- Heat oven to 350 degrees. Oil a 9-inch cake pan and dust with cornmeal. Tap out excess. Sift flour into medium bowl; stir in cornmeal, baking powder, salt, and xantham gum. Set aside. Beat margarine with electric mixer in a large bowl until smooth and light. Beat in applesauce and zest. (Don't be alarmed by its curdled appearance.) Gradually add sugar, stopping to scrape sides of bowl a couple of times. Beat in soygurt, egg replacer, and vanilla. Slowly mix in flour mixture until just incorporated. Pour into pan and smooth the top. Top with coarse sugar. Bake until tester comes out clean, about 30 minutes. Cool in pan 10 minutes, then invert onto plate, then onto rack (sugar side up) to cool completely. Wrap in foil and keep at room temperature until ready to serve.
GLUTEN-FREE VEGAN CORNBREAD
I'm always looking for traditional foods I can make when my mom comes over for dinner. She is on a very strict gluten-free, vegan diet so there are not a lot of options that are simple or cheap. This cornbread turned out a little dense but soft, kind of like the outside of a tamale with a semi-crisp crust. The whole family enjoyed it!

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch cake pan.
- Mix corn flour, sugar, baking powder, baking soda, and salt together in a large bowl.
- Mix almond milk, oil, and maple syrup together in a small bowl. Fold into the corn flour mixture until batter is just moist. Spread mixture into the prepared cake pan.
- Bake in the preheated oven until a knife inserted into the center comes out clean, 20 to 25 minutes.

- Whisk together white rice flour, corn flour, baking powder, and salt in small bowl. Fit bowl of stand mixer with whisk attachment. Whip eggs on medium speed until combined. In a slow and steady stream, add granulated sugar. Increase mixer speed to high. Whip egg mixture until pale yellow and thick and fluffy, about five minutes. Reduce mixer speed to medium. With mixer running, add dry ingredients. Mix until dry ingredients are combined, about one minute. Add oil in slow and steady steam. Batter will deflate. Increase mixer speed to high. Whip batter until oil is incorporated and batter thickens, about two minutes.
- Spoon batter into prepared pan. Bake until a cake tester inserted into the center of the cake comes out clean, about 35 minutes. Cool cake in the pan for ten minutes. Invert onto a rack and cool. If desired, sprinkle with confectioners’ sugar before serving.
