- In a shallow bowl, mix flour, salt and pepper. Cut tenderloin into 12 slices; pound each with a meat mallet to 1/4-in. thickness. Dip pork in flour mixture to coat both sides; shake off excess., In a large skillet coated with cooking spray, heat oil over medium-high heat; brown pork in batches. Remove from pan., Add sweet potatoes, cranberries and broth to same pan. Bring to a boil. Reduce heat; simmer, covered, 4-6 minutes or until potatoes are almost tender. Stir in mustard. , Return pork to pan; add apple and green onions. Return to a boil. Reduce heat; simmer, covered, 4-6 minutes or until pork and sweet potatoes are tender.

ISRAELI COUSCOUS WITH SWEET POTATO

African couscous, Israeli couscous looks like pearls and has a chewier texture. The best way to add flavour to these little white balls is with sumac, which gives a pleasant tanginess. I've got to admit, I really love tang!"

Steps:
- Heat oil in medium saucepan over medium heat.
- Cook shallots until soft but not browned, about 4 minutes.
- Add sweet potato, sumac and couscous; cook, stirring, until couscous starts to toast, about 2 minutes.
- Add stock, salt and pepper.
- Bring to boil. Cover and reduce heat to low.
- Cook the couscous for 10 - 12 minutes, or until all the liquid is absorbed and the couscous is al dente.
- Remove from heat.
- Let stand, covered, for 5 minutes.
- Fluff with a fork before servings.

PORK LOIN AND SWEET POTATO HASH
Sweet and Savory and screams Fall!! An excellent way to use up leftover Pork Loin

Steps:
- 1. Cube cooked pork loin. I had cooked mine previously on my outdoor rotisserie.
- 2. Peel sweet potatoes, I used 4 med-large ones. Cut into cubes the same size you do your pork loin.
- 3. In a large skillet add 1/4 c of butter over med-low heat. Once melted add potatoes and diced onion. Add enough olive oil to fully coat potatoes. Add a pinch of thyme and black pepper. Cook with lid on stirring every few minutes until potatoes are fork tender. Add dried cranberries, cinnamon, sugar and honey, mix well and add salt to taste. Add cooked pork loin and broth, mix altogether, heat for a few minutes longer, just long enough for pork loin to warm.
SPICY PORK AND COUSCOUS

- Combine cumin and ginger. Crush garlic, and add to spices. Wash and dry pork, and cut into 3/4-inch cubes. Roll the pork in the spice mixture, and set aside.
- Following the package directions, bring the beef stock to a boil. Add the couscous, cover and remove from heat. Allow to sit for 5 minutes, until the couscous has absorbed the liquid.
- Heat nonstick skillet until it is very hot; reduce heat to medium high, and add oil. Saute pork cubes until they are brown on all sides and slightly pink in the center, about 5 minutes.
- Meanwhile, wash, trim and coarsely chop tomatoes. Pit and chop olives. Wash, trim and cut the scallions into thin rounds. Wash and chop cilantro and mint. Add tomatoes, olives, scallions and lemon juice to couscous. When pork cubes are cooked, stir into mixture. Stir in the cilantro and mint. Season with salt and pepper.

- In a small nonstick skillet, brown pork chops in oil. Place in an 8-in. square baking dish coated with cooking spray. Layer with sweet potato; drizzle with butter. , In a small saucepan, combine the orange juice, brown sugar, salt, ginger, mace and pepper; bring to a boil, stirring constantly. Pour over sweet potato., Cover and bake at 350° for 30-35 minutes or until the pork reaches 160° and potato is tender. Remove pork and potato; keep warm. Pour pan juices into a small saucepan. Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with pork and sweet potato.

Steps:
- Chop sweet potato, put in a pot with barely enough water to cover.
- Add salt, bring to a boil, then reduce heat and simmer (just under medium temperature, not too low) for 10-12 minutes until tender.
- Cook couscous by placing in a bowl with equal amount of boiling water and covering immediately. Leave to cook while potato is simmering.
- Prepare ginger and lemon.
- Add everything except lemon zest and couscous to water and sweet potato and keep on cooking about 2 minutes.
- Stir in lemon zest.
- Fluff couscous, divide between two pasta plates (they hold the sauce better than flat plates) and top with sweet potato. Be generous with the sauce as it will soak into the couscous and add delicious flavour.
