Couscous Salad with Broccoli and Raisins image

Chickpeas and feta take care of the protein requirement, olive oil brings good fats, and whole-wheat couscous and broccoli make up the healthy carbohydrates.

Coarse salt and ground pepper
1/3 cup whole-wheat couscous
1 cup small broccoli florets (2 ounces)
1/2 cup canned chickpeas, drained and rinsed
2 tablespoons golden raisins
1/4 cup crumbled feta cheese (1 ounce)
2 teaspoons extra-virgin olive oil
1 tablespoon red-wine vinegar

Steps:

  • In a saucepan, bring 2/3 cup lightly salted water to a boil. Add couscous, cover, and remove from heat. Let stand until tender, 5 minutes. Fluff with a fork and transfer to a bowl.
  • Toss broccoli, chickpeas, raisins, feta, oil, and vinegar with warm couscous. Season with salt and pepper.

4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1/4 teaspoon Italian seasoning
COUSCOUS:
1 can (14-1/2 ounces) chicken broth
1/4 teaspoon garlic powder
1/4 teaspoon pepper
3 cups frozen chopped broccoli, thawed and drained
1 cup uncooked couscous
1/4 cup grated Parmesan cheese

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, heat oil over medium heat. Add chicken; cook 4-6 minutes on each side or until a thermometer reads 165°. Stir in vinegar, honey and Italian seasoning; heat through., Meanwhile, in a small saucepan, bring broth, garlic powder and pepper to a boil. Stir in broccoli and couscous. Remove from heat; let stand, covered, 5-10 minutes or until broth is absorbed. Stir in cheese. Serve chicken with couscous.

Indian Curry Couscous with Broccoli and Edamame image

A quick, light couscous stir-fry with Indian flavors. Great for vegetarians, but easily adapted into a chicken dish. Feel free to substitute veggies any way you like. Other options include sliced zucchini, string beans, eggplant, carrots, snow peas, and celery. Also try adding sesame seeds, flax seeds, or sesame seeds towards the end of stir-frying. Can be served with plain yogurt.

½ cup couscous
1 tablespoon canola oil
1 teaspoon ajwain (carom) seeds
1 clove garlic, coarsely chopped
1 teaspoon turmeric powder
1 teaspoon curry powder
½ teaspoon hing powder (asafoetida)
1 pinch chili powder
1 pinch ground cinnamon
1 (12 ounce) package frozen shelled edamame (green soybeans)
1 bunch broccoli, cut into florets
sea salt to taste
ground black pepper to taste
1 tablespoon toasted sesame oil

Steps:

  • Bring the vegetable broth to a boil in a saucepan. Add couscous and reduce heat to medium; simmer until broth is absorbed and couscous is tender, about 10 minutes. Fluff with a fork.
  • Heat canola oil in a large skillet or wok over medium-high heat. Add ajowan seeds.
  • When seeds begin to sputter, stir in garlic and reduce heat to medium.
  • Stir turmeric, curry powder, hing powder, chili powder, and cinnamon into the garlic mixture until garlic is browned, about 3 minutes.
  • Cook and stir edamame and broccoli in the spice mixture until vegetables are tender, about 5 minutes. Season with salt and black pepper.
  • Drizzle sesame oil atop vegetables.
  • Spoon vegetables over couscous to serve.

2 tablespoons extra virgin olive oil
1 medium red onion, quartered and thinly sliced
3 cups finely chopped broccoli florets
1/4 cup minced fresh parsley
2 tablespoons minced fresh dill
Juice of 1 lemon
1/3 cup oil-packed sliced sun-dried tomatoes or chopped pitted black olives, preferably oil-cured

Steps:

  • Combine the couscous with 1 1/2 cups boiling water in a heatproof container. Cover and let stand for 10 minutes, then fluff with a fork.
  • Meanwhile, heat 1 tablespoon of the oil in a large skillet. Add the onion and sauté over medium heat until golden.
  • Add the broccoli and just enough water to keep the bottom of the skillet moist, then cover and allow to steam until the broccoli is bright green and tender-crisp, about 4 minutes.
  • Add the couscous to the skillet along with the parsley and dill, lemon juice, and sun-dried tomatoes. Stir together well, cook for 2 or 3 minutes longer, then serve.

1/4 cup kalamata olive, pitted and quartered

Steps:

1 scallion, sliced
