauce with shredded chicken
1/4 cup chopped cooked bacon (about 4 slices from 2.2-oz package)
1 1/2 cups shredded Colby-Monterey Jack cheese (6 oz)

Steps:

  • Heat oven to 400°F. In medium bowl, stir Bisquick mix, sour cream and hot water with fork until soft dough forms. Place on surface dusted with Bisquick mix. Shape into a ball; knead 5 times. Roll dough into 14-inch circle; fold circle in half. Place on ungreased large cookie sheet and unfold.
  • Spread chicken mixture over dough to within 2 inches of edge. Fold edge just to chicken mixture. Top with half of the bacon. Sprinkle with cheese and remaining bacon.
  • Bake 20 to 25 minutes or until crust is light golden brown and cheese is melted.

This pizza was created by myself and my Big Guy. We put it together a few times and every time we add alil more or alil less of something. This Cowboy Classic is very simple and quickly made. Ingredients are based on a medium size pizza and are estimated. Use more or less, depending on your taste.

Number Of Ingredients 11

1 lb basic pizza dough
2 cups cubed chicken breasts
1 (8 ounce) can basil garlic tomato sauce
1 teaspoon oregano, to taste
1 teaspoon garlic powder
1 tablespoon olive oil
1/2 cup diced green pepper
1/2 cup diced onion
2 cups shredded mozzarella cheese
1 teaspoon creole seasoning
cooking spray

Steps:

  • Season chicken with creole seasoning and garlic powder. Pan fry cubes of chicken until fully cooked, set aside.
  • Prep your pizza pan by spraying it with cooking oil.
  • Stretch the uncooked pizza dough into a circle big enough to cover most of the pizza pan (best you can).
  • Spread the dough onto the cookie sheet and press the edges to create a crust, score the dough with a fork for ventilation.
  • Spread the tbsp of olive oil on the dough, especially the crust.
  • Layer in this order:
  • Tomato sauce, cubed chicken, diced green pepper, diced onion, mozzarella cheese. Sprinkle with oregano.
  • Bake in preheated oven at 350F for 20 mins or until crust is golden and cheese is melted.

1 lb potatoes, peeled and sliced 1/4" thick
10 oz prepared pizza dough
1 lb lean ground beef
1 c barbecue sauce, bottle
1 small green bell pepper, cut in strips
1 c shredded cheddar cheese

Steps:

  • 1. Heat oven to 425 degrees.
  • 2. Place potatoes in shallow 1 1/2 to 2 quart microwave-safe dish.
  • 3. Cover with plastic wrap, venting one corner.
  • 4. Microwave on high 8 to 10 minutes until just tender; set aside.
  • 5. Coat 12-inch round pizza pan with vegetable cooking spray; press dough evenly into pan; prick all over with fork.
  • 6. Bake for 10 minutes; set aside.
  • 7. Meanwhile, in large nonstick skillet over medium heat saute beef until browned; drain fat.
  • 8. Mix in 3/4 cup barbecue sauce.
  • 9. To assemble pizza, spread beef mixture over crust; top evenly with potatoes and bell pepper.
  • 10. Drizzle with remaining 1/4 cup barbecue sauce.
  • 11. Sprinkle with cheese.
  • 12. Bake 10 to 15 minutes until hot throughout and cheese is melted.
  • 13. Cut into 8 wedges.
  • 14. NOTE: Microwave cooking times are based on a 700-watt microwave.
  • 15. Adjust cooking times to your own oven.
