HOW TO MAKE COUNTRY GRAVY
This is a beautiful example of classic, very old-school American country cooking. There are a lot of variations, and this is my favorite. This goes on fried chicken, country-fried steak, and biscuits.

Steps:
- Melt butter in a large skillet or saucepan over medium heat; cook sausage and bacon in the hot butter, stirring to break the sausage up into small pieces, until sausage is browned and bacon is almost crisp, about 10 minutes. Mix 1/2 cup green onion into sausage mixture and saute until onions are soft, about 3 more minutes.
- Stir flour into meat mixture, 1 to 2 tablespoons at a time, until thoroughly combined and mixture is pasty. Cook, stirring often, 2 to 3 minutes to remove raw taste of flour.
- Whisk milk into meat mixture, about 1 cup at a time, until combined. Continue to whisk until gravy begins to thicken, about 5 minutes. Turn heat to medium-high, bring gravy to a simmer, and season with a pinch of cayenne pepper, salt, and black pepper. Reduce heat to medium-low.
- Continue to simmer gravy until flavors have blended and gravy is thick, 10 to 15 minutes, stirring occasionally. Sprinkle with 1 tablespoon green onion and a pinch of cayenne pepper for garnish.

Steps:
- Mix all ingredients well and store in a tightly sealed container.
- To make Gravy: Discard all but 2 tablespoons of the oil used to fry the chicken (or melt 2 tablespoons unsalted butter) in a skillet.
- Over low heat, mix in 2 tablespoons of the Country Gravy Mix.
- Stirring constantly, cook about 2 minutes. Whisk in 1 cup chicken broth, scraping browned bits off bottom of skillet.
- Stir in 1 cup milk and bring all to a boil over high heat, stirring constantly.
- Reduce heat to low and simmer about 5 minutes.
- Serve immediately with chicken, mashed potatoes or biscuits.

COUNTRY GRAVY MIX OAMC
I found this online, this is for a large quantity. I haven't tried it yet. My suggestion is to cut it down by half just to try it before making a large batch. This keeps as long as the powdered milk. Great pantry staple to have on hand.

- Mix all ingredients in a large bowl and stir well.
- Put in an airtight container to store.
- To Make the Gravy:.
- Take 3-4 heaping Tbls. of mix and place in 2 cup measuring cup.
- Add 1-1/2 cup water or milk and whisk well.
- In a saucepan pour in mixture and whisk as it comes to a boil.
- Add 1/4 to 1/2 cup more water, milk or evaporated milk.
- It will be rich and creamy using milk but water works just fine.
- Additional salt & pepper to taste.

- Combine ingredients thoroughly and store in air tight container in cool place.
- Use within 6 to 8 months.
- To make 1 1/2 lb. loaf of Basic White Bread:.
- Put into your bread machine in order:.
- 1 cup warm water.
- 1 egg** beaten, room temperature.
- 2 T. butter or cooking oil.
- 3 1/2 cups bread mix, room temperature.
- 2 1/4 t. active dry yeast.
- Bake on white cycle.
- *Any combination of flours can be used, replacing up to half of the flour, (10 cups) with a whole grain flour. For EACH CUP of whole grain flour used, add 1 tablespoon of vital wheat gluten to the mix.
- **Substitute powdered egg for a fresh egg if you are going to be baking the bread on a timer.
- Mix may be used to make pizza dough, calzones, cinnamon rolls or dinner rolls. Remove dough at the end of first kneading cycle and finish by hand.

INSTANT OATMEAL MIX (OAMC)
I love making my own oatmeal mixture because I know exactly what's in it (many store-bought packets have additives), it's cheaper (every penny counts!), and I think it just tastes better. I keep a large Tupperware of this mixture in my desk at work, along with a 1/4-cup measuring cup; I give the Tupperware a quick shake before measuring out my serving. Alternatively, you could prepackage servings in sandwich-sized Ziplocs. 1/4 cup is about the same amount as the store-bought packets, so that's the serving size the recipe is based on, but I often measure out 1/2 cup portions.
