SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES
Steps:
- In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

- Place bacon in a large Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to a plate lined with paper towels, reserving some of the drippings in the Dutch oven.
- Stir onion in reserved drippings; cook and stir until browned, about 10 minutes. Stir garlic into the onion; cook until softened, 1 to 2 minutes. Pour broth into the Dutch oven; add green beans. Chop bacon and add to the Dutch oven.
- Bring the broth to a boil, reduce heat to low, and place a cover on the Dutch oven. Simmer the green bean mixture until the beans are tender, about 1 hour. Add potatoes; season with salt and pepper. Continue cooking until the potatoes are tender, about 30 minutes more.

- 1. Add green Beans to a large pot, cover with water.
- 2. Add the chopped onions and minced garlic & BRING TO A BOIL. COOK TILL CRISP TENDER, ABOUT 20 MINUTES OR AS DESIRED. Add salt and pepper if desired.
- 3. Drain water from green bean pot to a smaller pot. Add the cubed potatoes, and cook till potatoes are tender. Drain the liquid and add the potatoes to the pot of green beans.
- 4. Add the crumbled bacon bits, and butter, stir to mix together. Taste first and see if additional salt and pepper is needed. I did not use salt because the bacon bits are already salty.
- 5. Pour into a serving dish and serve while still hot. How could such a simple dish taste so good. It was very good, and rekindle memories of my childhood all in one.

- Drain the beans and beans & potatoes in a colander then rinse under cold tap water; set aside to drain well. Cut up onion and garlic and set aside. Cook bacon; drain on paper towels then cut or tear into small pieces. Set aside. In a large, deep skillet melt the butter over medium heat. Add onion and sauté just until softened. Add garlic and cook for another minute. Increase heat to medium-high; add the beans and potatoes and let cook undisturbed for 3-4 minutes then use an egg turner or similar spatula to flip the mixture over so you don't wreck the beans and potatoes. Cook down until almost all the liquid is gone, flipping occasionally to prevent scorching. When liquid is almost out, sprinkle the dry Ranch mix and black pepper over the top and flip over a couple of times to combine. Just before beans are finished cooking, add the bacon (or you can wait until serving and use it to garnish the top). (I put half of it in the beans and garnished top with other half). Taste and add salt only if needed since the bacon and Ranch mix are salty.

OMA'S COUNTRY GREEN BEANS WITH BACON & ONION (GRUENE BOHNEN)
Our family favorite country-style green beans, with bacon and onion. These are just like my German grandmother made (the lemon is my addition) -- she always used fresh green beans from the farmer's market -- but canned green beans will do just fine. Delicious! A really great side dish (can be made ahead) for the holidays, or anytime.

- In a large heavy skillet (I use my large cast iron pan or Le Creuset) over medium heat, cook the bacon and onion,stirring often, until bacon is lightly browned and the onion is softened (about 15 to 20 minutes).
- In a large measuring cup, stir the flour into the reserved liquid (or 1 1/2 cups water), whisking briskly with a fork until smooth.
- Pour the flour mixture all at once into the bacon and onion mixture; use a wire whisk and whisk briskly to combine. Use a wooden spoon to gently scrape browned bits from bottom of pan and incorporate them into the sauce.
- Cook and stir constantly (I use a wire whisk or wooden spoon) over medium-high heat until mixture comes to a boil. When mixture comes to a boil, continue to cook and stir on medium-high heat for 3 minutes more (at this stage you may want to add a touch more of water or flour, depending on how thick you want the sauce to be).
- Add the green beans, lemon zest, salt and pepper, and the fresh parsley (except one tablespoon snipped parsley, for garnish); stir to combine. Reduce heat to medium, stir occasionally until beans are hot (8 to 10 minutes).
- Remove from heat. Finish with a squeeze of fresh lemon juice and garnish with snipped parsley. Serve immediately.
- If making beans ahead, to serve later:.
- At this point, spoon hot bean mixture into a 1 1/2 to 2-quart size casserole dish; let cool slightly then cover and refrigerate. About 1 hour prior to serving, remove from fridge and let sit at room temp for 15 to 30 minutes. Place the covered casserole into a preheated 350 degree F oven for 30 to 40 minutes, until hot. Garnish with snipped parsley and serve hot.

- Cook the bacon and drain on a paper towel, reserving the bacon grease. Add the bacon grease to a dutch oven or large pot on the stove over medium-high heat. Add the onion to the pot and cook for 2-3 minutes, until softened.
- Add the green beans, chicken stock, 1 teaspoon granulated garlic, and 1/2 teaspoon kosher salt. Stir and cover. Reduce the heat to medium-low and simmer for 30 minutes.
