COSTA VIDA SWEET PORK WITH COSTA VIDA RICE
Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

Steps:
- 1. For the pork Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours
- 2. For the rice Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.
- 3. Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.
**COPYCAT** COSTA VIDA RANCH SALAD DRESSING
I'm mostly posting this here so I don't lose it again but this is really, really good dressing. I think there's a bunch of Costa Vida resturants out west but I went to the one in Portland, ME and am now hooked!

Steps:
- Put all ingredients in the blender and blend well. If you like it a little more mild, use less cayenne pepper and less of the jalepeno seeds. I usually only use 5-6 seeds & a tiny piece of the core. My mom uses the whole pepper seeds and all.
- "Cooking" time does NOT include chilling time - chill in fridge for at least 2 hours to let the flavors meld.

Steps:
- Wrap meat in foil. Put in roasting pan and bake at 275 degrees for 5 hours. Pull the meat out and let it cool for 30 minutes then shred. In separate bowl, mix the enchilada sauce, Dr. Pepper, salt, garlic salt, brown sugar and chopped cilantro. Pour over meat and mix.
