Cornmeal Strawberry Muffins image

These freeze well, and you can substitute frozen strawberries in this. Just make sure they are unsweetened. :-)

2 cups flour
1 cup cornmeal
1/2 cup brown sugar
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 cup milk
1/2 cup butter, melted
1 cup sliced fresh strawberries

Steps:

  • In a medium bowl combine flour, cornmeal, sugar, baking powder, baking soda, and salt.
  • In another bowl beat eggs, stir in milk, butter and strawberries.
  • Make well in the dry ingredients, add the egg mixture all at once and stir until just combined.
  • Spoon into greased or paper lined muffin tins and bake at 375 degrees F. for 20 minutes.

From a Gay Lea recipe flyer. Definitely not a low fat recipe. Tried numerous recipes previously with mixed results (too dry, too crumbly), but these are always mmmm....perfect! Enjoy with soup, salad, chili. Add grated cheese if you wish. Can be frozen.

1 1/4 cups cornmeal
1 cup all-purpose flour
1/3 cup white sugar
1 tablespoon baking powder
3/4 teaspoon salt
2 eggs
1 1/2 cups gay lea sour cream (light)
3/4 cup butter, melted and cooled

Steps:

  • Preheat oven to 400 degrees.
  • Grease or put muffin cups into a 12-muffin pan. (or use a 9-inch square baking pan).
  • Combine dry ingredients in a bowl: cornmeal, flour, sugar, baking powder, salt.
  • In another bowl, combine wet ingredients: eggs, sour cream and melted butter.
  • Add wet ingredients into the dry and mix well.
  • Put into muffin cups or baking pan.
  • Bake 15-20 minutes or until a toothpick comes out clean.

  • Preheat oven to 350°F.
  • Line muffin cups with paper liners or spray with nonstick spray.
  • Combine cornmeal, flour, sugar, baking powder and salt in a bowl.
  • In a separate mixing bowl, mix together eggs and buttermilk.
  • Add dry mixture to egg mixture.
  • Fold in butter and strawberries.
  • Divide batter among muffin cups.
  • Bake for 15-20 minutes or until browned.
  • Cool in pan for 10 minutes before transferring to a wire rack to finish cooling completely.

2 tablespoons sugar
4 teaspoons canola oil
1 egg, beaten or 1/4 cup egg substitute
2 tablespoons milk
1/4 cup cornmeal
1/4 cup all-purpose flour
1/2 teaspoon baking powder
Pinch salt

Steps:

  • In a small bowl, combine the sugar, oil, egg, and milk. In another bowl, combine dry ingredients; stir in sugar mixture just until moistened. , Coat four muffin cups with cooking spray or use paper liners. Divide batter among muffin cups. Bake at 400° for 15-18 minutes or until lightly browned.

1 1/2 cups chopped dried strawberries
3 cups plus 1 tablespoon all-purpose flour
1 1/2 cups milk
1/2 pound (2 sticks) unsalted butter, melted and cooled
3 large eggs
1 cup sugar, plus more for sprinkling
1 cup yellow cornmeal
2 tablespoons baking powder
1 1/2 teaspoons salt

Steps:

  • Heat oven to 350 degrees. Line a 12-cup muffin tin with paper liners; set aside. Place strawberries and 1 tablespoon flour in a bowl; toss to combine; set aside. In a medium bowl, combine milk, melted butter, and eggs; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the remaining 3 cups flour, sugar, cornmeal, baking powder, and salt. Add the milk mixture; mix on low speed until just blended. Add reserved dried strawberries; mix to combine. Spoon batter into prepared tin, making sure all batter is used. Brush muffin tops with water, and sprinkle with sugar.
  • Place in oven; bake until golden brown and a cake tester inserted in the middle of a muffin comes out clean, about 30 minutes. Cool slightly on a wire rack. Remove muffins from pan, and place on a wire rack to cool.
