BEEF ONION STIR-FRY
This beef onion stir-fry is one of those recipes that doesn't require much more than the ingredients in the name-beef...and onions!

- In a medium bowl, add the flank steak, baking soda, cornstarch, oil, oyster sauce, and water. Mix until the liquid has been absorbed, and set aside to marinate for at least 15 minutes, or up to 30 minutes.
- Meanwhile, in a small bowl, combine the light soy sauce, dark soy sauce, ketchup, oyster sauce, sugar, sesame oil, and water. Set aside.
- Heat a wok over high heat until smoking. Add 1 tablespoon of oil, and spread the beef in the wok in a single layer. Sear the meat, undisturbed, for 30 seconds to 1 minute, until browned. Stir-fry for an additional 15-30 seconds, until about 75% cooked. Remove from the wok and set aside.
- Add another tablespoon of oil to the wok, along with the onions. Stir-fry until the onions are seared and slightly blistered, 60-90 seconds. Remove from the wok.
- Add the prepared sauce to the wok, and bring to a simmer. Simmer for 15 seconds, and then stir in the beef and onions for another 30 seconds. Serve over rice.

CHINESE STIR-FRIED BEEF WITH ONIONS
Steps:
- Gather the ingredients.
- Cut beef against the grain into 1/2-inch strips.
- In a large bowl, combine the light soy sauce, rice wine or dry sherry, sesame oil, black pepper, and cornstarch. Add the beef, coating completely, and marinate at room temperature for about 15 minutes.
- In a small bowl, combine the dark soy sauce , sugar, and Chinese rice wine or dry sherry. Set aside.
- Heat wok and add 2 tablespoons oil, allowing it to drizzle down the sides.
- When the oil is ready, add ginger and garlic. stir-fry briefly and add onions. Stir-fry until onions are crisp-tender.
- Remove the vegetables from the wok and set aside.
- Add 1 tablespoon oil to the wok, if necessary. Add the beef , stir-frying until it changes color.
- Add the water at this point to make a gravy.
- Return the vegetables to the wok and mix well.
- Add the reserved dark soy sauce-wine mixture.
- Stir in the green onion. Stir-fry briefly to blend all the flavors.
- Serve hot with rice.

SPICED BEEF STIR-FRY TOPPED WITH SPRING ONION AND CORIANDER
There is a large population of Muslim Chinese in Beijing. They came from western China and brought with them a unique cuisine that call for the use of spices such as cumin and fennel, which found their way to China along the Silk route. Lamb and mutton are the preferred choice of meat of the Muslim Chinese but you can use any red meat you prefer. The spices in the dish are distinct and extremely flavourful, but the creme de la creme is the addition of lots of chopped spring onion and coriander (cilantro) to complement the meat. Who said that tasty dishes need be complicated?

- To make the mayo: In a small bowl, mix the wasabi powder with 1 teaspoon water to make a paste. Mix the wasabi paste, remaining water and mayonnaise together. Season with some sugar, and set aside.
- To make the spicy coating: Mix all the ground cumin, dried chile flakes, black pepper, and salt, on a plate.
- To make the beef: Prepare the fillet by hammering it with a meat mallet, or the side of a Chinese cleaver. Slice the beef into wafer-thin slices, and coat the pieces in the spice mix.
- Heat a wok or pan over high heat and add the groundnut oil. Add the beef and stir-fry for less than 1 minute until browned and tender. As the beef starts to cook, pour in the rice wine or sherry, and season with the soy sauce, and a pinch of salt. Remove the wok from the heat and stir in the cilantro, and spring onions. Serve immediately. You can serve the spiced beef in steamed thin wheat flour pancakes, stuffed into warmed flatbreads or rolled in warmed tortilla wraps topped with plenty of wasabi mayo.
CORNED BEEF ON RYE WITH CARAMELIZED ONIONS AND SAUERKRAUT

- To prepare onions and sandwich:
- In a large heavy skillet cook onion in oil over moderate heat, stirring, until golden. Stir in sauerkraut and apple and cook, stirring, 5 minutes. Stir in water and salt and pepper to taste and transfer to a bowl. Mixture keeps, covered and chilled, 1 week.
- Preheat broiler.
- Butter one side of bread slices. On a baking sheet set 4 inches from heat broil both side of bread until toasted lightly. Rub buttered side of each toast with garlic. Arrange 4 toasts, garlic side up, on a baking sheet and divide pickle and corned beef among them. Top beef with onion mixture and cheese and broil under broiler about 4 inches from heat until cheese is melted. Top sandwiches with remaining toasts, garlic side down, and halve.
- Serve sandwiches with mustard.
- To prepare the corned beef:
- In a kettle combine beef with cold water to cover by 2 inches and bring water just to a boil, skimming froth. Simmer beef, covered, 3 hours, or until tender. Remove kettle from heat and let beef stand in cooking liquid 20 minutes. Transfer beef to work surface and trim fat. Use beef as part of a boiled dinner and/or for making corned beef on rye and/or corned beef hash. Corned beef keeps, covered and chilled, 4 days.

- Preheat oven to 325. Rinse corned beef under cold water. In a Dutch oven, heat oil over medium high. Add corned beef, fat side down, cook, turning once, until browned on both sides, 5-7 minutes. Remove to a cutting board and cut ½ inch slices.
- In same pot, cook onions over medium heat, stirring until golden, 3-5 minutes. Add broth, beer, garlic and pepper.
- Layer corned beef slices and potato slices in onion broth mixture.
- Cover and bake 2 ½ hours. Add greens to pot. Cover and bake 15 minutes longer.

Once we moved from our first base my husband said he never wanted this again- you see it was the cheapest things we could afford to make on a regular basis and we had it every week! It was and still is a great dish- it is quick and CHEAP!!

- mix cornstarch, 2 T soy sauce, and 2 T sherry in a bowl.
- add meat and stir to coat.
- set aside to marinate for 1 hour turn meat every 15 minutes.
- in small bowl mix 1 T soy sauce, 2 T sherry, sugar and salt. set aside.
- heat oil in uncovered wok to 375 or nonstick skillet on medium high heat.
- add onions, lemon juice, green onion, garlic and stir fry for 2 minutes.
- add beef and soy sauce mixture and stir fry 2-4 minutes until beef is done and onions are still crispy.
- serve over rice.
