Cottage Fruit Salad image

Lusciously creamy cottage cheese with toasted pecans tops refreshing fresh fruit-very retro!

2 cups fat-free cottage cheese
2/3 cup Yoplait® 99% Fat Free creamy strawberry banana yogurt (from 2-lb container)
1/4 cup chopped pecans, toasted if desired
Lettuce leaves
6 cups cut-up fresh fruit (peaches, nectarines, pears, bananas, pineapple, raspberries, strawberries and/or blueberries)

Steps:

  • In medium bowl, stir together cottage cheese and yogurt. Stir in pecans.
  • To assemble, line 6 individual plates with lettuce. Arrange 1 cup of the fruit onto each lettuce-lined plate. Spoon 1/2 cup cottage cheese mixture over fruit on each plate. Serve immediately.

1 cup green grapes, halved
1 cup sliced peeled peaches or pears
1 cup dried cherries
1/4 cup sweetened shredded coconut
1/4 cup chopped walnuts
1/2 cup vanilla yogurt
6 lettuce leaves

Steps:

  • In a large bowl, combine the first six ingredients. Add yogurt; toss to coat. Serve on lettuce.

1 (16 ounce) package fresh strawberries, hulled and halved
1 large peach, pitted and cut into bite-size pieces
2 plums, pitted and cut into bite-size pieces
2 kiwi fruit, peeled and cut into bite-size pieces
1 cup dark sweet cherries, pitted and halved
1 cup honeydew melon balls or cubes
1 cup cantaloupe balls or cubes
1 cup cubed fresh pineapple
1 cup grapes
2 (16 ounce) containers low-fat vanilla yogurt

Steps:

  • In a large salad bowl, lightly mix together the strawberries, peach, plums, kiwi fruit, cherries, honeydew melon, cantaloupe, pineapple, and grapes until the fruit is well mixed. Serve in bowls with yogurt spooned over the top.

2 teaspoons poppy seeds
2 tablespoons lemon juice

1/2 cup salted sunflower kernels, optional

Steps:

  • In a bowl, combine cottage cheese, apples, raisins and poppy seeds. Combine lemon juice and honey; add to apple mixture. Chill. Just before serving, stir in sunflower kernels if desired.

1 (16-ounce) container cottage cheese lowfat (2 cups)
4 cups assorted fresh fruit such as strawberry halves, melon balls, blueberries and sliced peaches
Lemon juice (optional)
1 (7-ounce) container raspberry lowfat yogurt
1 tablespoon raspberry preserves
1/2 cup sunflower seed

Steps:

  • Line salad bowls with lettuce. Scoop 1/2 cup of the cottage cheese into each.Prepare fruit. Sprinkle with lemon juice if needed to prevent darkening. Arrange fruit around cottage cheese.In a small bowl, stir yogurt and jam until blended. Drizzle over salad. Sprinkle with sunflower seeds.Note: Other flavors of yogurt and jam can be used.
